I have just gone through the hundreds (yes, hundreds) of comments that have already come through my YouTube channel’s February Contest, and I have been incredibly humbled. The thoughtful, inspirational and awe inspiring comments have blown me away.
100th Video Contest!
I am super excited to announce that we have reached ONE HUNDRED videos on our YouTube channel, CupcakesandCardio! I can hardly believe that we have worked this hard, and reached this milestone.
We are successfully running a cake/cupcake company focusing on custom orders, weddings and Farmer’s Markets, while I continue to teach full time Kindergarten (and occasionally update my blog)! It is taking a lot of hard work, long hours, but with our YouTube channel being instructional, I feel it is a natural jump from my day to day job. Reading and hearing from the viewers and fans is awesome, and makes it worthwhile!
Some of my favourite comments have been from the younger crowd who say that they are using the videos to bake with their mom/dad and that makes me super happy as that is how my roots in baking began. My personal favourite videos that we have done over the last 100, was the one with my mom when we baked a recipe of my Grandma’s Chocolate Dream Bars , and the one that we did as a surprise for Payten, Birthday Cake Surprise!

Level Cakes with Bake Even Strips: Baking Quick Tip Video
Using a knife is not the only way to level a cake . . . well, it’s arguablely the best way to level the cake AFTER the baking process, but to cut down on cake “waste”, try out these Bake Even Strips!
All you do is soak them in water for a couple of minutes, and then wrap them around your baking pan! The ones that I have fit around my 8″ and 9″ baking pans and they seriously work wonders!
Basically, and I am NOT a scientist, the strips cause the heat to be more evenly distributed throughout the pan, so the edges don’t bake so much faster than the middle. I’ll admit, I was a doubter when I first was recommended these, but after my first use of them, I was convinced. They totally work and basically eliminate the rounded middle of cakes. Pretty cool, but if you don’t believe me, check out the video and see for yourself.

Easter Cupcakes- Easter Nest How To
Easter is coming up quickly around the corner . . . why is it so early this year? Or is that just me thinking that it’s early? Regardless of when I “think” it’s supposed to happen, the Easter bunny has puked into the aisles of the local stores, and the Cadbury Cream Eggs are flying off the shelves!
I actually happen to love Easter . . . well, duh, who wouldn’t love a holiday where CHOCOLATE comes to town? Four days off, endless supplies of chocolate and a delicious ham dinner cooked by my Mom . . . BEST holiday ever!

How to Make Homemade Angel Food Cake from Scratch
Angel food cake has consistently been my favourite cake of all time. Sure, I have not been 100% loyal to it . . . I’ve had my love affairs with Chocolate Chip Cookie Dough Cake, and Boston Creme Cake . . . but, I always come back to angel food cake! It is the ONE cake that I feel can be eaten without icing (*GASP*. . . NO ICING!?!? . . . or “frosting” for you non-Canadians), but it is equally delicious with a light whipping cream cover, or even better a whipping cream/yogurt covering!
I always requested angel food cake from my mom for my birthday cake, and now, I have discovered the BEST homemade recipe for Angel Food ever! You have to try it to see for yourself.
The best part about eating Angel Food Cake?? It is basically GUILT FREE! It is so low in calories, and fat that you can truely enjoy eating this cake . . .without feeling like you need to go to the gym for the next three hours!
St Patrick’s Day Cupcakes: How to Make Rainbow Cupcakes
What could be better than finding that pot of gold from under the rainbow? It would be just like winning the lottery and who doesn’t want to have THAT happen to them?!?!?!
These cupcakes are inspired by the magical mystery of rainbows that brighten a day, just by appearing in the sky. It sounds like I’m on a fabulous LSD trip or something, but since us teachers are back to work tomorrow, I assure you, there are no psychedelics inspiring this post!
