Cupcake Rose Swirl with Buttercream Frosting / Icing

I’m happy to have you here, still reading my blog, after my last entry of course!  I’m trying to learn how to take compliments, really, I am . . . but it’s hard!

If you are one of the people who like to tell me my cupcakes are too beautiful to eat, just buy two next time . . . one to eat, and one to look at 🙂  Problem solved!  I know you love me, and my cupcakes, and you can still enjoy a treat and some beauty on your table.

Learning how to pipe a buttercream rose became super popular a couple of years ago . . . it was everywhere!  It was on birthday cakes, anniversary cakes, and wedding cakes!  It is still super popular with orders from my customers, but what I’m going to show you here is how to pipe a buttercream rose onto a cupcake!

All you need for this cupcake decorating is a batch of buttercream, a Wilton 1M tip, and a Leaf tip if you want the extra leaves on the side.

Piping Buttercream Icing Flowers on Cupcakes

Buttercream, oh buttercream . . . how can a cupcake be topped with anything but buttercream?  I top all of my cupcakes with some version of buttercream- cream cheese, salted caramel, chocolate . . .mmmmmm.

When I am at various local markets/fairs and out with my cupcakes (you know, trolling the Cranbrook strip and all), I often get the comment “Oooh, they’re too beautiful to eat!” Wait, don’t stop reading . . . I’m not bragging!  

You’re actually about to think I am an ungrateful beeotch right now, but when someone says that to me, I sigh.  Yes, I understand that these people passing by are trying to compliment me on my decorating, but please, I am obviously trying to sell my cupcakes, not take them home with me to stare at because they are “too pretty to eat”.

Babycakes Cupcake Maker Review & Demo

With my obsessive need to go shopping all the time, I love a good sale!  Unfortunately, where I live the “good” sales tend to be at large *Canadian* box stores, not Nordstrom or Christian Louboutin!  One thursday night I excitedly ran down to the local Canadian Tire (yes we have a store called that in Canada) and found TWO Babycakes products- a cupcake and a cake pop maker- on sale . . . amongst the wrenches, fishing rods and road salt.  One has to love a “one-stop-shop”! 

My first video that I did was a review of the Babycakes Cupcake Maker . . . I don’t think I would have bought one of these for full price, but at a sale of $15 CDN, I figured it was worth it to check it out and give a review. 

The maker is CUTE (and pink!), which makes me love it . . . and of course it is rather small, so it conveniently can fit pretty much anywhere you need it to.  

I was really impressed that the instruction guide came with recipes, because my recipes are quite large, and I was already worrying about scaling them down.  I whipped up a batch of their chocolate cake, then followed the easy instructions on how to work the cupcake maker (preheating etc). . . and I waited for it to fail!  I don’t know why, but I was convinced it wouldn’t work.  

Surprisingly, it worked fabulously!  Honestly, I found making the mini cupcakes in the Babycakes maker so much easier than using a mini cupcake tin that goes in the oven!  The cupcakes domed up perfectly (but you have to put enough batter in the cup to do so) and came out rather easily.  I’m sure you need to keep the metal plates and wells oiled after uses though, as I imagine the batter would stick to everything if not! 

I wanted to make sure I could use the maker with cupcake liners too, so in some of the wells I put mini-cupcake liners, and though they appeared to not fit at first, once they were filled with batter and cooked in the maker, the liners filled the wells perfectly.  

I wouldn’t buy this machine if you’re looking to do production work, but it would be a great tool to use with kids (watch out as the handles get hot) or if you’re just craving a small batch of cupcakes 🙂

Blueberry Bran Muffin Recipe (Healthy & Tasty)

During the Christmas holidays, I was on the look out for a “healthy” muffin that I could make for P and I to snack on.  I had a couple of rules the the muffins had to follow. 

1. The apples freezing in the garage had to be incorporated. 

2. The bananas freezing the in freezer had to be incorporated. 

3. The huge box of bran flakes I purchase because it was on “SALE”, needed to be used. 

My final demand . . .

4. The pints of blueberries need to be used up! 

So I went about searching for recipes that used all of the these things . . . and I couldn’t find one that satisfied all of the rules.  I had to make a number of recipes up!  

63 muffins later, I had done it!  

The best one out of the bunch, which incorporates the blueberries and bran, is the one I have decided to share with you!  It comes from a low fat cookbook, from the Looneyspoons series, and I have made some alterations shown in the recipe.

Green Tea Cupcakes (Matcha Cupcakes)

It is freezing cold here in B.C. and I am trying to dream of hot summer days spent laying at the lake, basking in the heat!  Oh, how I wish it was warmer, so when I willingly go (am drug by my touque) outside I don’t need to put four layers of insulated clothing on!  But, alas, this is not the case.  It is cold.  It is Canada.  It is winter.  Suck it up self!  Or maybe I’ll move to Mexico . . . it has to be warm there all the time!  I’m sure my Mexican YouTube viewers would let me couch surf for a while!  I should stop complaining . . . but I can’t!  It’s in my DNA.  Thanks a lot Dad. 

When the hot summer sun is poking through, one of the most delicious drinks I use to cool myself down with is a Matcha Frappachino from our local coffee shop.  You can get them regular, or flavoured with lemon, peach, or strawberry.  The lemon is my favourite, and that is why I chose to top the Matcha cupcake with the lemon buttercream.  It is a nice, refreshing top!  

You have to be a Green Tea/Matcha lover to like these cupcakes!  The matcha powder has a very unique taste, and I’ve found that you’re either a lover or hater of the flavour.  You can find matcha powder at many health food stores, or do an online search.  Just make sure that you are buying the matcha powder, for use in baking.  There are a couple of different varieties available.
