How to Color Fondant & Gum Paste Using Gel Food Coloring

Colouring fondant and gum paste is one of the basics for cake decorating . . . you could call it “dying” fondant as well.  It is super easy and can produce a wider variety of colours than those you can find pre-made for purchase.  

I often get asked questions regarding how I’ve managed to get my fondant true red or black.  Those colours seem to be super hard to make when you’re first starting out . . . “I’ve already used the entire bottle! WTF?”.  The liquid food colouring that you can get in grocery stores does not cut it- at least in my experience.  I have yet to find a liquid food colouring that actually colours things the same colour as the bottle!

If you can’t use liquid food colouring successfully, then what is there to use??  Gel paste!!   Gel paste is a concentrated, solid form of liquid food colouring and you generally need less gel paste than you would food colouring for recipes. I have tried many brands of gel paste, and the one that I keep coming back to (and buying GIANT bottles of) is Americolor Gel Paste.  

In this video tutorial, we’ll show you how to color (dye) fondant and gum paste with food coloring gels. We’ll also do a quick review of Wilton’s Icing Colors , Americolor Soft Gel Paste and Chefmaster Liqua-Gel Food Color.

How to Make a Cupcake Bouquet for Mother’s Day

I have the best Mom!  

I’m sure you think you all do, but, sorry, mine takes that title!  If you have been a frequent viewer of my videos on YouTube, you will have “met” my mom before.  She is such a great sport to accompany me in my videos.

When you are buying a present for the best mom in the world, the magnitude of choosing the perfect present can be very daunting, so instead of a present this year, I’m MAKING her a present.  Nothing says “love” like a homemade gift.  Maybe I should add a construction paper card to go with the “present”.  Oh dear.  Let’s just hope she still loves me after Mother’s Day this year.

How to make a Donut Cake

Mmmm . . . donuts!  Here in Canada we have Tim Horton’s and once a year they reward us nutty Canucks with their “Rrrrroll up the Rim” contest.  Roll your r’s when you say it!  

Supposedly, you have a one in six chance to win things like RAV4’s, BBQ’s, TV’s and gift cards, but I’m just happy when I will a free coffee, or DONUT!  The contest usually runs for March and April, or until the cups run out (I assume) and unfortunately when I went through the drive thru a couple days ago, I had a plain cup.  No more “Rolling Up the Rim” for us in Cranbrook.  So now that I have my stock pile of cup liners that were winners, it’s time to cash them in! 

My absolute favourite baked good from Tim’s is their Tea Biscuit, which is basically a scone and when I went to use my free donut for it, I was told I couldn’t.  “You can get a muffin, cookie or donut, maam”.  What?  Not a tea biscuit?  Fine.  A donut it is.  If you force me, and twist my arm, I’ll order a deep fried, covered in chocolate ganache, ooey, gooey delightful bite of goodness.  I contemplated the most bang for my buck (piece of cup). . . the Long John (sprinkles AND chocolate), the Boston Cream (chocolate and bavarian cream) or the Canadian Maple (bavarian cream and maple ganache).  I went with the Maple Cream and it was delicious!! 

So, with donuts on the brain, I present to you the Donut Cake! 

In this video we show you how to make a doughnut (donut if you will) cake using our vanilla cake recipe and topping it with chocolate ganache and sprinkles.

Royal Icing Daffodil Flowers

Daffodils made from piped royal icing are a great decoration for your cakes and cupcakes. Royal icing flowers are typically used for decorating traditional wedding cakes.

Nothing says springtime like a daffodil! We’re finally out of the ugliness of winter, and shortly, the tiny green buds will be poking through the ground!

Side story . . . my aunt died of cancer a number of years ago now, and my uncle, to honour her memory, got a tattoo of a yellow daffodil, with the letters “HB” underneath it . .  or above it?  I can’t quite remember. The daffodil is to remember her courageous fight with cancer and the letters stand for Honey Bunny, their term of endearment for each other.  My auntie was an incredible women, brought three amazing kids into this world, and made my uncle a very happy man.  I can’t help but think of her whenever I see a daffodil, or a crocus.  Her ashes are laid at a place called Crocus Hill on her parent’s farm in Alberta.

How to Cover a Square Cake with Fondant – Video

In this video we’ll show you how to cover a square cake with Satin Ice fondant.  I have found that using Satin Ice fondant is the best for covering cakes.  It is soft enough to roll out large amounts but sturdy enough to not have to worry about tears, cracks or bubbles.
