In this video we show you how to make white chocolate rainbow truffles. This is the same method you would use to make rainbow cake pops, just without the cake pop stick. I made these truffles as I though it would be a nice change from the cake pops.
I brought the extras to school for my students to enjoy. Their reactions basically were “Yummy”, “Pretty”. . . fairly run of the mill. I brought the rest into the staffroom figuring they would be a nice treat for a couple of adults, but little did I know I was about to get the reaction of the century from one of them! My lovely friend Kelley took one on her way out the door, and left. Somewhere between the staffroom and the exit door she took a bite . . . and we hear “OOOOOHH!!! It’s RAINBOW!!” and she comes running back in the room, “You guys, it’s RAINBOW!!”

Items used in the rainbow cake tutorial:

– White melting chocolate
– Piping bag
– Colored Sanding Sugar
How to Make Rainbow Truffles:
You will need red, orange, yellow, green, blue and purple cake crumbs, in 6 different bowls. Add a small amount of icing to each different colour and mix with your hands until you have a playdough consistency. Take a small amount of each colour and press each of them together to form one ball. Set it on parchment paper, and repeat until all of the crumbs are formed into truffles.
Put the tray of truffles into the freezer for about 20-30 mins. In the meantime, melt your white chocolate. When the truffles are frozen, bring them back out and place one into the melted chocolate. Make sure you cover the entire ball. Using a spoon or chocolate tool, place the truffle onto the parchment paper, and allow to harden.
Once the truffles are all completely coloured, you can pipe a design onto the top of them using the melted chocolate in a piping bag. Before the chocolate hardens again, sprinkle the sanding sugar onto the tops of the truffle.

You have to make coloured cake. The crumbs are just made by crumbling up a cake that has already been baked. If you’re not sure about colouring the batter, watch our rainbow cake video for help. Thanks for watching!
