Mint Oreo Cheesecake

First things first.  Who doesn’t love mint and chocolate?  If you don’t, move on- this cheesecake is not for you.  There are two packages of mint Oreo’s in this dessert, and creme de menthe, so the mint flavouring is wonderfully present- not over powering so that you think you’re eating toothpaste, just perfectly paired with the chocolate and cream cheese.

No Bake Nutella Oreo Cheesecake

When I taught you how to make your own Nutella in my previous post on the weekend, there was rumour of a hazelnut shortage.  Well, now, four days later IT’S TRUE!  Get to the store and hoard the hazelnuts as they’re predicting the cost of Nutella to rise dramatically due to flooding in Turkey, where 70% of the world’s hazelnuts are grown.  I also learned recently that we have hazelnut farms here in British Columbia, so the next time that I make to the Coast, I’m going to have to go and check one out!
 
Now that I’ve added to the hazelnut panic, I’d like you to go and make some homemade Nutella, and use it to make this cheesecake.  This is one of the most delicious, amazing, drool-worthy cheesecakes I have ever eaten, never-mind made.  Being that the cheesecake is a no-bake recipe, the layers remain light and fluffy once they are set.  I also tried a baked version of this recipe, and I felt that this one was far better.  I definitely prefer a light cheesecake over a heavy, dense one.
 
I went with a traditional cheesecake crust for this and used graham crackers.  I think that an Oreo crumb crust would be amazing as well, but I felt that the graham cracker crust made the Oreo cookies stand out more than they would have if the crust was all Oreo’s as well.  This no-bake cheesecake is also amazing without the additions of the Oreo’s and the Nutella.  I made them into cute  Cheesecake in a Jar a couple of months ago, so if you prefer a plain cheesecake, you’ll definitely love the basic recipe.
 
Thank goodness Oreo’s aren’t threatened, or this cheesecake would be bound for the endangered species list.

Rainbow Cheesecake Dip: No Bake Cream Cheese Dip Recipe

A couple posts ago I explained that we were back in Los Angeles at the beginning of November for some more time filming and exploring at YouTube Space LA.  Whenever we’re there, we have to think of as many no bake desserts as we can, and then somehow book the time to film them.  It’s definitely challenging!  Setting up lights and cameras takes a lot of time, especially since we’re used to filming in our kitchen.

 In previous no bake dessert posts, I showed you how to make Cake Batter Bars, Cookies and Cream Stuffed Strawberries and now, rainbow cheesecake dip.   We filmed these all at YouTube Space LA, and we have three more videos yet to come! 

This is another easy, no bake recipe for that people of all ages can make!  And it’s rainbow.  RAINBOW!  Everything that has sprinkles or rainbows makes life better.

I love the recipes that the younger bakers can master quickly because that’s how I started baking.  Super quick and easy.  It makes you feel successful, and for some reason, many people think that baking is difficult.  What I love about this blog and our YouTube channel is that we break the steps up into small pieces and everyone can be successful. 

This is also a great recipe to serve with fruit (if you want to cut a few calories out).  Mini cookies, and meringues would also be perfect!

How to Make Cheesecake Cupcakes

If you’ve been keeping up with my recent blog posts, you will know that my last post was about the best cheesecake recipe I could possibly share with you.  I have this on account of my hairdresser. 

Now, the thing with a full sized cheesecake is that it is so large (not that that is a bad thing for certain occasions or parties) but sometimes, a small cupcake sized serving is just perfect to take the edge of a gnawing sweet tooth.  My sweet tooth never, ever stops gnawing at me, but having one of these small portions sure helps to silence it for a while!   

Unfortunately, when you are me and faced with a couple dozen mini cheesecakes, self control must be put into practice!  That damn sweet tooth and complete lack of self control make a nightmare for person with a freezer full of mini cheesecakes.  It’s a good thing I have a staff room at school to “generously donate” my creations to!

How to Make Homemade Cheesecake

This cheesecake recipe is to die for.  I’m not just saying that.  I have it from authority from my hairdresser.  You KNOW that hairdressers are all knowing!   Sandy has been doing my hair since I was 14 and whenever anyone else has done it, I have always been disappointed.  Throughout university, I refused to get my hair cut (not because I was poor, just simply a snob) except at Christmas and in the summer when I would be home to see Sandy.  I’m already dreading the day when I have to find a new hairdresser when she retires . . . hopefully we can work something out, like her never retiring.  That sounds good to me.

On to the cheesecake and why this has anything to do with Sandy!   I made this cheesecake recipe for Sandy’s daughter’s wedding cake and it was ranted and raved about.  This cheesecake has never failed me.  I have made it many times, and each time it yields the same delicious, rich results.  The graham cracker crumb crust, is topped with delicious cheese filling, and finally it is covered with a light sour cream layer to provide just the perfect accompaniment to the cheesecake.
