Marshmallow fluff, or creme, as it is sometimes called is basically a spreadable version of marshmallows. Think campfire melted marshmallows- without the char! Usually it is sold by the jar, for relatively cheap, but if you know me and that my recipes are made from scratch, you’ll know that I’m not going to just buy a jar of something because it’s cheap. I have to learn to make it!
Making marshmallow fluff is a precursor to a couple of bigger projects that we have coming up on our YouTube channel. Laying the foundations, and the ground work is critical! No, I’m not building something that needs to be structurally sound- I’m trying to make “fluff” sound like a big, important deal.
Did it work?
So yes, back to the fluff. It’s sticky. It’s gooey. It can be a pain to work with, but it is oh, so, good. Apparently people make sandwiches with it, and despite my never squelched sweet tooth, I think that might be disgusting. If you’ve tried it, let me know what it’s like . . . I can’t bring myself to do it. I would have to buy bread.
Homemade Marshmallow Fluff
Ingredients:
- 3 egg whites at room temperature
- 2 cups light corn syrup
- 1/2 teaspoon salt
- 2 cups icing sugar
- 1 tablespoon vanilla extract
Procedure:
In the bowl of a stand mixer fitted with the whisk attachment, whip the egg whites, corn syrup, and salt on high speed for about 5 minutes, or until the mixture is thick and volume has almost doubled.
Reduce your mixer to low speed, add icing sugar and mix until well blended. Add vanilla extract, mixing just until well blended.
You can use it right away, or refrigerate it in a sealed container for 1-2 weeks.

It is really tasty and makes a nice little midnight snack
p.s. we made fluff last night and had it on our pancakes and waffles this morning it was a hit with ALL SEVEN kids, the spouse, and the in-laws.
Up next weekend, is the marshmallow fluff icing on funfetti mini-cupcakes and red velvet mini-cupcakes…. if any of the fluff survives till then!

Just getting back into baking now that I have more time. I just watched you marshmallow fluff tutorial. That will be my next venture so I can make the frosting with it. OK so my query is about the plunger container you used for the corn syrup. What a magic item to have for sticky products. What is it called and where did you get it. I am in Australia do will probably have to hunt for it, but if I have a name it might help. Failing that I can purchase online.

Just discovered your website and videos, love them, just wondered how would be the best way to make strawberry or chocolate fluff….
I’m so glad you found us! I haven’t tried making it myself… I would prefer using strawberry puree as an addition, and cocoa powder BUT both of those would change the consistency of the fluff. An easy way would be to use flavoured extracts in place of the vanilla. Let me know how it works out!
Jenn, the sandwiches are called Fluffernutters and they are amazing!! I too was skeptical, but I promise you will like them. Just get some of the tastiest white bread you can find, spread your marshmallow cream on one side and peanut butter on the other. Slap them together and enjoy! It’s a surprisingly delicious combo. They’re quite sweet, but even my pickiest eater loves them.
