How to Make Carrot Cake Cupcakes with Cream Cheese Icing

Carrot cake cupcakes are the flavour that satisfy taste buds throughout the generations . . . the young, and the old and everyone in between.  It’s traditional, it’s standard yet it can be fresh and unique with the right combination of spices!  

Making carrot cake is a but more time intensive than say, a vanilla cake recipe, but it is well worth the mess of grating fresh carrots!

Carrot Cake Recipe

(adapted from KitchenAid)

Ingredients:

1 1/2 Cups Butter
3/4 Cups Walnuts (optional)
1 Teaspoon Cinnamon
1 1/2 Teaspoons Baking Powder
1/2 Teaspoon Salt
3 Cups Grated carrots
2 Cups Sugar
3 Cups Flour
6 Eggs

Now, to finish off the perfect carrot cake, you MUST top them with cream cheese icing!  There is no better topping for carrot cupcakes  than cream cheese . . . there is just something about the cream cheese flavour that goes together like a perfect match with the carrot cake spices! 

Cream Cheese Icing/Frosting Recipe

1/2 Cup Butter
8 Ounces Cream Cheese
2 Teaspoons Vanilla
2 1/2 Cups Icing Sugar / Powered Sugar

    Does the cream cheese frosting, spread as airy as your butter cream frosting recipe? Is there a big difference between the two for decorating.

      They both work perfectly for decorating. If you are doing something that is intricate, you might want to use less milk for a stiffer buttercream.

    Hi ,

    Thanks for the wonderful recipes. I’ve made a small cake and shaped it like a star (like the “Twinkle twinkle little star”) for my son’s 1st bday.
    I’ve been trialling this for few weeks now to get the perfect shape. But everytime my frosting is not creamy enough . Its grainy and not smooth. Am i doing something wrong ?
    Am using the hand-electric-mixer thing for this.

      Hi there….are you using powdered sugar? If it’s grainy, it sounds to me like you might have a sugar problem.
