How to Make Royal Icing Apple Blossom Flowers

I’m dreaming of spring. Begging for spring in fact!  It’s time for the snow to leave behind the brown, ugly grass that is covered in deer poop (we have an urban deer problem, if you haven’t heard . . . YouTube search it . . . warning it’s nasty) . . . okay, well maybe that is not what I’m waiting for, but in order to get to the beauty of green grass and flower buds, we have to get through the ugly parts. 

Often when I’m piping with royal icing, as I’ve told you I find it relaxing, my mind easily wanders.  Spring time brings such hope and excitement, thoughts of summers passed, and beauty in the outdoors.  Spring is one of the most beautiful times here in the East Kootenay’s and brings with it the abundance of wildflowers.  These five petaled apple blossoms carry me into thoughts of spring immediately, as outside my bedroom window at my parent’s house was an apple tree.  I remember it being planted, tiny as can be, and now, it is this great huge thing that is in constant need for trimming.  I always knew when spring had arrived . . . when the pink buds bloomed on the tree.

BeaterBlade for the KitchenAid Tilt-Head Review

As a baker always looking for a shortcut in the kitchen (and through life), I love sharing products that help me save time in the kitchen.

I am always using my KitchenAid Stand Mixers for making cakes, cupcakes and buttercreams, and CONSTANTLY having to clean the paddle blade.  Over.  And over.  And over.  Scrape the bowl, wipe the blade.  Scrape the bowl, wipe the blade.  Repeat. 

Well, not any longer! 

I have been using the BeaterBlade for the last month and it seriously cuts all that scraping time in half.  The sides of the blades are made of flexible material, and scrape the sides, and bottom so I don’t have to turn the machine off and mix anything in by hand.  I love that it means I have one less spatula that I have to clean every time I’m baking something (there’s that shortcut for me again!).

Oreo Cake Vodka Truffles

The flavoured Vodka’s finally hit Canada after months of tempting ads and Pinterst pins . . . why does it take so long to get anything to Canada??  I really don’t get it.  Is our government so much more rigid that the rules for companies are that much greater?  All I wanted me was some Cake Vodka!  Well, I finally got it . . . it took a great connection at the local liquor store to make it happen 🙂  Marshmallow vodka is my Bestest’s favourite . . . but I’m sticking with cake!

This recipe is a combination of a traditional Oreo truffle (using cookies and cream cheese), which I posted about a while ago here, but instead of using plain ole Oreos, you have to get yourself some Birthday Oreos!!  They are so delish, and are bound to make you happy as they have sprinkles in them!  Life is better with sprinkles. 

What would go better with birthday Oreos than a cold glass of milk, right?  Wrong.  Cake Batter Vodka!  I used the vodka in the chocolate coating that covers the truffle, and they are goooooooood.

Leprechaun Cupcakes for Saint Patrick’s Day

Oh, the luck of the Irish is coming our way!  I have a miniscule amount of Irish blood in my white body . . . my Mom’s, Father’s Father’s . . . Father?.  I can’t quite remember the lineage, but I know it’s in there somewhere!  Along with English and Scottish too . . . as every other white person does 😉

We all can use a bit of luck in our lives, so rather than chasing the pot of gold at the end of the rainbow, I’ve decided that looking for a Leprechaun may be more futile.  Bahahaha!  My Kindergarten kids like looking for Leprechauns, so I’ll let them do it for me.

Cupcake Rose Swirl with Buttercream Frosting / Icing

I’m happy to have you here, still reading my blog, after my last entry of course!  I’m trying to learn how to take compliments, really, I am . . . but it’s hard!

If you are one of the people who like to tell me my cupcakes are too beautiful to eat, just buy two next time . . . one to eat, and one to look at 🙂  Problem solved!  I know you love me, and my cupcakes, and you can still enjoy a treat and some beauty on your table.

Learning how to pipe a buttercream rose became super popular a couple of years ago . . . it was everywhere!  It was on birthday cakes, anniversary cakes, and wedding cakes!  It is still super popular with orders from my customers, but what I’m going to show you here is how to pipe a buttercream rose onto a cupcake!

All you need for this cupcake decorating is a batch of buttercream, a Wilton 1M tip, and a Leaf tip if you want the extra leaves on the side.

Piping Buttercream Icing Flowers on Cupcakes

Buttercream, oh buttercream . . . how can a cupcake be topped with anything but buttercream?  I top all of my cupcakes with some version of buttercream- cream cheese, salted caramel, chocolate . . .mmmmmm.

When I am at various local markets/fairs and out with my cupcakes (you know, trolling the Cranbrook strip and all), I often get the comment “Oooh, they’re too beautiful to eat!” Wait, don’t stop reading . . . I’m not bragging!  

You’re actually about to think I am an ungrateful beeotch right now, but when someone says that to me, I sigh.  Yes, I understand that these people passing by are trying to compliment me on my decorating, but please, I am obviously trying to sell my cupcakes, not take them home with me to stare at because they are “too pretty to eat”.
