Rainbow Cupcakes in a Jar: How to Make

In this video, I show you how to make your own rainbow cupcakes in a jar!  I love the idea of these, and anything rainbow for that matter.  They are super fun to make, if you like dirty dishes–you end up with a ton whenever you bake “rainbow”.  You’ll need to find yourself some canning jars for this project.  I got mine at Target, and I’ve seen them available at many other box stores . . . and even in grocery stores, especially during canning season.  

I’ve gotten many questions from viewers regarding “How do I eat it?”  I thought that was self explanatory, but apparently not!  Well, you take a spoon and dig right in!  The cake to icing ratio is high on the cake side, but you’re bound to be able to look passed that with how cute these are!

How To Make Smurf Cake Pops

How to Make Cronuts (croissant donuts)

A cronut is a deep fried croissant, shape and topped like a donut, that is becoming very popular. In this video we show you an easy cronut recipe you can make in your own home.  Yes, I totally cheat by using pre-made Pillsbury dough, but come on!!!  All that waiting for dough to rise over and over . . . I’ll add it to my Baking Bucket List.

How to Make Rainbow Chocolate Truffles

In this video we show you how to make white chocolate rainbow truffles. This is the same method you would use to make rainbow cake pops, just without the cake pop stick.  I made these truffles as I though it would be a nice change from the cake pops. 

I brought the extras to school for my students to enjoy.  Their reactions basically were “Yummy”, “Pretty”. . . fairly run of the mill.  I brought the rest into the staffroom figuring they would be a nice treat for a couple of adults, but little did I know I was about to get the reaction of the century from one of them!  My lovely friend Kelley took one on her way out the door, and left.  Somewhere between the staffroom and the exit door she took a bite . . . and we hear “OOOOOHH!!! It’s RAINBOW!!” and she comes running back in the room, “You guys, it’s RAINBOW!!”

Milk Substitute: Baking Quick Tip

Need some options for dairy free baking? Some great milk substitutes are rice milk, almond milk and soy milk.  And the list can go on, and on, and on.  That is the great thing about heading to the grocery store these days, there are tons of options for milk substitutes!   All of my recipes that I have up on the blog and on YouTube can be substituted in this way.  One cup of milk is equal to one cup of milk substitute.

Butter Substitute: Baking Quick Tip

If you’ve ever found yourself needing to bake something for someone who cannot have butter, you will find this Baking Quick Tip helpful! 

You can substitute margarine if you need to, and if you are dealing with a butter allergy, using a vegan margarine is a great sub. When I use these substitutes, I use the same amount that is called for in the recipe.  So, if the recipe needs 1 cup of butter, use 1 cup of margarine.  Super simple!  I have used it in cakes, icings and have had excellent results.

Egg Substitute: Baking Quick Tip

Baking without eggs is one of the trickiest things I have encountered in the kitchen . . . that and those darn macarons! 

I have tried many different subs for eggs- applesauce, bananas, oil- but I have found the most success with the powdered egg substitute that I found in the Gluten Free area of my grocery store.  The powder is made of potato starch, baking powder and corn starch.
