This recipe is one of my original ones from back when I first started my blog . . . a long time ago! We weren’t doing YouTube, and Paul wasn’t taking my pictures, so things in this post are looking a lot better than they were before. So, this is kind of a repeat, but a good one!
These are the perfect cupcakes for a St Patrick’s Day party . . . or to take to a Guinness and Bailey’s lover that you may know. I never would have chosen these cupcakes to try if I hadn’t been making them for someone else as a present . I don’t particularly like Guinness (much to my father’s dismay!), but there is something about the combination of the chocolate and the Guinness that is so divine! It’s moist, chocolatey, with a hint of the Irish. If you’re not intrigued yet, you will be with the Bailey’s buttercream that tops the cake. If you don’t have Bailey’s you can use any Irish liqueur, and if you don’t have Guinness, you can substitute it with Kilkenney or another Irish Stout!
Guinness Chocolate Cupcakes Ingredients:
1 cup Guinness stout (beer)
1 cup unsalted butter
3/4 cup cocoa powder
2 cups all purpose flour
2 cups sugar
1 1/2 tsp baking soda
3/4 tsp salt
2 large eggs
2/3 cup sour cream
Bailey’s Buttercream Frosting Ingredients:
3 to 4 cups icing sugar
1/2 cup unsalted butter, at room temperature
3 to 5 tbsp Baileys Irish Cream

I tried making these and when I combined the butter, beer and cocoa powder it didn’t come out smooth looking like it does in the video, what could I have done wrong?
Sounds like you didn’t incorporate them together fully.
Tried again, This time I warmed the beer on the stove and added the butter to melt it, Just warm enough to melt the butter but not to a boil. I also sifted the cocoa powder. That seemed to do it. Everyone loved them! Thanks for the recipe.

I’m soo sorry, but i don’t find the temperature that will fit with the 20 minutes for the cupcakes.
I want to bake the cupcakes for a friend of mine… but i haven’t found the right temperature…. you don’t say it in the videos or in the recipe .

I made these cupcakes last night they turned out great!! My total fail was applying the frosting I didn’t have a piping bag so I cut the tip of a Ziploc bag inserted the tip. The first two cupcakes frosted beautifully just like yours I started the third cupcake and the tip shot out the bag and frost everywhere 🙁 . I am off to the store to get the proper tools to frost I am assuming a piping bag, coupler , and tips. Otherwise they turned out great very moist and just the right amount of chocolate.
Yes, I’ve never had any luck with using plastic bags either, which is why I always use piping bags. I’m glad you had fun despite the mishap!
