Fondant Extruder: Baking Quick Tip

Since I’ve started decorating cakes, I have found cake tools (aka my toys) that I never would have imagine existed!  There is seriously a tool for every technique that anyone decorating a cake could ever want or need.  This Fondant Extruder is one of those tools.  

When I first started cake decorating, I was instructed the “Wilton Way” by two great instructors.  I learned how to decorate cakes and flowers and designs, and in one specific instruction, I was taught how to make a long “snake” like border.  To do this, I was told to take 2 long dowels of wood (provided by Wilton) and to roll a piece of fondant between these two rods until I had a nice long “rope”.  It worked, but it was constantly breaking and I was having to use many pieces of fondant to make enough of a rope to cover the base of a cake.  

I knew there had to be an alternative method.  While searching, I found a fondant extruder which was the answer to my problems!  Using this tool enables you to produce a long rope simply buy twisting the handle, which presses down inside the tube against a disc, and out comes whatever shape you’re looking for!  The version of the extruder that I have has many different discs, and many different shapes can be produced . . . square, diamond, multi openings for hair, grass etc, all sizes of circles for different widths of borders or ropes.  

If you find yourself need a lot of uniform rope for decorating, I highly recommend getting yourself a fondant extruder.  It makes the decorating process much quicker and produces a product that is uniform in shape and size.  If you have any questions, just let me know!

Making Cake Pops with The Babycakes Cake Pop Maker

In a previous post, I explained how I magically came across a Babycakes Cupcake Maker and a Babycakes Cake Pop Maker while searching amongst screwdrivers, bathroom faucets and TV’s!  

The joys of small town Canadian shopping.  Gosh, I HAVE to move.  I’m going stir crazy lately, and remembering that I’m stuck shopping at a tire store aggravates me!!

Anyway. . . so while I grabbed a Babycakes Cupcake maker on a great sale, I also picked up a Babycakes Cake Pop maker.  Making cake pops is not strenuous- it just tends to be a time consuming process.  When I was using this maker, I quickly learned that using the maker cuts time in half!  

One thing though . . . when using this cake pop maker, you risk people claiming that you aren’t making a “real” cake pop.  According to smart people on the internet, a REAL cake pop must include the icing that is mixed in with the cake.  But as long as you have a thick skin and the ability to make something from scratch that the smart people don’t, then I totally recommend that you buy and use this machine!  Time is important people.  

Have you tried any of the Babycakes products?  I know there is a donut one and a mini loaf one too . . . but I think I should stop my shopping-for-mini-makers-problem right now.

Babycakes Cupcake Maker Review & Demo

With my obsessive need to go shopping all the time, I love a good sale!  Unfortunately, where I live the “good” sales tend to be at large *Canadian* box stores, not Nordstrom or Christian Louboutin!  One thursday night I excitedly ran down to the local Canadian Tire (yes we have a store called that in Canada) and found TWO Babycakes products- a cupcake and a cake pop maker- on sale . . . amongst the wrenches, fishing rods and road salt.  One has to love a “one-stop-shop”! 

My first video that I did was a review of the Babycakes Cupcake Maker . . . I don’t think I would have bought one of these for full price, but at a sale of $15 CDN, I figured it was worth it to check it out and give a review. 

The maker is CUTE (and pink!), which makes me love it . . . and of course it is rather small, so it conveniently can fit pretty much anywhere you need it to.  

I was really impressed that the instruction guide came with recipes, because my recipes are quite large, and I was already worrying about scaling them down.  I whipped up a batch of their chocolate cake, then followed the easy instructions on how to work the cupcake maker (preheating etc). . . and I waited for it to fail!  I don’t know why, but I was convinced it wouldn’t work.  

Surprisingly, it worked fabulously!  Honestly, I found making the mini cupcakes in the Babycakes maker so much easier than using a mini cupcake tin that goes in the oven!  The cupcakes domed up perfectly (but you have to put enough batter in the cup to do so) and came out rather easily.  I’m sure you need to keep the metal plates and wells oiled after uses though, as I imagine the batter would stick to everything if not! 

I wanted to make sure I could use the maker with cupcake liners too, so in some of the wells I put mini-cupcake liners, and though they appeared to not fit at first, once they were filled with batter and cooked in the maker, the liners filled the wells perfectly.  

I wouldn’t buy this machine if you’re looking to do production work, but it would be a great tool to use with kids (watch out as the handles get hot) or if you’re just craving a small batch of cupcakes 🙂

Blueberry Bran Muffin Recipe (Healthy & Tasty)

During the Christmas holidays, I was on the look out for a “healthy” muffin that I could make for P and I to snack on.  I had a couple of rules the the muffins had to follow. 

1. The apples freezing in the garage had to be incorporated. 

2. The bananas freezing the in freezer had to be incorporated. 

3. The huge box of bran flakes I purchase because it was on “SALE”, needed to be used. 

My final demand . . .

4. The pints of blueberries need to be used up! 

So I went about searching for recipes that used all of the these things . . . and I couldn’t find one that satisfied all of the rules.  I had to make a number of recipes up!  

