iPhone 4S Cake

One of our most popular cakes has been our iPhone cake.  We have made it four or five times now (I can’t remember, and we haven’t taken pictures of each of them as they all tend to be the same).  

Due to the popularity of the cake, we thought it would be neat to film a video of the cake so the viewer was able to see the entire thing! 

Drum roll please . . . .

To make this cake the way that we have, you will need fondant, an edible image printer, and an airbrush.  There are many other ways you could make an iPhone cake, this is just one of them.

Birthday Cake Surprise

I was honoured to be asked to be a part of a special birthday surprise a couple of weeks back.  A friend of mine’s daughter was about to celebrate her 10th birthday, and D, her mom, wanted to give Paityn an extra special birthday treat this year.  A baking opportunity with me!  Me?  Yes, me!  

The Set Up:

Paityn was under the assumption that I was going to teach her how to bake and decorate with fondant, a cake for a 10 year old’s birthday that was the next day.   What she didn’t know was that the cake she was baking and decorating was actually for her!  

The Filming:

D, brought Paityn over to our house, where we film our videos, and Paityn was an incredible filming partner!  She is super adorable, and knows her stuff in the kitchen!  I had Paityn choose the flavour (chocolate) and choose the fondant designs, colours and style.  She was right at home with the baking, icing and fondant work. 

The Surprise:

After Paityn’s day spent smiling into the camera, we had to surprise her with her special cake.  Paul and I snuck into her house as her and her party guests were celebrating down stairs . . . you’ll have to watch the video to see the shocked, I-don’t-undertsand- what’s-going-on look.  It’s adorable! 

Chocolate Birthday Cake Ingredients:
2 cups all-purpose flower
1/2 cups butter
1 1/2 cups sugar
2 eggs
2 oz. melted unsweetened chocolate
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
1 cup milk

Vanilla Butter Cream Ingredients:
1/2 cup butter
4 cups icing sugar (powdered sugar)
1/4 cup milk
1 teaspoon vanilla extract

Making Homemade Cake Pops – Video

Things on sticks:

Kebobs.

Popsicles.

Fruit.

Lollipops. 

Fondue.

Corn Dogs.

Cake pops.

This video instructs you on how to make your own “thing on a stick” . . . CAKE POPS!  So fun, and so easy 🙂  Cake pops are still going strong on the trend meter (shocking) and they are loved by kids and brides!  The great thing about them is that they can be customized to fit any colour or theme for whatever kind of party you may be having. 

Ingredients:

  • Prepared cake, or cake scraps

  • Prepared Buttercream

  • Cake pop/Lollipop sticks

  • Desired colour of melting chocolate (see note on previous page)

  • Desired colour of sprinkles

Procedure:

  1. Place prepared cake or cake scraps into a large bowl.  Using both hands, crumble cake into tiny cake crumbs.

  2. Remove one cup of cake crumbs and combine with 2 Tablespoons (30 milliliters) of buttercream and blend together, again using your hands, until it has a playdough like consistency.  If the mixture is too wet, add more crumbs.  If it is too dry, add more buttercream.  

  3. Using a small cookie scoop (2-3 Tablespoons/30-45 milliliters), scoop out equal portions of dough and roll each into a small ball.  Place each ball on a parchment lined baking tray and set aside.  

  4. Melt the chocolate in the microwave in a microwave safe bowl, by using 30-60 second intervals at 50% power and stir repeatedly after each interval of time.  

  5. When chocolate is melted and no chocolate chunks remain, dip a lollipop stick 1 inch (2.5 centimeter) deep into the melted chocolate, then insert the dipped portion of the stick into the middle of the cake balls.  Repeat as required.

  6. Take tray with cake pops and place into the freezer for about 10 minutes to harden the chocolate on the sticks.  

  7. When sticks are set, remove pops from freezer, and coat cake pops completely by dipping the balls into the melted chocolate (re-melt chocolate if necessary), allow the excess chocolate to drip off and stand cake pop upright in a cake pop stand and allow them to harden completely.  Repeat for required number of cake pops.

  8. To cover the cake pop in sprinkles, dip cake pop into melted chocolate again, and while the chocolate is still wet, cover in sprinkles.  

  9. To decorate with a swirled finish, place melted chocolate into a piping bag and snip a tiny portion off the end.  Apply chocolate from the piping bag in a swirl pattern around the ball, and apply sprinkles before the chocolate sets.

  10. Allow to harden completely and serve when desired, or store in a sealed container in the refrigerator for up to 2-3 days.

How to Make Cream Cheese Frosting / Icing – Video

Cream cheese icing goes perfectly with many types of cake.  I personally LOVE it with Carrot Cake, Banana Cake and of course Red Velvet Cake!  Mmmmm.

Ingredients you’ll need to make cream cheese frosting:
1/2 Cup Butter
9 Ounces Cream Cheese
2 Teaspoons Vanilla
2 1/2 Cups Icing Sugar / Powered Sugar

How to Make Carrot Cake Cupcakes – Video

This video focuses on one of my favourite flavours of cake . . . carrot!  The vegetables make it healthy, right?  I tell myself that each and every time 🙂  

 

Carrot Cake Recipe

Ingredients:
1 1/2 Cups Butter
3/4 Cups Walnuts
1 Teaspoon Cinnamon
1 1/2 Teaspoons Baking Powder
1/2 Teaspoon Salt
3 Cups grated carrots
2 Cups sugar
3 Cups flour
6 eggs

Follow the video for the steps and procedure!  

Of course you can’t have carrot cake without cream cheese icing!!  Next up is the video for how to make cream cheese icing!

9th Annual Hungry for Life Gala

In May, we went to the 9th Annual Hungry for Life gala dinner, dance, silent and live auction to benefit the people of Haiti.  Heidi’s Restaurant catered dinner and the evening featured entertainer and auctioneer Gery Schubert and dancing to live music by Billy Jive and the Funktastic Five followed to wrap up the evening.

Kinsmen Home & Recreation Show 2012

Catching up again . . . thank goodness for summer “break”!  I am desperately trying to catch up to speed in the next couple of days, so bear with the multiple posts! 

In May, we attended the Kinsman Home and Recreation Show to show off our cupcake and cake selections.   Kristy was along to help up in her usual fabulous way and we manned the booth for 3 days!

Cranbrook Farmer’s Market Special Spring Market

It is so fabulous to be a part of the “togetherness” that comes from being part of the Cranbrook Farmer’s Market again this summer . . . and back tracking a little bit, (life is busy!) we attended an early Spring Market in Cranbrook back in May.  The neat thing about this market, was that it had a group of different vendors from the ones that are regular ones during the summer.  
 
Paul and I hold new positions on the Board of Executives and it has given us a new appreciation for how much works it takes to put on an event such as this!  Erna, the Market Manager, is truly an amazing woman, and she keeps everyone in check and tends to all details, no matter how small.  Thank you, thank you Erna for all of the work that you do! 
 
There were some new vendors trying out Cranbrook (and of course we were trying them out to!)  Brezel Bakery (pictured below) is a new addition, and he brougth his own wood fired oven to bake bread in for eager market goers.
