Gingerbread Dough Recipe

This is the first in a three part series on making Gingerbread!  We start out with how to make gingerbread dough, then gingerbread men, and finish off with a gingerbread house.  The smell and taste of the gingerbread wafting through my house made me so nostaligic for the holidays passed.  The taste is like no other, and is so festive.  
 
The video has been up for a couple of hours now, and I have already received a number of questions about substitutes for molasses.  Firstly, I would never ask a baker for a substitute.  Obviously if it’s in the recipe, it is necessary.  I can’t tell you how many times I’ve received the question “Do I need to use ___?”  Well, duh.  Of course you do.  It’s part of the recipe.
 
 Back to molasses, yes there are substitutes like honey, corn syrup, maple syrup etc, but you will 1. sacrifice the flavour, and 2. the cookies will not be roll-able.  If you’re happy with that, then by all means, substitute out molasses, but don’t say I didn’t warn you! 
 

 
 
How to Make Gingerbread Dough
 
Ingredients:

2 3/4 cups all purpose flour (330g)
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 tablespoon ground ginger
1/2 tablespoon ground cinnamon
3/4 teaspoon cloves
1/2 teaspoon nutmeg
1/2 cup butter (120g)
1/2 cup brown sugar (90g)
1 egg
3/4 cup molasses (180mL)

Gingerbread Dough Recipe

Procedure:

Mix together flour, baking soda, salt and spices in a medium bowl and set aside.  In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy.  Add in the egg and molasses and continue to mix until combined.  Add flour mixture and mix on low speed until the dough is mixed together.  Separate dough into two discs and wrap each in plastic wrap.  Place in fridge for at least one hour.  When dough is ready to be used, roll it out to about 1/4″ thickness and cut as desired.  Cookies can be baked in the oven at 350F for around 14 minutes.

    Hi there,
    I tried this recipe and i followed all the meassurements but my dough is super soft and sticky. Its now setting in the fridge and i hope it will harden but i dont think so! I used cup meassurements from holland but i dont think that is very different from those you used. Any tips?

    I tried this recipe with sugar beet syrup instead of molasses and it worked perfect! It is really difficult to get molasses here in Germany. Sugar beet syrup is much easier to find and may be a good substitude for all who can’t get molasses. The consistense is comparable to molasses. It was also esay to roll out the dough and the cookies were just delicious ! I hope I can help other people who have the same problem that there’s no easy way to get molasses in their country ! 🙂 Jenn, I’m looking forward for this years christmas videos 🙂 You do a great Job!
