Construction Cake

There comes a time in Canada when the roads are impassible!

In the winter it’s often due to the weather . . . snow, ice, sleet, you name it.  Usually it’s pretty nasty to be driving long distances during . . . October to . . . uhhh, about May! 

In the summer, impassibility is often due to the dreaded road construction!  When I used to live in Victoria (on Vancouver Island), and drive back in the summer for holidays, it would be pure torture to be in my non-air conditioned, 1986 Honda Accord, in 30 C weather, on black asphalt , trapped along with the 100 other campers, trailers and semi’s along Highway 3 . . . at a dead standstill while the crews laid more asphalt, or dug out new roads.

New Orleans Saints Cake- Edible Image

It’s the Superbowl this weekend and we are celebrating New Orleans Saints style.  Yes, I’m aware of the fact that New Orleans is NOT in the Superbowl, but I figured it was a fitting post for a football fueled week. 

I don’t claim to know ANYTHING about football, especially the NFL.  I used to watch the CFL (which is the Canadian Football League for you non-Canadians reading this), but this was mostly because our family had one TV and I had a brother and father who loved to watch it! 

I know TWO facts about professional football: the CFL is more of a passing game, while the NFL is more of a rushing game, and large, sweaty mean wear super tight tights…often white in colour!

How to Make a Fondant Snowman for Christmas Cake Decorating Video

As a kid, I remember rolling, and rolling and rolling to make the biggest and greatest snowman that I could.  My brother, being 3 years younger than me, was either helping me, or trying to beat me.  He was slightly competitive!

Often, our attempts were futile, as the pieces of the snowman would get so big that we could never get them off the ground and piled up on top of each other.

Once, back inside, warming up with a mug of hot chocolate, I remember looking out the window and seeing all of the tracks that the rolling snowballs made all over the lawn, and the “dead” snowballs at the end of them. . . the ones that were too heavy to roll any further, or even attempt to lift.  They were often quite ugly, tube shaped and covered with brown chunks of grass that had been picked up along the way!

How to Make a Fondant Reindeer Cupcake/Cake Decoration Video

We are on a roll with the Christmas decorating videos these days!  It’s so much fun! The ideas are endless, there are unending Pins to Pin on Pinterest and it’s just a jolly good time around this holiday.  The thing that gets me every year, and I’m guilty of it, is that WHY IS IT SO STRESSFUL?

Every year, I approach the season with excitement, but as soon as December is two weeks old, I’m freaking out and a ball of stress!!  There is always so much to do at home- baking, decorations, finding the perfect tree, wrapping all the presents.  At school- Christmas Concert practice, Secret Santa, decorations, Gingerbread Houses, and now, add a business to the mix- cupcakes, cakes, cookies, platters!

There are always so many gifts to buy, despite the fact that every year I say “I’m going to give the gift of time with my family” as if I’m gift enough . . . hahahaha!  I’d like to think that I am 😉  but I’m sure they would think differently.   I know that I must be on crack when I have those thoughts as they just delay my inevitable freak out, as I run around shopping to buy things I swore I wasn’t going to.

Summer Wedding Cakes

Well, unfortunately summer is close to coming to an end 🙁 . . . and it JUST got here!  The smell of the school supplies fills the stores, and the sound of the school bells start to ring.  That means that as a teacher, I must pack my lunch and get my head back in the game.  But first, I must show you how our summer went with the many wedding cakes that we did!

Fondant covered two tiered cake. Branches and blossoms are fondant/gum paste mixture.

Making a wedding cake is actually pretty stressful.  It has to be perfect, or you’re going to ruin someone’s very important day.  Pressure.  Pressure.  Pressure.

Buttercream covered three tiered wedding cake, with piped hydgrangea centre tier.

Baking wedding cakes requires planning endlessly for flowers, designs, colours, covering, stacking, tiering, taste, texture and size.  Did I forget anything?

It is actually quite an honour to be asked to make someone’s cake for their wedding day.  I especially find it touching that people believe in me to make their cake the best one yet!

I think that the days where wedding cakes were looked at and not eaten should be over!!  Cake is meant to be eaten, not served, nibbled on and pushed aside.

