Rainbow Ice Cream Cake Recipe: How to Make a Rainbow Ice Cream Cake

I’ve wanted to make an ice cream cake for a while now, as I dream about the cookie crumb filling that Dairy Queen layers in their ice cream cakes!  I’m drooling, just thinking about it.  I found the perfect imitation of it, and it is so simple- just Oreos and fudge/ganache.  It provides a crunchy base for this bright vanilla ice cream cake.

I’m not a huge fan of vanilla ice cream, but I swear I can taste rainbows when I bite into this one.  It’s like a magical explosion in your mouth.  With that explosion from the colour, and they the overwhelming delight with the cookie crust, this cake not only looks amazing, it tastes fabulous!  If you’re not a fan of vanilla like me, you could replace the vanilla ice cream with pretty much any light flavoured ice cream that would work to dye.

The only difficulty when assembling this cake is getting your ice cream to be the perfect consistency in order for it not to be a melted mess, but soft enough to be able to mix the colouring into it.  I brought the ice cream out about half an hour before I wanted to make the first layer, and just left it out while I did each layer. It was kind of a sloppy mess at the end, but it worked!

How to Make Fondant: Marshmallow Fondant Recipe

Fondant?  That’s the stuff you peel off a wedding cake, right?  It’s that white, hard stuff that covers up the cake that doesn’t taste very good?

Before I first started decorating cakes, I really had no idea about what fondant was.  I had heard Cake Boss talk about it, except he called it “fon-dawnt” (which has always annoyed me immensely!), and I knew that if I was going to be a wedding cake decorator, I would have to grow to love it, and I would have to find a brand that didn’t have a chalky, chemically taste to it. 

I first worked only with Wilton fondant, but found that to be gross, to tear easily and to be better for sculpting figures.  I then moved onto Satin Ice and found it to be tasty (as tasty as pliable sugar can be) and to cover cakes super easily.  So, I never tried another brand.  I know that many other brands exist, but I never felt the need to try them as I was satisfied with Satin Ice.  That, and we went through fondant by the 10kg container and I didn’t have time to continue experimenting. 

I had heard that you could make your own fondant, but under time restraints, I never took the time to look into it.  Now, that we are not doing our cake business, and I have time, I did some research and learned how to make fondant from scratch!  This version is made from marshmallows so it smells (and tastes) delicious!  It also happens to be one of our most requested videos of all time!  Every time we do a video involving fondant, we get asked for our own recipe.  So finally . . . here it comes people . . . Funfetti Cake Recipe (Birthday Cake with Rainbow Sprinkles)

This is one of my favourite cake recipes that I have made.  I’m a huge sucker for almond extract!  I don’t know what it is about that flavouring, but no matter what it’s in, I LOVE it!  My Angel Food Cake has it, my Sugar Cookies have it and they are delicious!  Whenever it is included in a recipe, I inevitably get asked as to whether it has to be included . . . trust me, it’s worth buying and trying out.

Triple Chocolate Mousse Cake Recipe

If you are a chocolate lover (like me) you are going to DIE for this recipe.  When I took this cake to the staff room at school, one of my coworkers said it was the best cake she had ever had.  I brought three of these cakes in, and they were gone in a day.  That’s gotta be a record somehow!  Each layer of the mousse has a unique flavour.  The bottom is a light, flourless chocolate cake with a hint of espresso.  The espresso brings out the richness of the chocolate, so make sure that you don’t leave it out.  The middle is melt in your mouth delicious.

This cake is time consuming, so make sure you have lots of time for each layer to set and/or cool as needed.  You want it to be completely set before you cut it, or you won’t have the layers set enough for them to stay standing up.  It’s definitely worth the effort, so don’t let the time turn you off.

Pumpkin Coffee Cake

Making this pumpkin coffee cake at the end of our walk in the Cranbrook Community Forest was an awesome treat!  My favourite thing about our Backpack Baking videos are the warm treats at the end of a usually hard activity.  I know I’m supposed to say that my favourite part is “connecting with nature“, or “getting exercise”, but let’s be real, it’s the reward at the end.  

