Italian Peach Cookies (Pesche Dolci)

When Paul and I first started dating, Christmas was only two months into our relationship.  Can you say awkward?  I had no idea what to buy him and ended up getting him some gift certificates to somewhere I don’t even remember.  It was a total cop-out, but I didn’t know him well enough to get him something more personal.  

During that first Christmas, I tried my first Italian Peach Cookie.  It was amazing!  When Italians get together, there is never a shortage of food.  Never.  A dessert tray is no different from a main course or the third, or the fifth- there is always a ton of food. The cookie platter that held the peach cookies, had a bunch of other pastries and sweets as well, so I’ve got a lot of cookies to replicate in the years to come. 

Finally last year, I tried to replicate the peach cookies on my own, without help (my stubbornness shining through!) and didn’t succeed.  This year, with my Mother In Law in better spirits (she has had some heart problems in the past), I approached her about teaching me, and then teaching everyone in a YouTube tutorial. Being that she is 80 years old, she has no idea what YouTube is, and barely understands a computer.  But, being the strong, confident woman that she is, she was willing to do something that she didn’t really understand the purpose behind.  She has been wanting to help us for years in our business, and she was so happy to finally be able to do so.  

 Paul and I will cherish this video for many years to come, and we are so lucky to have been able to include Pina in our tutorial.

Bear Poop Cookies: Backpack Baking in the Canadian Rockies

It’s bear country here in the mountains of British Columbia, Canada.  In fact, there was just a horrific grizzly attack recently, a couple of hours from our house.  The man survived, but still, attacked, and mauled by a grizzly!  Yikes! 

This video is definitely one that is to be taken with good humour.  We are having more fun with our videos, and I want you to have fun while you’re watching as well!  Stepping outside the box (of our kitchen) keeps us interested, challenged, and hopefully adds an element to life that you might not see where you live.  We are so lucky to live where we do, in the Canadian Rocky Mountains, and with our Backpack Baking series, we love to showcase our home turf! 

Canadian Rockies

This hike takes place on a local hike called “The Butte”, and it is located halfway between our city of Cranbrook, and the nearby one, Kimberley.  It is about a 30-45 minute hike, and is one that can be done easily with kids, but when filming and hiking, it takes a couple of hours!  Paul has recently started a new hobby, flying remote control aircraft’s (quadcopters, wings, planes etc), so we were loaded our backpacks up with the ingredients needed for baking, the quadcopter stuff, and the tools needed for the filming.  It was a heavy load for the two of us.  We need to hire a pack mule next time. 

 These bear poop cookies could be done a with a number of different add-in ingredients.  I chose to use coconut, white chocolate chips, and pine nuts for optimal “poopness”.  You could use other nuts, and ingredients if you prefer to have your scat look like something else.  Black bears tend to eat a lot of berries around where we live, so the pine nuts were an essential add-in for my version.

Thanks to my mom for lending me her bear costume.  Doesn’t everyone’s mom have a bear costume on stand-by for emergency bear videos?  No?  Oh.  Well, my mom does!  It must be the Kindergarten teacher in her.  It’s her tickle trunk.

Frosting Filled Birthday Cake Cookies- Chips Ahoy Copycat Recipe

I am obsessed with anything that is cake flavoured- birthday cake, cake batter- anything!  I especially love the ones with the sprinkles!!!  So obviously when I saw Frosting Filled Birthday Cake Cookies from Chips Ahoy on the shelf at the grocery store, I snatched them up before anyone else could steal them away from me.  

I don’t think I’ve been more excited to try something than I was to try these cookies- I’ve never seen frosting filled in a cookie before-  I took one bite, and was devastated!  They were not very good.  At all.  They didn’t taste like cake batter, and they sure didn’t taste like frosting!  Being the devoted sweets fan that I am, I new I couldn’t give up at that point, and I had to try to make my own version.  

