No Bake Cheesecake in a Jar with Kristina Werner

September 23, 2013 by Jenn

I am not crafty.  I try to be when I’m in my Kindergarten room, but I do not have the skills to work the scissors properly.  Give me a mixing bowl and some ingredients and I can make whatever you want, but some paper and glue?  I’m lost.  All those cute Pinterest crafts that people are pinning and recreating?  I don’t even bother trying to pretend that I might be able to figure out how to do it myself one day.  I just move on to fabulous cake ideas!

When we were at YouTube Space LA, we ran into another YouTuber, Kristina Werner, from the YouTube channel Star of May.  We decided to put our heads together and see what we could come up with in a collab together!  We decided for the video on my channel, we would make a No Bake Cheesecake together, and then for her channel, she would show me how to decorate the jar for gift giving!  Yay! You get to see how horrible I am at cutting!!

But first up, the cheesecake!

Ingredients for No Bake Cheesecake in a Jar:

1 1/2 cups graham cracker crumbs (180g)
1/3 cup packed brown sugar (60g)
1/2 teaspoon ground cinnamon
1/3 cup butter, melted (80g)
2 (8 ounce) packages cream cheese (16oz)
2 teaspoons lemon juice (10mL)
2 cups heavy whipping cream (500mL)
1/3 cup white sugar  (65mL)
1 (21 ounce) can pie filling
Mason jars

Directions:

1. In a small bowl, stir together the graham cracker crumbs, brown sugar and cinnamon. Add melted butter and mix well. Press 2 tablespoons of the mixture into the bottom the jars. Chill until firm.

2.In a medium bowl, beat together the cream cheese and lemon juice until soft. Add whipping cream and beat with an electric mixer until batter becomes thick. Add the sugar and continue to beat until stiff. Pour by the tablespoon into chilled crust, and top with pie filling. Chill several hours or overnight.

Now, if you want to see me make a fool of myself, but see a really great craft, check out Kristina’s video below!  It’s super simple and despite my inability to cut in a straight line, I bet I could even do it again!

How do I adjust this recipe to make whole cheesecakes?

You don’t need to adjust the amounts…just the pan. Use the same process for everything, but put your crust and filling etc into a standard pan, and it will give you one.

2-3 days for optimum freshness. Enjoy!

I actually made these jars for my baby shower and they came out fantastic. They were a huge hit. I used just regular cherry pie filling, and followed the instructions for whipping the cream cheese and making the graham cracker crust. I also used 4 oz regular mouthed mason jars (which I got from Walmart). They weren’t too expensive, but expect to pay about $9 – $12 for a set of 12 jars. You can get wide mouthed jars – they may cost a little more, but I’m not sure. It was so worth it though. I even made the little thank you tags w/washi tape and bakers twine. They are delicious, and so worth the time and money to make them! Just Do It! Lol.

Hi, may I know how many servings can this recipe make?

It depends on how much you fill the jars…I would say around 12 if you are reserved with how much you put in each.