This walk in our local recreation site is not very difficult and it’s one that we do every couple of weeks.  It’s perfect for those days where you want to get out and get some fresh air, but don’t have a lot of time to devote to hiking.  The view of the valley at the end is beautiful, as you can see in the video.  Even though it’s not a hard hike, it was definitely a nice change to have a treat at the end and take some time to enjoy the view, as usually we’re rushing up, and then back down! 

Even Ruby liked it..the walk/hike and the cake.

Halloween Cake Roll: How to Make

I have wanted to make a cake roll for SO LONG and I’m so excited to finally get to show you how to do one!!  An amazing opportunity presented itself from a friendship that has been growing online with Beth from CookingandCrafting!  We met IRL in LA during our recent trip there and it was so fabulous to get to chat face to face.  She happens to be friends with a fellow Canadian YouTuber, Tammy from Yoyomax12 and suggested that the three of our channels work on a Halloween collaboration together.  I immediately jumped on the idea and started working on a Halloween cake roll.  

For the collaboration video, Beth worked on a giant ghost cookie, and Tammy did a Spider cupcake.  Make sure you check both of their videos out as they are great!

No Bake Cheesecake in a Jar with Kristina Werner

I am not crafty.  I try to be when I’m in my Kindergarten room, but I do not have the skills to work the scissors properly.  Give me a mixing bowl and some ingredients and I can make whatever you want, but some paper and glue?  I’m lost.  All those cute Pinterest crafts that people are pinning and recreating?  I don’t even bother trying to pretend that I might be able to figure out how to do it myself one day.  I just move on to fabulous cake ideas!

When we were at YouTube Space LA, we ran into another YouTuber, Kristina Werner, from the YouTube channel Star of May.  We decided to put our heads together and see what we could come up with in a collab together!  We decided for the video on my channel, we would make a No Bake Cheesecake together, and then for her channel, she would show me how to decorate the jar for gift giving!  Yay! You get to see how horrible I am at cutting!!  

But first up, the cheesecake!

Pineapple Upside Down Cake: Backpack Baking

We are so fortunate to be able to live in one of the world’s most beautiful areas…the Rocky Mountains.  They are within minutes of our door step and we have an amazing amount of hiking, and camping close by.  Every year, I request that we make our yearly treck into a place called Fish Lake, which is located in the Top of the World Provincial park.  It is about an hour drive from our home on the highway, and approximately another 45-60 minutes on a bush road.   We have headed into Fish Lake during all seasons, but my favourite is always summertime.  The lake at the top is stunningly clear and the hike in is warm and casual.   It’s just over 6 kilometers in, and has a relatively small elevation gain . . .  which of course is lovely when you’re carrying a 50 lb pack on your back! 

Being that this is my absolute favourite place to backpack into, camp and enjoy the cell-phone free zone, the only thing I could imagine making it better is warm, fresh cake!  I’ve always wanted to make a Pineapple Upside Down Cake, and I finally had the chance to do so in this trip.  I thought it was perfect treat to be able to bake in the backpack oven.  The colours from the pineapple and the cherries stood out beautifully against the stunning scenery. 

Our friend Kelli joined us on this trip.  She’s an avid hiker and camper, so we knew she’d be a great one to have along to enjoy the hike and scenery.  Unfortunately once we got to camp, she had some problems with her allergies, so we didn’t get to see much of her.  Or maybe she was just sick of us and was so happy to be rid of us!  Just kidding Kelli!  We knew she was in rough shape for a bit, but she powered through and was ready to bake by morning! 

Paul’s been experimenting with some more of the camera work on our recent trips and videos, and I think he’s doing such an amazing job.  In this one, he’s using the GoPro Black for the hiking scenes, and the time lapses.  He still was using the DSLR for the baking footage.  I love that he is so talented . . . definitely works in my favour 🙂
