Eggnog is a treat that has always signified Christmas to me. I can remember from a young age as soon as the eggnog came out, Christmas had begun! Yes, it’s full of fat, and if you make it from scratch it has raw eggs in it, but just ignore those small, insignificant details :). Now, as an adult (really? How did that happen?) I love it with a little shot of spiced rum, on ice, and it’s heaven in a cup. I do have to admit that as much as I love eggnog, I find it extremely “commercial” that it is now coming out in grocery stores immediately after Halloween. Seriously, do we really need the indulgence of eggnog for two months instead of one?
Eggnog is something that is readily available in North America, and if you’re one of my non-NA readers/viewers, you should definitely track down a bottle of your own, or attempt to make it! It’s so worth it. You can start your own tradition of eggnog in the glasses signifying Christmas to YOUR family. I can’t wait to head up to my mom and dad’s to enjoy our first glass of official Christmas cheer . . . everything I had in November doesn’t count, right?
The recipe:
Eggnog Cake Ingredients:
1/4 teaspoon nutmeg
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
1 cup sugar
1 1/3 cups all-purpose flour
1 cup eggnog
1/4 cup vegetable oil
Eggnog Frosting Ingredients:
3/4 cup butter
2 1/2 cups icing sugar (powdered sugar)
1 pinch nutmeg
1 pinch salt
2 1/2 tablespoons eggnog
The batter in these cupcakes is rather runny (thin like) but it batter bakes up into a moist cupcake that literally melts in your mouth! They taste like Christmas in your mouth!
A friend of mine, who brought one home for her husband, said it looked like he was having an orgasm as he ate it!
