Homemade Nutella: How to Make Nutella Recipe

 Nutella.  Yum.  Chocolate hazelnut spread.  Yum. 

I only recently added Nutella into my baking life, and posted about that when I made Ferraro Rocher cupcakes.  I haven’t looked back since!  I enjoy the process of recipe testing and finding a way to make things in my own way, so when I needed more Nutella for an upcoming recipe, I knew I had to figure out how to make it myself.

The recipe is fairly simple, and what I like about making things homemade is that you know exactly what is in it.  During my research, I started to notice that many products have ‘modified palm oil’. What in the world is that?  I always have to question what a product is if you can’t buy it yourself at the grocery store.  At least when I put butter in something, I know it came from a cow!

Yesterday, a story broke in Time that the price of Nutella is rising, due to the damaged hazelnut crops in Turkey (which provides 70% of the hazelnut supply!).  So, grab your hazelnuts in bulk while you still can, and get making this! 

Homemade Nutella Recipe

Ingredients:

  • 5 oz (about 1 cup) *roasted unsalted hazelnuts
  • 7 oz semi-sweet chocolate, finely chopped
  • ¾ cup sweetened condensed milk
  • 4 1/2 tablespoons cream
  • 3/4 cup icing sugar

How to Make Nutella

Procedure:

  1. Using a food processor, process hazelnuts until the are in a butter state, or paste.  This may take a while depending on the size of your processor.  Scrape the sides of the processor to ensure that all of the hazelnuts are all incorporated.  The smoother the nut butter, the smoother the nutella will be.  Once butter is produced, set aside.
  2. In a large microwavable bowl, melt the chocolate in the microwave at 50% power in 60 second intervals.  This should take between 2-3 minutes, but will depend on the microwave’s power.
  3. Once the chocolate is smooth, add the sweetened condensed milk and cream.  Stir to combine.
  4. Add the icing sugar, and stir until no white streaks remain.
  5. Store in a sealed container, in the fridge, for a week or two.  The length of time the nutella is good for will depend on the expiration date of your cream.

  *If you can only find raw hazelnuts, in order to roast them, place them on a baking sheet, and place them into a preheated oven at 350F for 10-12 minutes.  Once they are roasted, the skins will come off easily.
