Hamburger Cupcakes and French Fries

It has been two years since I first introduced Paityn to YouTube, and YouTube to Paityn. 

We started off filming with her as a birthday gift from her  parents, Birthday Cake Surprise, last year we filmed cute Rainbow Ice Cream Cone Cake Pops, and Macarons, and now this year I had her show me how to make one of her ideas.  Paityn attends the same school that I teach at, and one day she had made these adorable hamburger cupcakes for her brother’s birthday, and as soon as she brought me one, I knew we had to film it for a video.

In the past two years, Paityn has grown and matured a tremendous amount.  She’s also grown physically and no longer needs a stool hahahaha!  She is one of the most talented, spunky kids I know- but she started out as a shy, quiet girl who I had to pull teeth to get to talk when we started filming.  Now, I couldn’t get her to be quiet, and she took over my kitchen like she owned the place!  I love this kid. 

While Paityn was making these cupcakes, she used box mixes for the cupcakes and brownies.  She suggests that using golden yellow cake mix is preferable over a white cake, as it looks more realistic and bun like.   For the brownies, baking the mix worked best in a 9″x13″ pan in order for the brownies to be thinner than they would be if they were baked as according to the box directions. 

For the french fries, I knew I had to have an idea to bring to show Paityn, so I made the french fries using pound cake and a crinkle cutter.  Baking them under the broiler gives them the true fry look. 

The recipe is super simple, and super fun to get creative with!

Cotton Candy Cupcakes

I’m not a huge lover of the taste of cotton candy, but I love the smell, the look and idea of it.  If I could find a way to cover the spun sugar in chocolate, well then I’d be in love! 

What I do like are the soft pastel colours that end up in a fluffy mound on the end of the cone.  It always reminds me of the way I think clouds would look and feel if you could see them up close.  I had always wondered how cotton candy was made, and if you have the same wonder, make sure you check out my previous post (and video) on exactly how you can do it at home. 

For the cotton candy flavouring of these cupcakes, I used the cotton candy that I made with my cotton candy machine, and for extra flavouring, I used LorAnn Gourmet flavouring, which I bought through Golda’s Kitchen.  If you want a strong cotton candy taste, you will want to use a larger amount than what my recipe requires.  I was being cautious with the amount that I put in, but feel free to add however much you want to. 

If you are going to be making these cupcakes and the mini cotton candy toppers, make sure that you make the mini cones immediately prior to serving your cupcakes.  The cotton candy does not stay “flossed” for long.

How to Make Graduation Cupcakes

I searched high and low for my grad cap for this video, and I have NO idea where it is.  Hopefully, it’s packed away-far, far away-with the other mementos from 1990’s, never to be found again.  It’s probably at my parents, and if its there, it’s safe- it will never see the light of day again. Too bad for you guys that you won’t get to see me in all my grad cap glory . . . mwahahahahaha.  Really, I just wanted to chuck it in the air again. 

I’m a bit mixed on my feelings of graduation.  While I feel it can be a great accomplishment, whether it be from high school, university, college or a trade school, I also feel that it is a major money grab!  Not only do you usually need to pay for all post secondary courses, there are cap and gown rentals, application for graduation fee (that one made me the most annoyed . . . what did they think I had been going there for 5 years for?), tickets for the ceremony, fees for diplomas . . . and, and, and . . . feel free to add more in the comments!

The positive side of graduation is that an achievement has been accomplished, and a new start begun!  **I hate when old people start sentences with “I remember when . . .” and then continue on to tell a really long, boring story, but since I’m not old, I can do that.**  I remember when I graduated high school and thought it was just the greatest thing.  It was never in doubt that I was going to graduate, so I wasn’t one to run around yelling “I made it!!” because graduating high school was just something that was expected would happen.  You worked hard, did your homework, and got your diploma.  University on the other hand was quite different.  There seemed to be way more . . . distractions . . . there.  At that ceremony I may have spent some time yelling “I made it!“, but I can’t remember.  I was distracted.

If you are graduating this year, congratulations and enjoy it.  It goes by too quickly.  Jeesh.  ENOUGH with the old people sayings Jenn!

Leprechaun Hat Cupcakes for Saint Patrick’s Day

We just got another monumental dump of snow, like a foot of it.  How can that be?  It’s MARCH?!  I’ve been trying to think up of fun spring things to make and it’s so hard when I don’t remember what grass looks like.  I think we need to move.  Somewhere southern.  I need a Leprechaun to grant me my wish to move.