63 muffins later, I had done it!  

The best one out of the bunch, which incorporates the blueberries and bran, is the one I have decided to share with you!  It comes from a low fat cookbook, from the Looneyspoons series, and I have made some alterations shown in the recipe.

Snowshoeing in The Canadian Rockies (Kimberley BC)

As much as I complained about winter and the cold in my last post, and I do have some moments when I’m not cursing and hating winter.  These moments are few . . . and far between . . . but they have happened!  This video is proof for all of you nay-sayers (aka my close friends who love my complaining ways).

In this cardio video P and I made our way from Cranbrook (BC, Canada), to Kimberley (BC Canada) about a 20 minute drive, to the south end of the Kimberley Nature Park.  For those who know the area, we were actually closer to Marysville than we were to Kimberley.   About five minutes along St Mary’s lake road, there is a small pull out and it was from here where we started our snowshoe, destined for Sunflower Hill.  

At first we doubted whether or not we even wanted to bring the snowshoes along, as it looked like the path had been well travelled, but thankfully we did, because as soon as we were off the main branch of the trail, we needed them for the climbing!  The hike is not particularly difficult . . . there is only one part that is a longish hill climb, the rest of the trail is a steady low grade climb.  Once we got to the top of the hill, the views out into the St Mary’s Lake valley, and the Purcell mountains were amazing!  We were up later in the day, (as we had a dinner date with my parents at the ski hill and didn’t want to have to drive back and forth to Kimberley for it) and while we were at the top, we were treated to the start of a sunset.  It was beautiful!  

If you ever get close to this area, visiting Sunflower Hill is a must!  I can’t wait to check it out in the spring, and fall!  I’m looking forward to seeing all of the flowers that I’m told carpet the hills.

Green Tea Cupcakes (Matcha Cupcakes)

It is freezing cold here in B.C. and I am trying to dream of hot summer days spent laying at the lake, basking in the heat!  Oh, how I wish it was warmer, so when I willingly go (am drug by my touque) outside I don’t need to put four layers of insulated clothing on!  But, alas, this is not the case.  It is cold.  It is Canada.  It is winter.  Suck it up self!  Or maybe I’ll move to Mexico . . . it has to be warm there all the time!  I’m sure my Mexican YouTube viewers would let me couch surf for a while!  I should stop complaining . . . but I can’t!  It’s in my DNA.  Thanks a lot Dad. 

When the hot summer sun is poking through, one of the most delicious drinks I use to cool myself down with is a Matcha Frappachino from our local coffee shop.  You can get them regular, or flavoured with lemon, peach, or strawberry.  The lemon is my favourite, and that is why I chose to top the Matcha cupcake with the lemon buttercream.  It is a nice, refreshing top!  

You have to be a Green Tea/Matcha lover to like these cupcakes!  The matcha powder has a very unique taste, and I’ve found that you’re either a lover or hater of the flavour.  You can find matcha powder at many health food stores, or do an online search.  Just make sure that you are buying the matcha powder, for use in baking.  There are a couple of different varieties available.

How to Make Cake Flour: Baking Quick Tip

Cake flour is a lighter, fluffier version of all purpose (AP) flour that is regularly used in cakes, cupcakes and cookies!  It is not as common a kitchen ingredient as AP flour, but it is easy to make if you don’t want to go to the store. 

If you’re looking to make your own cake flour, all you’re going to need is all purpose flour and cornstarch!  I told you it would be easy! 

Ingredients:

3/4 cup All Purpose Flour

2 tbsp Cornstarch

Procedure:

Whisk or sift them together and use for recipes calling for cake flour.  

*This recipe is the equivalent for a recipe calling for one cup of cake flour.

Heart Shaped Cookie Pops (Stained Glass Candy Effect)

I’m back up and running after the St Eugene Bridal Fair this Sunday, and (I think) I have recovered!  All the prepping, set up, chatting and take down, while not overly intense, all adds up and ends up very tiring.  But, the best thing about a Bridal Fair is the chance to get to talk with all of the excited brides, and their loved ones.  

Oh yes, love is in the air . . .

Speaking of love . . . with Valentine’s Day ideas floating all around the internet, I was super excited to think of a new cookie pop idea!  The last time I made cookies with a stained glass effect, I was probably a teenager!   I loved baking even back then, and now, those golden nugget ideas are coming in super handy!  How cute is a cookie with a window cutout??  If it could get any cuter, putting the cookie on a stick is to die for!  I don’t know why, but I love eating food off a stick!  It makes me feel much more refined as you can take dainty little bites and most importantly, you don’t have to get your hands dirty!  

Unfortunately, when biting into a stained glass windowed cookie, the window is hard.  Like, crack your teeth, shocking hard!  So watch out if you make them . . . and forget that they are hard candies melted in the center . . . not gooey centers . . . not that I did that or anything.  Twice.  Maybe. 

To make these cookies, you will need: 

Sugar Cookie Dough (my favourite is here)

Cookie/Cake Pop Sticks

Crushed Hard Candies (jolly ranchers, lifesavers work well)

 Heart Shaped Cookie Pops
