The positive aspect to this shoot was that I got to work together with Maangchi! She is a legendary Korean chef and has a YouTube channel of the same name- Maangchi. She is the sweetest and spunkiest person you will ever meet! Make sure you check it out, subscribe to her and check out the random costumes/accessories she wears in her videos . . . she’s an inspiration to me to be more relaxed with my videos and to have more FUN. Earlier in the day, before the security guard incident, we shot a video for her channel called Kimchi Stew and she showed me the ins and outs of how to make it, which is a backpacking type meal in Korea. It was so good. Like, so good. I hadn’t ever had Korean food before as I don’t count the one time I have tried kimchi as “Korean food”. The stew was spicy, hearty and crunchy, which is unlike any stew I had ever had in Canada before . . . and it had fish in it.
¾ cup butter (180 g)
½ cup icing sugar (50 g)
1 cup flour (120 g)
¼ teaspoon baking powder (~2 mL)
⅛ teaspoon salt (~1 mL)
Cream butter and sugar together until light and fluffy. Gradually add flour, baking powder and salt and continue to mix until all ingredients are incorporated. You can do this with a stand mixer, hand mixer, or by using a wooden spoon.
Bake in an 8″ round pan at 325F for 40-45mins. You can also use a pizza pan, or on a cookie sheet. Arrange the dough like a pizza crust- flat with rounded edges. When the shortbread crust is golden brown it is ready to be removed from the oven. Allow it to cool completely before frosting.
Toppings:
4 oz cream cheese (113 g)
1/2 cup butter (120 g)
cinnamon sugar
fresh fruit
Spread cream cheese mixture evenly over top of crust using a knife or an offset spatula and sprinkle with cinnamon sugar.
For the fruit toppings you can use any assortment of fruit you like, such as oranges, kiwi, strawberries, raspberries, blueberries. The more colourful, the better! Arrange chopped fruit as desired.
Slice and serve immediately.
Notes:
I practiced the crust with this a couple of different ways, and settled on the shortbread version as the best one. Who doesn’t love a good shortbread? The first way I tried it was with a sugar cookie crust, but I didn’t find that it was soft enough to bite into and it almost made the pizza overly sweet. As I say in the video, when I become Julia Child and talk about butter, is that the richness of the butter almost counteracts the sweetness of the fruit.
If you want, you can add a few drops of vanilla extract to the cream cheese mixture. I didn’t find it necessary because of the cinnamon sugar, but many recipes that are similar call for vanilla and milk. I would only add in the milk if you want a really soft, thin frosting for your pizza.

I’m fifteen and I’ve always wanted to learn how to cook, which, considering neither of my parents have any interest in it, is easier said than done. Anyway, tonight I made a full three-course meal for them, with this recipe being the finale. I thought it would be nice considering it’s so light and summer-y.
