Carrot Cake Recipe
Ingredients:
1 1/2 Cups Butter
3/4 Cups Walnuts
1 Teaspoon Cinnamon
1 1/2 Teaspoons Baking Powder
1/2 Teaspoon Salt
3 Cups grated carrots
2 Cups sugar
3 Cups flour
6 eggs

Hi Jen, I tried your carrot cupcake recipe. I have a question regarding the texture. Is it really heavy and hard one not the springy and soft type of a cupcake? Coz basically I kept the cupcake liner half full because I was assuming that it will still grow and create a dome but unfortunately not. Or did I do something wrong when mixing it? I would appreciate your feedback. Thanks!

Yes I’m sure I didn’t miss any of the ingredients. But what should have been the correct texture of this recipe? Maybe I will try it again and check again. Though the recipe tastes.really good. I’m just looking for the softness and spongy texture.
