No Bake Oreo Marshmallow Bars (Cookies and Cream Bars)

Oreos and marshmallows make a great combination . . . who would have thought?  I’m making these bars, which are super simple, as I have a big cake project in the plans, and you need to know how to make these before I get to the special video!

 There is a lot of flexibility when it comes to these bars.  You can add extra marshmallows, or extra cookies to change the way that the bars taste and feel.  The more cookies you add, the crunchier the bars will be.  And vise versa, the more marshmallows you add, the chewier the bars will be.   I would also take a guess and say that mixing in a different flavour of sandwich cookie would be good too.  Maybe any cookie would work!?!  If you try that out, let me know!

Gourmet Caramel Apples with Homemade Caramel

I’ve never made caramel apples before, and in fact, I’ve never even had a caramel apple.  I’ve walked by chocolate shops a million times that had the fancy apples in the windows, but for some reason I have never bought one.  I probably thought it was too healthy or something . . . all that fruit and all!!
 
When I first set out to make the caramel, I started out trying the pre-made caramel candies, and melting them down.  I tried that 3 times, and had no success.  I don’t know what I was doing wrong, but I had failed enough times that I said “Screw it!” and went to scratch!  I should have known better and started there!  The caramel is deliciously chewy and SO hard to resist dipping into it immediately, but it is HOT when it comes off the stove, so be careful. 

Choose a great tasting apple to use for dipping.  I went with Honeycrisp and I was worried at first that they would be too sweet with the caramel and chocolate, but they were perfect!  When I took the apples to a work function, the thing that my coworkers liked best was the combination of flavours with the type of apple I had chosen.

Choosing which additional toppings to put onto the apples has endless possibilities!  I chose three that I thought would make great combinations, but you can change them up however you would want to.  My favourite of the three was the peanut butter one.  I think it was because of the combination of saltiness of the peanut butter items and the sweetness of the caramel and apple!  Whichever one you choose, they’re all delicious!!

Cake Batter Bars: No Bake Cake Mix Bar Recipe

I have a small obsession with Birthday Cake Oreos….well, really anything cake batter flavoured!  Why is cake BATTER, such a delicious flavour?  Have you tried birthday cake ice cream from Cold Stone?? OMG!  It is soooo delicious.  Anyway, when the birthday cake Oreos first came out, I was devastated that they would go away as quickly as they appeared, but thank goodness, they’re still on shelves.  You’re going to need to pick yourself up a package of them for this recipe…and an extra package to snack on!

Oreo Milkshake

So we roped Kelli into doing another video with us!  It’s so much fun to be able to work on camera with friends and family.  She has been an incredible support and says she likes doing the videos, so we’re booking her in when we can! 

In this video you’ll see us make a deliciously fattening Oreo milkshake!  I don’t think you could find a drink with more fat and sugar than this one!  So if you’re on a diet, don’t watch it!  I’m warning you.

Oreo Peanut Butter Mini Pies

In the last couple of weeks, I have made over 700 cupcakes.  Jebus.  That is A LOT of cupcakes when I take a moment to think about it.  To add to that, I have probably made about 10 cakes, 2 of which were HUGE wedding cakes!

But, there comes a time when it is so much fun to make something new!  When I saw this post on ….. I knew that I had to make them for the upcoming market.  Adding them my arsenal of cupcakes, cakes and cookies at the farmers market proved to be successful!

I have never actually worked with pie dough before, and I realize know that I have enter a whole new realm of the baking world.  It’s not so simple as throwing together some cake batter in my KitchenAid Mixer!  Due to my time constraint, rookie status, I opted for a pre-made pie dough . . .  *GASP* . . . I know, I know, but since then I have tracked down a recipe that I will try for upcoming pie postings.  Everyone can let out their collective sighs of relieve . . . now.   Phewf.

This recipe is not my genius . . . though I am thinking of a variation of it . . . can that be called “mine”?  It comes from one of the websites that I frequent for new and awesome ideas.  The combination of Oreo, Peanut Butter and Pie Crust, is simple, amazing . . . and definitely requires a cold glass of milk near by!

I have no idea where Jenny of Picky Palate gets her amazingly simple ideas from, but she is brilliant in my eyes.  She is the one who created the Oreo Stuffed Chocolate Chip cookie that has become a blogosphere sensation!

Oreo Peanut Butter Mini Pies

From Picky Palate

You are going to need:
Two refrigerated 9 inch pie crusts (If you cheated like me, or your own tried and true recipe)
20 Oreo Cookies
1 cup creamy peanut butter
2 tablespoons melted butter
2 tablespoons granulated sugar
1. Preheat oven to 350 degrees F. and spray 10 muffin cups with Pam, or non stick cooking spray.
2. Unroll pie crusts and cut out eight 4-inch rounds (I used 3 7/8 pastry round cutter and managed to get 10 pies). Press into prepared muffin pan.
3. Spread 1 tablespoon of peanut butter over each cookie then stack 2 cookies on top of each other.
 
Place 2 stacked cookies into pie crusts.
With remaining pie dough, cut long thin strips to prepare lattice top. Follow Jenny’s photos on her post to make lattice tops as her pictures tell the story!
4. Brush melted butter over tops then sprinkle generously with sugar. Bake for 22-26 minutes, until golden brown. Let cool then remove from pan.
Makes 10 pies.
 
I mean it when I say have a cup of milk near by.  Your tongue is likely to be stuck to the roof of your mouth!  Enjoy.

Cookies and Cream Cupcakes

Should I be sharing my recipes now that I’m making them for money?  Hmmm, that is the question . . . oh well, I’ll worry about that another day and give you this pictorial!

First, I have to start off telling you that there is an Oreo in the bottom of this cupcake!  How great is that?!   As soon as I saw the bottom of the cupcake tin with the Oreo in it, I HAD to make this cupcake and add it to my repertoire.

Is it love for you too?

I try to stay away from Oreo’s . . . and the entire cookie aisle when shopping because cookies and I don’t get along well.  In fact, they make me so mad, that I have to eat all of them!  Imagine my fright when I had to buy the SUPERSIZED box of Oreo’s for this recipe.  I was worried none of them would make it to the bowl.

First off start whipping up the batter . . . eggs, sugar, butter.

Add in the flour . . .

Now for the best part, mix in quartered Oreo’s!  HUGE chunks on top of the half Oreo!  Good Lord.

Spoon into cupcake tins, and you’re ready to bake these bites of gooey Oreo goodness!  It took every ounce of self control to resist spooning this batter out of the cups and into my mouth!

It’s Oreo-delicious!
