Cherpumple: Triple Layer Pie in a Cake

What to call a pie in a cake??  A “pake”?  A “cie”?  Or what about “Cherappkin”?  Appcherrkin?  Pumpcherple?  CHERPUMPLE! 

I think I’m going to stick with “Pie in a cake”.  It much easier to figure out what in the world I’m talking about!  

This cake is admittedly time consuming since you have to bake three pies ahead of time, as well as prepare two types of cake batter.  It’s definitely an investment in your life, but it is bound to impress anyone that looks at it.  And most likely they’ll have to look at it twice to figure out what in the world they are looking at!  

Triple Layer Pie in a Cake

 To make the investment of time shorter, using premade pies from a grocery store bakery work excellently, as does using box mixes for the cake batter.  In the recipe below I have provided the link to all of our homemade versions of the pies, and cakes, if you are so inclinded for this big project.  

Since the cake was such a big project, I went with an easy, light covering.  Instead of using a heavy buttercream, I thought whipping cream would be best paired with the cakes/pies.  After all, there is a lot going on in this cake, so the last thing it needed was another element to confuse the taste buds. 

You can choose to go with any flavour of cake batter, as well as any type of pie when you’re making your own version of this.  The hardest part of that will be trying to name it!  

When you’re baking your pies, make sure that they are at least an inch (2 centimeters) smaller than your cake pan.  This will ensure that there is just enough room for the cake batter to completely envelop the pie.  You want to make sure that you spread the cake batter on the bottom, sides and top so that the batter prevents any of the pie from escaping while baking- especially in the fruit pies!  Roughly, I wanted an inch (2cm) of cake batter underneath and on top of the pie to help prevent that from happening. 

This “PAKE”, “CIE”, whatever you want to call it is super fun to make.  I hope you have a blast !

Homemade Cherry Pie Recipe

Until our videos last fall (2013)  I had never baked a real pie before.  Sure, I had used a premade pie crust, and premade filling, and called it a pie, but looking back, it really wasn’t.  My adventures last year with Apple Pie and Pumpkin Pie had given me the courage to knead more dough and attempt a cherry pie!  You can find the pie crust recipe in the Apple Pie video.  

The thing about cherry pie is that I don’t (well, didn’t) even like it!  I don’t know what came over me when I decided that cherry would be the flavour I would go with this fall.  What I soon learned though, is that I had never had good cherry pie.  Oh, man, when I had my first bite of this pie, I was in love.  I find that artificial cherry flavour is one of the worst flavours there are- it brings be back to cough syrup as a kid (and that is not a good thing).  Using real cherries for this recipe is a must in my opinion.  If you’re stuck you can use canned cherries in a pinch. but I take no blame for pies made with canned cherries!   

The sweetness and tartness of cherries can very greatly, so with this recipe, you can adjust the amounts of lemon juice and sugar accordingly.  If your cherries are really ripe and sweet, lessen the amount of sugar.  If your cherries are sour, lessen the amount of lemon juice, or add additional sugar.  The recipe is pretty flexible that way.

Apple Pie Cookies- How to Make

For this recipe, you’re going to need to check out our apple pie pastry and filling recipe which can be found here.  If you want to use store bought shells and filling, by all means do that!  Time is often of the essence and let’s face it, sometimes you just want to do something easy that you know is going to taste good (no matter what you do).  BUT, if you want to try this from scratch, I have the recipes all ready for you to do that.  It’s so satisfying to bake something you’ve never made before. 

These are a labour of love for what you get out of them in the end.  Let’s just make that clear!  There is a lot of leftover dough and apple pie filling, but the cuteness of the cookies definitely makes up for that! Besides, you can always do what I did and scoop all the leftovers up into a pan and bake them like that…I call it, Apple Pie “bake”/mess.

This Apple Turnover recipe is a little bit different from a traditional turnover as it does not use puff pastry, it uses a pie pastry.  It’s perfect for using up your leftover dough and filling after slaving over the apple pies you may have already made.  Need a good apple pie recipe?  Try mine here.  You’ll find that for these turnovers, you can use your favourite recipe for crust and filling but I’ve got that all laid out for you below!  I’m just that good.

Apple Pie Recipe: How to Make Apple Pie

Making apple pie has never been on my baking bucket list, but it is definitely something that I knew I should try once!  Which I guess means it should be on a bucket list.  My mistake.  Ok, so now that the apple pie has moved from “maybe make” to “must make”, I decided that I should give it a try.

The most important things to keep in mind when making apple pie is 1. the crust, and 2. the apples.  You need a good crust recipe and you need A LOT of apples.  More than you think you will.  And then more than that.  We went to my mother in law’s to pick apples, and I brought along a little basket to collect them in.  She laughed at me and brought me out a HUGE planting pot!  Like a pot for an indoor tree!!  I laughed at her, and thought that she was the one “out to lunch”.  Needless to say, I should have listened to her and her 60+ years of baking apple pie experience.  That and the fact that she’s Italian.  She knows what’s she’s doing in the kitchen.
