How to Make Cheesecake Cake Pops

June 2, 2013 by Jenn

This is the third video/post in our series on Cheesecake!!  YUM!!  These Cheesecake Cake Pops are the PERFECT bite sized treat to indulge in . . . a tiny taste at a time.  They are the perfect amount of cheesecake for a small taste, or to finish off a big dinner.

This cheesecake cake pop recipe is based off our homemade cheesecake recipe. Cheesecake pops are a fun way to jazz-up plain old cheesecake … great for parties and get-togethers!

Cheesecake Cake Pop Recipe:

16 oz cream cheese (450g)

2/3 cup granulated sugar (70g)

2 eggs

1 tsp vanilla extract

Mix all of the above ingredients together and bake at 375F (190C) for 25 minutes.

Ingredients for Pops

graham cracker crumbs

melting chocolate

lollipop sticks

After the cheesecake has cooked and cooled, you will need to scoop it out and roll into round balls.  At this point, before you begin dipping you will want to make sure that you freeze the cheesecake solid.  After they have frozen, you will be able to add the lollipop stick by dipping the end of it into the melted chocolate.  Re-freeze after putting the sticks in.

After the pops are frozen again, you will dip them into the melted chocolate, and quickly into the graham cracker crumbs.  Allow them to dry on a piece of parchment paper.

I hope you love these as much as I do!  They are delightful!

Happy baking!
