Ice Cream Cone Rainbow Cake Pops

November 1, 2013 by Jenn

I have known Paityn now for quite some time, so when the idea of working on another video with her came up, we jumped at it!  She is the kindest, and sweetest girl ever!  Our viewers have been saying the exact same things about her in the comment section of her videos with us (which she has three).

In this video together we make mini ice cream cone rainbow cake pops!  The mini cones are the cutest things I’ve ever seen . . . I imagine that if I had kids of my own, I would already know these existed but I had never seen them before.

Ice Cream Cone Rainbow Cake Pops

Ingredients:
• prepared cupcakes of various colours
• Buttercream (Our buttercream video)
• mini ice cream cones (I found mine at WalMart)
• white melting chocolate
• sprinkles
• red candies

Procedure:

  1. To make the cake pops crumble one cupcake of one colour into a bowl and add one tablespoon of buttercream.  Mix together until a playdough like texture is reached.  Repeat for all colours.
  2. Use a small amount of each colour, combine together and roll into a ball.  Place on a parchment lined baking tray and place in the freezer for 5 minutes.
  3. Melt the chocolate in the microwave by using 30-60 second intervals and stirring repeatedly.
  4. Dip the top of the cone into the melting chocolate and place the cake ball on top. Set aside and repeat process.  Put into freezer for 5 minutes again to allow the chocolate to harden.
  5. Once the chocolate is hard, dip the ball and cone into the chocolate again, covering the cake ball.  Allow to harden and repeat if desired.  To apply sprinkles, re-dip the cone halfway and apply sprinkles and “cherry” on top!

Hey Jenn. I’m making these cake pops for my daughters birthday. I’m using store bought cake mix to do it to save time. If I make the cake ahead of time and store in the fridge should i wait to add the frosting to the cake for the day of assembly or can i do it after i bake them and store them in the fridge already mixed. I’m afraid i might ruin the consistency of the cake if i do it ahead of time.

As long as you keep them in a sealed container in the fridge, I would think they would be fine. Good luck!

how did you make those colored cake crumbs? did you just bake a white/brown colored cake then drop food coloring in it?

I make it by colouring vanilla cake batter, and then baking the cake.

Hi! You literally crumble the cupcakes up….like smash them! Bake them in the oven, let them cool, and then crumble them into a bowl.

I want to make these but a couple of questions, do you use box cake if so how many boxes? Also how many cupcakes does your recipe make?making for a party and need at least 40. Thanks!

    • Jenn says
      April 2, 2014 at 2:29 pm

Sorry, but I don’t use box mixes, so I’m not sure how many it would make with a box. I would guess it would be the same amount that the box would make of regular cupcakes. Most of my recipes make between 18-24.

How do you keep the chocolate from harden between the “cooling” time?

    • Jenn says

Sometimes you have to remelt for a couple of seconds….and if it’s in a piping bag, it hardens super quickly, so I just pop it in the microwave for 10-15 seconds.

hello I am new to this site, and I really love your idea of the ice cream rainbow pops, I want to do them for my daughter birthday coming this saturday, I hope I am not too late, my question is I don’t understand what kind of crumbles of cupacakes I need use it, can you be more specific? I really want to do those ice cream for my little girl, maybe you can give me the recipe for those crumble cupacakes with the food colour in it, thank you

Cake crumbs are made from crumbling up cakes or cupcakes. To get them to be coloured, dye the batter before you bake them.
