Skittles Cupcakes with Rainbow Icing

My kitchen counters have been covered with bags and bags of Skittles for many weeks now.  I’ve been working on an upcoming special video with a fellow YouTuber involving Skittles, but that video is not set to go up until next week.  I didn’t take the bags of Skittles off the counter after I filmed that video, as I knew I had to make more than ONE Skittles recipe!  

So while I wait to show you the original idea for a Skittles recipe, I present to you a Skittles Cupcake recipe!  For this recipe I start out with a basic vanilla cake batter and add in whole Skittles.  You could also chop the Skittles up into smaller pieces, and that would work for this recipe too, basically it just depends on how much chewiness you want to add to your cupcake.  The Skittles flavour is subtle, but you can definitely “taste the rainbow”!  Ha, ha, ha . . . I’ve been waiting to use that line. 

The rainbow icing is a beautiful way to decorate any flavour of cupcake.  I thought the bright, vibrancy of the buttercream would pair perfectly with Skittles, because, as I mentioned already, the Skittles slogan is “Taste the Rainbow.”  Striping the bag is the easiest way to achieve this effect.  It is simple, and produces a beautiful, rainbow topping.  Adding a couple of Skittles to the top for decoration, completes the Skittles theme of the cupcakes.

Inside Out Rainbow Cake

Do you have a bunch of leftover jelly beans from an Easter egg hunt?  Well, I have the perfect way to use them up!  I would love to be able to tell you that I was “using mine up” but, no, I went to the Bulk Barn (I should have frequent flier miles there) and bought all brand new jelly beans for this project.

 I absolutely adore this cake.  I think that it is beautiful, and the shock value of the inside is second to nothing I have seen.  I contemplated using vanilla cake, but I felt the darkness of the chocolate cake really accentuated the bright vibrancy of the buttercreams.  

Now, I am a buttercream LOVER, but if you aren’t (what is wrong with you?!) you can make the layers of the buttercream thinner but only making one stripe for each ring.  But, if you do that, keep in mind that your cake will not be as shocking when you cut into it.  The point of a cake like this is to make it look amazing when it is sliced into . . . and for it to taste amazing!! 

I went with an outer colour of white buttercream for the cake to mimic a cloud like appearance . . . did I achieve that!?!  Haha.  I also think that the white makes a clean slate for the jelly beans to sit on nice and brightly!

Pot of Gold Cake Pops for Saint Patricks Day

Happy March!  Now that it is officially March, I can start thinking all things St Patrick’s Day!  And all things Spring, but that is WAY too much to ask here in Canada.  So I’ll stick to Leprechauns and Pot’s of Gold.  I think that every kid has once thought that if they could just get to the end of that rainbow, there would be a gleaming pot of gold at the end of it.  I’m still trying to find it, aren’t you?  I think I’ll have better odds if I take up playing the lottery.  Aren’t your odds of winning the lottery less than they are of being struck by lightning?  I guess that means that my odds of finding a pot of gold are even slimmer than the lottery.  Besides, playing the lottery is a lot less work!  It’s mountainous around these ‘ere parts.  It’s me and the lottery now.

Since now that I’ve given up trying to find the end of the rainbow, I’ll just have to stick with making a pot of gold!!  Making these cake pops is pretty standard, but with a little twist of putting them upside down, voila, you have the rim of the pot!!  Genius, I know.   Since it takes the royal icing rainbow so long to dry, you might want to start with those a day early.  If you can’t find black melting chocolate, you can also use brown.  I tried brown in my practice versions, and it looked great too!  Also, when it comes to the yellow sugar pearls, you can use any small round sprinkle/candy for the  “gold”, or even just regular yellow/gold sanding sugar.

Rainbow Fruit Kebob with a Watermelon Grill

While we were in LA last week, we shot a video with Don Monopoli from The Learning Station, who is a very talented children’s entertainer.  You’re probably thinking, how can a food based channel and a kids music channel doing a collab together?  You put a Kindergarten teacher into the mix! 

