How to Stabilize Whipped Cream- Baking Quick Tip

Sometimes buttercream just doesn’t do the trick.  

I must not be feeling well if those words actually just came out of my mouth…well my fingers.  

What I mean is, sometimes buttercream is too thick or heavy, or sweet, for the type of dessert you are making.  Sometimes good ole fashioned whipped cream is perfect for your project.  BUT, if you’ve ever tried to decorate with plain whipped cream, you’ll know that it doesn’t last for long in it original glory and it realitivly quickly turns to a runny mess.  

Having tried to figure out how to prevent this problem for a while now, I did some research and figured out three different ways that you can use to stabilize whipped cream: cornstarch, gelatin and my go to, icing sugar.

How to Separate an Egg- Baking Quick Tip

This is a serious question people.  It is fundamental knowledge for things like making scrambled eggs, quiche, cookies, brownies and cakes!  It is one of those basic tasks that once you’ve mastered, you probably don’t ever think about again.  So when I started making a lot of pies this fall, pies that required a lot of egg whites, the question “how do you separate an egg?” came through, I knew I had to help my young viewers.  

I am not skilled in this area (can’t do the one handed crack), though I should be with the amount of eggs I went through running my cake business, and I can’t remember when or how I learned this skill myself.  I imagine it was filled with shells and crunchy baked goods that my family had to smile while crunching away on a slice of fluffy white cake.  

This way to separate an egg never fails me, though there is still the occasional shell piece that has to be picked out of the bowl because I crack it on the side of the bowl (apparently you’re not “supposed” to do it that way).  It’s easy enough for beginners to learn to do, without the need for that silly bottle thing, or other gimmick.  There are TONS of gimmicks for separating eggs, but resist the urge to buy and follow these simple steps!

Rainbow Chocolate Chip Microwave Cookie: No Bake Cookie in a Mug

 Through our visits to LA over the last couple of months, we’ve been able to meet some really great people!  One of those great people is Hetal, from Show Me the Curry.  Her and her partner, have a YouTube channel that specializes in Indian recipes, and they look so amazing!  While we were at YouTube Space LA, we found ourselves together in what looked to be a bachelor type pad, so we decided to do a couple of collabs together on microwavable recipes!  Make sure you head over to Hetal’s channel and check out her collab with me, baking a Bachelor Brownie.

Rainbow Cheesecake Dip: No Bake Cream Cheese Dip Recipe

A couple posts ago I explained that we were back in Los Angeles at the beginning of November for some more time filming and exploring at YouTube Space LA.  Whenever we’re there, we have to think of as many no bake desserts as we can, and then somehow book the time to film them.  It’s definitely challenging!  Setting up lights and cameras takes a lot of time, especially since we’re used to filming in our kitchen.

 In previous no bake dessert posts, I showed you how to make Cake Batter Bars, Cookies and Cream Stuffed Strawberries and now, rainbow cheesecake dip.   We filmed these all at YouTube Space LA, and we have three more videos yet to come! 

This is another easy, no bake recipe for that people of all ages can make!  And it’s rainbow.  RAINBOW!  Everything that has sprinkles or rainbows makes life better.

I love the recipes that the younger bakers can master quickly because that’s how I started baking.  Super quick and easy.  It makes you feel successful, and for some reason, many people think that baking is difficult.  What I love about this blog and our YouTube channel is that we break the steps up into small pieces and everyone can be successful. 

This is also a great recipe to serve with fruit (if you want to cut a few calories out).  Mini cookies, and meringues would also be perfect!

Cake Batter Bars: No Bake Cake Mix Bar Recipe

I have a small obsession with Birthday Cake Oreos….well, really anything cake batter flavoured!  Why is cake BATTER, such a delicious flavour?  Have you tried birthday cake ice cream from Cold Stone?? OMG!  It is soooo delicious.  Anyway, when the birthday cake Oreos first came out, I was devastated that they would go away as quickly as they appeared, but thank goodness, they’re still on shelves.  You’re going to need to pick yourself up a package of them for this recipe…and an extra package to snack on!

Cookies and Cream Stuffed Strawberries

Making our way to California is quite an effort when you live in the small, relatively isolated, place that we do.  While booking our most recent trip to Los Angeles with a travel agent, I had to explain to her where Cranbrook was located, and how to get out of it by plane.  I don’t think she was having a very good day when I phoned her, as she seemed rather annoyed about 1. my location, 2. my limited airline options, 3. the fact that Paul and I don’t have the same last name.  After arguing with her that a one hour stop over in Calgary was NOT enough time to get through security (switching airlines takes us out of security area) and customs (damn USA), and her insistence that one hour was the “standard allowable time”, she finally relinquished and “allowed” us to be routed through Vancouver.  After all that, we had our tickets, and we left Cranbrook in a snow storm, and arrived in LA in the warm sun!  

Visiting YouTube Space LA again was great!  They have such a great group of people that keep that place running.  While there, we met up with Chef Jason Hill of the YouTube channel Chef Tips, and we decided to do a collob together.  On our channel, we make these delicous cookies and cream stuffed strawberries, and over on his channel, we make an adorable fruit turkey!  Make sure you check his channel out.

Triple Chocolate Mousse Cake Recipe

If you are a chocolate lover (like me) you are going to DIE for this recipe.  When I took this cake to the staff room at school, one of my coworkers said it was the best cake she had ever had.  I brought three of these cakes in, and they were gone in a day.  That’s gotta be a record somehow!  Each layer of the mousse has a unique flavour.  The bottom is a light, flourless chocolate cake with a hint of espresso.  The espresso brings out the richness of the chocolate, so make sure that you don’t leave it out.  The middle is melt in your mouth delicious.

This cake is time consuming, so make sure you have lots of time for each layer to set and/or cool as needed.  You want it to be completely set before you cut it, or you won’t have the layers set enough for them to stay standing up.  It’s definitely worth the effort, so don’t let the time turn you off.

The Hunger Games: Catching Fire – Flaming Arrow Cake Pops

If you don’t know, Catching Fire is the second book in the trilogy The Hunger Games, written by Suzanne Collins.  It is Young Adult in nature, but it is an excellent series if you haven’t read it!  I don’t normally go for fantasy reads, but this is one that I definitely enjoyed reading.  Katniss Everdeen is the “The Girl on Fire” so we created some flaming arrow cake pops!
