Today, we take you on a biking Backpack Baking adventure on a portion of the Trans Canada Trail called North Star Rails to Trails. We show you how to make S’mores Cake in a Jar in our Bemco Backpacking Oven. This recipe can be made at home, without the backpacking oven, by following the same recipes and procedures.

The trail that we take you on is a 25 km recommissioned railway line that runs between my city of Cranbrook and the neighbouring community of Kimberley in British Columbia. S’mores are so delicious, I knew I had to figure out a way to incorporate them into the backpacking oven somehow. Luckily my first idea of jars with S’mores cake worked! Filling the bottoms of the jars with the graham cracker layer gives the cake the bit of cookie crunch a S’mores needs! Then on top of that, a delicious layer of chocolate cake is topped off with gooey, browned marshmallows. It’s absolutely delightful served out in the beauty of the Canadian Rocky Mountains . . . or in the comfort of your kitchen.
S’mores Cake in a Jar
Ingredients:
- 1/2 cup graham cracker crumbs
- 2 tablespoons sugar
- 2 tablespoons melted butter
- prepared chocolate cake
- mini marshmallows
Procedure:
- Preheat oven 350 F. Grease inside of 500 mL mason jars.
- Combine graham cracker crumbs, sugar and melted butter in a small bowl. Mix together until combined.
- Place 2-3 tablespoons of graham cracker crumb mixture at the bottom of prepared jar.
- Fill jar 3/4 full with chocolate cake batter.
- Bake in preheated oven for 40-45 minutes.
- Once cake is baked, remove jars from oven and briefly set aside. Turn oven onto broil.
- Top jars with mini marshmallows and place back into the oven for 60-90 seconds. Watch very carefully as marshmallows will brown quickly.
- Remove jars from oven, and allow to cool. Serve while still warm.
- Jars can be sealed with lid and kept refrigerated for 3-4 days.