Leprechauns, according to Irish folklore, are a fairy type creature in the form of an old man, usually up to mischievous acts.  According to Wikipedia, “Leprechauns spend all their time busily making shoes, and store away all their coins in a hidden pot of gold at the end of the rainbow. If ever captured by a human, the Leprechaun has the magical power to grant three wishes in exchange for their release.”  Listen Leprechaun, I need sun.  I need heat.  I need real Vitamin D!   Get me that, please! 

I’d like to announce now that I have Irish in my blood, so don’t attack me with a righteous claim that I am being stereotypical, or somehow making fun of Irish traditions.  Because I know I am.  And I can.  I’m one of you. 

Besides, do you really think that I would go chasing after a little green fairy man in order to beg for the snow to disappear? 

Yes, yes, I would.

How to Make Banana Split Cupcakes

So we’re on our way again to LA to visit YouTube Space LA tomorrow and we’ll finally be able to announce the program that we’ve been working with YouTube on for the last 6 months!  Keeping a secret for that long has been hard.  It’s not exactly a secret that we’ve been in LA . . . you can tell by the random places/kitchen’s we were filming in in August and November (expect some more soon too!)  What we’ve had to keep secret is exactly what (other than videos) we’ve been doing there.  When we’re officially allowed to announce it, I’ll be sure to let you know what we got to work on!  I’ve got a little black cloud hanging over me though as my program bestie isn’t going to be able to make it as she has an incredibly sick family member.  But, it’s looking as though he is over the worst part and is on the road to healthy. 

On to the cupcakes . . .

The idea for these cupcakes came to me while I was shopping in our local grocery store . . . the Superstore.  Canada is so original in it’s naming of stores.  I knew I had a delicious banana cupcake recipe, and a ton of ripe bananas ready to be smashed into something delicious, so I grabbed these long baking trays. . . they’re meant for baking breads and gift giving.  If you’re looking for your own and can’t find any by looking for banana split stuff, try searching for “food tray” or  “hot dog tray”.

In the video, I left the cupcake wrappers on the cupcakes as I put them into the tray. Honestly, I was sure about whether to remove them or not.  I think if I was to go back and actually eat the banana split, having the wrappers on the cupcakes might eating it a little bit difficult . . . but then if you were sharing it, you might want the wrappers so your cupcake doesn’t touch the other person’s spoon?!?!?  I just don’t know!!

Christmas Tree Cupcakes

Does anyone else hate having a Christmas tree?  I’m not being a Grinch here, I’m pretty much just being lazy.  Every year Paul and I go hunting for our own Christmas tree, as well as one for my parents, way out in the bush somewhere.  Having never done this as a child (other than going down to the local grocery store parking lot) it is a tradition that I look forward to every year (even though I don’t like putting up the tree anymore).  I think the reason that I don’t like putting up the tree is because I don’t like taking it down.  When I was younger and living at home with my parents, every year I would pull all of the boxes out and decorate the house with such excitement- and then I would leave the mess for my mom to put away after the holiday.  Since Paul and I have lived together we have had a tree twice but in the recent years, we’ve only gone out looking for my parents.  I just can’t get over putting all the ornaments away and taking the tree down!  It’s pathetic.

So instead up putting up a tree in my house, I’ll happily put up a tree on a cupcake!  This is a different twist on how to make a Christmas tree cupcake, rather than just piping a huge pile of buttercream on top (not that I don’t love that variation) but this one is more for looks!

Blue Velvet Smurf Cupcakes

To go along with my previous post Smurf Cake Pops and my obsession with the new Smurfs 2 movie that is coming out this summer, I had to make these Smurf Cupcakes when I saw them on Pinterest!!  I love that all of my favourite toys of the 80’s are in circulation today.  Whenever my Kindergarten students show up with My Little Ponies, I get to have a happy flashback to my childhood filled with them!  Oooh, or Strawberry Shortcake…or Rainbow Brite, or…..Cabbage Patch Kids.  You get the idea.

We have been getting requests for Blue Velvet cake for a while on our YouTube channel, so I figured these cupcakes would be perfect with blue velvet bases, topped with the blue and white buttercreams!  **Spoiler Alert** Blue Velvet is the same as Red Velvet, but with BLUE gel paste!!  Shocking, I know.

How to Make Maple Bacon Cupcakes for Canada Day

Maple cupcakes with maple buttercream, topped with bacon … what could be more Canadian? These maple bacon cupcakes are perfect for any Canada day party you may be going to.  Here in Canada we celebrate our country’s independence from Britain on July 1.  Maple syrup is an iconic symbol of Canada and can be found at EVERY tourist trap there is!  As is the beaver!  Check out my post on that, here.  You must try the real stuff maple syrup, not the brand from the famous Aunt wearing a handkerchief.  The real deal is shockingly expensive, but definitely worth it for flavour and taste.