I first discovered The Learning Station a number of years ago while looking for fun songs to sing and dance to in my class.  I had a couple of CD’s and subscribed to their channel when they started up on YouTube, so when I found out that Don was going to be in the same program we were in LA, I knew we had to do a collab.  The kids in my class LOVE watching The Learning Station videos and LOVE dancing to the songs.  They wave at Don every time the intro plays and let out a big “HI DON!” and wave to him excitedly.  One of the girls really likes him as she thinks he’s “handsome”!  If you have young kids, this is the BEST channel to subscribe to!  Together with his wife Laurie, Don has created award winning songs, CD’s and travels all around doing live performances!

For our videos together, we decided to do a Rainbow Fruit Kebob on our channel and the Fruit and Veggie Hokey Pokey on Don’s channel.  Since we were in LA, I wanted to use the fresh fruit that is available all year round there.  It’s a nice healthy change from the regular treats on our channel, but I definitely won’t be sticking with it, sorry for those of you who are more health conscious!

Rainbow Ice Cream Cake Recipe: How to Make a Rainbow Ice Cream Cake

I’ve wanted to make an ice cream cake for a while now, as I dream about the cookie crumb filling that Dairy Queen layers in their ice cream cakes!  I’m drooling, just thinking about it.  I found the perfect imitation of it, and it is so simple- just Oreos and fudge/ganache.  It provides a crunchy base for this bright vanilla ice cream cake.

I’m not a huge fan of vanilla ice cream, but I swear I can taste rainbows when I bite into this one.  It’s like a magical explosion in your mouth.  With that explosion from the colour, and they the overwhelming delight with the cookie crust, this cake not only looks amazing, it tastes fabulous!  If you’re not a fan of vanilla like me, you could replace the vanilla ice cream with pretty much any light flavoured ice cream that would work to dye.

The only difficulty when assembling this cake is getting your ice cream to be the perfect consistency in order for it not to be a melted mess, but soft enough to be able to mix the colouring into it.  I brought the ice cream out about half an hour before I wanted to make the first layer, and just left it out while I did each layer. It was kind of a sloppy mess at the end, but it worked!

Rainbow Cheesecake Dip: No Bake Cream Cheese Dip Recipe

A couple posts ago I explained that we were back in Los Angeles at the beginning of November for some more time filming and exploring at YouTube Space LA.  Whenever we’re there, we have to think of as many no bake desserts as we can, and then somehow book the time to film them.  It’s definitely challenging!  Setting up lights and cameras takes a lot of time, especially since we’re used to filming in our kitchen.

 In previous no bake dessert posts, I showed you how to make Cake Batter Bars, Cookies and Cream Stuffed Strawberries and now, rainbow cheesecake dip.   We filmed these all at YouTube Space LA, and we have three more videos yet to come! 

This is another easy, no bake recipe for that people of all ages can make!  And it’s rainbow.  RAINBOW!  Everything that has sprinkles or rainbows makes life better.

I love the recipes that the younger bakers can master quickly because that’s how I started baking.  Super quick and easy.  It makes you feel successful, and for some reason, many people think that baking is difficult.  What I love about this blog and our YouTube channel is that we break the steps up into small pieces and everyone can be successful. 

This is also a great recipe to serve with fruit (if you want to cut a few calories out).  Mini cookies, and meringues would also be perfect!

Rainbow Cupcakes in a Jar: How to Make

In this video, I show you how to make your own rainbow cupcakes in a jar!  I love the idea of these, and anything rainbow for that matter.  They are super fun to make, if you like dirty dishes–you end up with a ton whenever you bake “rainbow”.  You’ll need to find yourself some canning jars for this project.  I got mine at Target, and I’ve seen them available at many other box stores . . . and even in grocery stores, especially during canning season.  

I’ve gotten many questions from viewers regarding “How do I eat it?”  I thought that was self explanatory, but apparently not!  Well, you take a spoon and dig right in!  The cake to icing ratio is high on the cake side, but you’re bound to be able to look passed that with how cute these are!

How to Make a Rainbow Cake

This is one of my most favourite cakes that I have made to date.  I’ve seen dozens of different versions of this prior to making it, so I wanted to make sure that I put my own spin on the outside of the cake in order to set it apart from the others!  To do this, I used the “petal” technique and I hope you love it as much as I do!