Is it too pretty to eat?  Well, buy one to look at, and eat the second one.  It might be a little damaging to your pocket book, but it sure helps pad mine!

And now, this cake decorator by day, turns into cake decorator by night.  It’s back to the “real” world and to teacher by day.  The last long weekend of the summer is upon us.

Chocolate Chip Cookie Dough Ice Cream Cake

My favourite SUMMER time treat is ice cream . . . maybe I should say cupcakes?  Cupcakes don’t hold a candle to ice cream for me.  I swear that if I were to open an ice cream shop to go with my cupcakes, I would be 500 lbs in about two months.  I could never get sick of ice cream . . . but wait . . . I said that about cupcakes too.  Maybe having an ice cream store isn’t a good idea.

What is better than diving your spoon into a bowl (or pail) of cold ice cream on a hot summer evening (right about the time that cravings start to hit after dinner has digested)?  The best way to have ice cream . . . in the form of a Blizzard from DQ!  Especially if it is a Buster Bar Blizzard . . . my new favourite flavour.

I can eat ice cream in disgusting portions.  As in, I-don’t-need-a bowl-proportion . . . why bother dirtying a bowl when you’re just going to eat the whole container?  Gross.  I think I have a problem.  Seriously.

Last summer, The Real Canadian Superstore, started marketing their “Ice Cream Shoppe” brand of ice cream flavours . . . and because my gluttonous indulgences last summer were enough to prove that these special ice cream flavours could be financially viable, the flavours are BACK this summer.  Lucky me?  Maybe, but unlucky pants.

I dread going passed the display every time I go to the store.  It is SO tempting!  I’m pleased that I have managed to put my cravings aside, and have by passed the display 7 times so far this month.  Yes, I go to the store a lot.  I have to.  I run a bakery.  Duh.

Here is my own creation!  My first “original” food post.  I do give credit to DQ though 🙂

Chocolate Chip Cookie Dough Ice Cream Cake

Oreo Crust.

Chocolate Ganache.

Vanilla Ice Cream.

Chocolate Chip Cookie Dough Cake.

More Ice Cream.

Chocolate Chips.

YUM!

For your first layer, you need to make one 9×13 Oreo crumb crust.  You can do this by combining the following:

• 1 1/2 cups of finely crushed Oreo cookie crumbs (approximately 20-22 cookies)
• 3 tbsp of melted butter
Press it firmly into the bottom of a greased pan, and bake for 10-15 mins at 350 F.

While the crust is baking, you can start on the ganache layer.

Heat 3/4 cup of whipping cream over medium heat for about 5 mins, or until warm.  Remove from heat.  Pour 1 cup of chocolate chips into cream  and let sit for 1 minute.  Stir until chips are combined.  At this point, you can add any kind of flavouring that you feel would fit.  I wanted to add one teaspoon of whiskey, like in the Irish Car Bomb, but knew I was going to be serving children, so I opted for 1 teaspoon of vanilla extract.

Pour over cooled crust and spread to fill pan.

The next layer is easy!  Vanilla ice cream baby!  If you make your own ice cream, obviously use that, but for me, the Superstore ice cream lover, I opted for theirs.  I let my ice cream sit out for about 45 minutes before spreading out on the cake as it makes it much easier for spreading.

Ever wonder what to do with the extra cake scraps you end up having covering your counter at the end of a day spent caking?  Well, you can make cake pops, or you can crumble them up and use them on ice cream cake like I did here!

Putting more ice cream on top of the cake crumbs is next.  This part proved to be the most difficult to spread in the process, as the ice cream kept sticking to the cake, and pulling up the crumbs.  It looked messy, but tasted fabulous.

Top the whole thing off with chocolate chips, and there you have it . . . a Chocolate Chip Cookie Dough Ice Cream Cake!

How to Make Cake Pops

Obviously you have heard of Cake Pops.  If you haven’t, welcome back to the world.  How was it under that rock?

In case you are covered in detritus from your long winter spent buried in the woods, a cake pop is basically this: cake, rolled in a ball, stuck on a stick and dipped in chocolate.

Sounds easy, right?

Well, lets get started.

