Cookies and Cream Stuffed Strawberries

Making our way to California is quite an effort when you live in the small, relatively isolated, place that we do.  While booking our most recent trip to Los Angeles with a travel agent, I had to explain to her where Cranbrook was located, and how to get out of it by plane.  I don’t think she was having a very good day when I phoned her, as she seemed rather annoyed about 1. my location, 2. my limited airline options, 3. the fact that Paul and I don’t have the same last name.  After arguing with her that a one hour stop over in Calgary was NOT enough time to get through security (switching airlines takes us out of security area) and customs (damn USA), and her insistence that one hour was the “standard allowable time”, she finally relinquished and “allowed” us to be routed through Vancouver.  After all that, we had our tickets, and we left Cranbrook in a snow storm, and arrived in LA in the warm sun!  

Visiting YouTube Space LA again was great!  They have such a great group of people that keep that place running.  While there, we met up with Chef Jason Hill of the YouTube channel Chef Tips, and we decided to do a collob together.  On our channel, we make these delicous cookies and cream stuffed strawberries, and over on his channel, we make an adorable fruit turkey!  Make sure you check his channel out.

 

Cookies and Cream Stuffed Strawberries

Ingredients:
1 lb Strawberries
1 package of sandwich cookies
2 block cream cheese (16oz)
1/2 cup icing sugar
1/2 tbsp vanilla extract
Mini sandwich cookies
white chocolate (melted)
sprinkles

Cookies and Cream Stuffed Strawberries

Procedure:
In a medium bowl, cream together cream cheese, icing sugar and vanilla extract until smooth.  Set aside.  Using a sealed bag, or a food processor, crush the cookies into a fine crumb.  Add to the cream cheese mixture and combine.

Using a sharp paring knife, remove the stem and core of the strawberries.  Fill the empty cavity with the cookies and cream filling.  To enable the strawberries to stand up, cut a small slice off the bottom of each to create a flat bottom.

With your melted chocolate, cover the top of the strawberry (where the cookies and cream mixture is).  To do this you can either dip the top of the strawberry directly into the chocolate, or you can use a piping bag to directly apply the chocolate to the top.  While the chocolate is still soft, apply the sprinkles and mini sandwich cookie to the top.

Serve immediately and enjoy.