To make the frosting filling, I ended up using shortening, which I don’t usually like to use.  I tried the recipe with butter instead, but the butter melted in the heat of the oven, and the frosting spread out all over the cookies.  I also failed when it came to the cookie batter.  I went with my go-to chocolate chip cookie batter, and found that it didn’t have enough flour, so the cookies spread out wide.  I needed them to keep their bowl shape around the frosting filling.  So, I fixed my errors, replaced the butter with the shortening, and added more flour.  One more practice batch, and I had it fixed!  

 I hope you love these as much as I did!

Reese’s Peanut Butter Cup Stuffed Triple Peanut Butter Cookies

If you are a peanut butter lover, you need to add this to your list of MUST make recipes. 

Are you ready?  These cookies have peanut butter, peanut butter chips, Reese’s Pieces, and all of that deliciousness is wrapped around a Reese’s Peanut Butter Cup!

Obviously, if you are NOT a peanut butter fan (what is wrong with you?) these are not the cookies for you.  I apologize to you for having to lose out on the amazingness of these cookies.  If you’re allergic, how to do you live life?!?!?  I really feel for you.  Seriously.  No sarcasm.  THAT’s how bad I feel- bad enough to not be sarcastic!  I would guess that you could substitute the peanut butter portions for a nut free alternatives, but I haven’t checked that out yet. 

This is a pretty straightforward cookie recipe, so following the steps to combine the ingredients is relatively easy.  When baking these cookies, you want to make sure that you wrap the dough entirely around the peanut butter cup.  This will prevent any of the peanut butter cup/chocolate from escaping during baking.  I didn’t have that problem, but if you do freezing the peanut butter cups ahead of time might help as well.

Chocolate Macarons with a Nutella Filling

Macarons have been on my baking bucket list for forever!  They are something that as soon as I saw them, I knew I had to learn how to make them.  So about a year ago, I decided I would try.  I NEVER fail at baking.  Ever.  I’ve failed at decorating many times, but the actual baking process has always been successful for me.

I failed at making macarons.  THREE times.  THREE!  How can an experienced baker, FAIL at something so little and cute?  It has to be easy.  Well, after experimenting with recipes three (did I mention that) different times, I finally found one that worked!  On the first try.

So as a gift to you, I am sharing it!  Happy day!

Spider Chocolate Chip Cookies

Using a traditional chocolate chip cookie recipe, we make them into Spider Chocolate Chip Cookies for Halloween using melted chocolate!  The chocolate chip cookies are chewy and delicious….and the spiders are sure to gross out your guests!

Sugar Cookies

Sugar cookies have got to be the most versatile cookie there is!  You can use them for any special occasion, any holiday, iced, or plain and in any shape or size you can imagine!  I make these every year for Christmas, and I have used this recipe since I was around 15 years old.  My mom got the cook book Cookies: A Cookie Lover’s Collection for me and it’s inscribed “Christmas ’95 To the Best Cookie Maker any family could ever have.  Keep on baking! My Top 5 Christmas Cookies 2011

This year, there was no Christmas Cookie Exchange for my friends and I (well, they might have had one, who knows!? . . . I wasn’t part of it if they did).  G and I decided that it just wasn’t going to fit into the jam packed season . . . disappointing, yes, as I love to hang out with the girls and sip on bevies, but I had bigger plans.

 This year, I baked the equivalency of an entire exchange all by myself.  

Why would someone do this?  Just to see if I could!  I had christmas platter orders to fill and I thought that choosing cookies that I would like to receive would be the ones that would be best to give!  After two days straight baking cookie after cookie, I was exhausted, but so happy with the results. 

In my humble opinion . . . these are the favourite cookies that have been from the plate to my mouth in a while.  My criteria for defining these cookies as my creme de le creme?  

They must be: 

A. Delicious.  If you’re going to eat the calories, it better be worth it!  

and B. Simple!  I didn’t want to have to spend hours upon hours messing with dough and multiple steps!

So here they are . . . enjoy!  

1. Sugar Cookies

These cookies are my all time favourite to have during the holidays!  

I make mine with Almond Extract, as well as Vanilla Extract, and it totally makes the cookie the greatness that it is!