I apologize, right off the bat, for the poor quality of the pictures!  I’m not sure what happened.  I’ll blame the camera.  Or the tripod.  But, not me of course.  The step by step pics are fine . . . because they were taken by Paul, but the ones in the light hood are almost not worth showing you!  **embarrassed**

One more thing . . . did you know there is a Food on a Stick Day?  Random.  It was a couple of weeks ago, and I meant to post this article for that, but you know, time got away from me.  That, and, I didn’t see “Food on a Stick Day” on my Runner’s World Calendar.

NOW, let’s get started.  I’m finished rambling. For now.

HOW TO MAKE CAKE POPS

First you need to bake a cake.  Any cake will do.  Once you have let it cool, add about 1/2 cup of icing to it and mix, mix, mix!  Get your hands in there, and get dirty!

Using a cookie scoop, roll equal amounts of dough into round balls.

Melt your chocolate in a microwavable bowl . . . for one cake, you will need at least 2 cups of chocolate chips (or melting wafers).   Using lolipop sticks, dip the top into the melted chocolate, and then immediately into the cake pop.

Repeat until all of your balls become pops!

At this points, I find it best to put all of the pops into the freezer to solidify.  This helps keep the cake together when you start to dip and roll them in the melted chocolate.

When they have been in the freezer for about 20 minutes, you need to work quickly, and start rolling!

Make sure that you cover all of the cake pop!

There’s no such thing as too much chocolate, right?

I find it best to allow my cake pops to solidify by sticking them into a piece of heavy duty styrofoam.  This way, any drips that might happen follow gravity, and don’t end up making your perfectly round ball into something else!

Perfection!

Decorate however you see fit, and enjoy 🙂

I decorated these ones for a local flower store that deserved a special treat!  The flowers are made out of marbled gum paste and fondant.

We were also trying out the Cricut Cake for on these!  The butterfly’s and the flower in the middle of the picture (above) and to the right of the pic are with the Cricut Cake.

Maybe next year I’ll be able to celebrate Food on a Stick Day!  I better go write that down.

Spring into PLAYOFFS! Vancouver Canucks Hockey Cake!

It’s hockey playoff time folks!

Can you feel the excitement?

Ya, neither can I!

I just don’t.

I apologize to my brother, who has to live in the US where there isn’t enough hockey coverage (or at least as much as he thinks there should be), I apologize to my family, as I was bred into a hockey loving group, and I apologize to myself, as I promised I would jump on the bandwagon!   Who is proud to be a wannabe bandwagon jumper?  L.O.S.E.R.

I just couldn’t be bothered.  The bandwagon went too quickly by my place, and I missed jumping on.

Oh well.  There’s always next game right?  Next round, next series, next year?

When is that next game anyway? Someone’s going to have to help me out!

I have been successful at entering my school’s hockey pool though!  I put a lot (*cough* a-hem) of thought into my picks, and relied heavily on my deep, insightful choices (*cough* a-hem) . . . I randomly chose with the alphabet’s help!  A- Alexander Ovechkin, B- Kevin Bieksa etc.  Aren’t I clever?  I hope for my sake, and everyone else’s who actually chose their players with real rationale thought, that I don’t win, or even get close to winning!

Vancouver Canucks Hockey Cake:

This cake was a customized cake done for a loyal customer for her husband’s surprise birthday party!  I hear he loved it . . . doesn’t every Canadian male want to see their name on the back of an NHL hockey jersey?  It was a biggie . . . chocolate cake, with chocolate buttercream covering the cake, and vanilla buttercream for the piping design.

I love doing these kind of piping cakes.  I love the order to it, I love the rigid lines, and I love to watch the picture/pattern slowly develop as I get into the piping groove.

What I don’t love is the cramp in my hand that I get!  You have to get your icing at the perfect consistency: not so soft, that it doesn’t maintain it’s shape, but that it is not so hard, that it makes piping difficult on your hand and forearm.

I like to test the icing when it is in the bowl still.  If you put a knife into the bowl, and wiggle the bowl around, you can tell how stiff your consistency is.  If the knife slowly wobbles as you wiggle the bowl, you most likely have medium consistency, and if the knife stays stuck, you probably have yourself some pretty stiff icing!  For a piping cake like this one, you want medium consistency.
