Rainbow Chocolate Chip Microwave Cookie: No Bake Cookie in a Mug

 Through our visits to LA over the last couple of months, we’ve been able to meet some really great people!  One of those great people is Hetal, from Show Me the Curry.  Her and her partner, have a YouTube channel that specializes in Indian recipes, and they look so amazing!  While we were at YouTube Space LA, we found ourselves together in what looked to be a bachelor type pad, so we decided to do a couple of collabs together on microwavable recipes!  Make sure you head over to Hetal’s channel and check out her collab with me, baking a Bachelor Brownie.

Rainbow Chocolate Chip Microwave Cookie Recipe:

  • 1 Tbsp butter (15g)
  • 1 Tbsp white sugar (13g)
  • 1 Tbsp brown sugar (11g)
  • pinch of vanilla
  • pinch of salt
  • 1 egg yolk
  • 3 Tbsp flour (22g)
  • 1 1/2 Tbsp mini chocolate chips (or regular)

Rainbow Chocolate Chip Microwave Cookie

Using a small ramekin type bowl, cream the sugars and butter together.  Add the egg yolk, vanilla and salt.  Mix until no lumps remain.  Mix in the flour.  Gently stir in the chocolate chips.  
Using a microwave, bake the cookie for about 45-75 seconds.  The time will depend on the power of your microwave, and your personal taste as to whether you want it to be chewy or crunchy.  If you want it chewy, bake it for less time.

    Dear Jenn,

    First of all, I love your videos and recipes, they are so tasty! I know that you have made lots of intricate, complex, fabulous cakes before, but this recipe is honestly my favorite. When I get those urges for something yummy, this is my go-to recipe. It is fast, fun, and delicious!

    Hi..
    I tried this recipe twice now, it tastes really good. But I haven’t been able to get the cookie out of the bowl in one piece.. Am I doing something wrong, or is that normal?

      You can try coating your cup with non stick spray, or by lining it with parchment paper to help the release. I hope that helps!

      i think its normal. in my opinion you eat it with a spoon in the bowl you bake it in. hope this helped.

      Just get a toothpick or scewer and go threw the sides or just put wax paper or non-stick cooking spray.
