Unicorn Barf

June 14, 2014 by Jenn

Poor poor Sparkle Toes (my Unicorn) hasn’t been feeling very well lately.  She must have an upset stomach, as she has BARFED all over the place!

What the..?

Unicorn Barf??  Well, it’s got to be better than the Unicorn Poop cookies that have been making their way around the internet!  Isn’t it?  It’s magical, pretty, sparkly, and tastes amazing!!  All of the things I would imagine unicorn barf would taste like.

Unicorns are one of those animals (unless you’re a Lululemon lover and then it’s a sought after product that can’t be found) that dominate childhood fantasies and dreams, and then one day, you wake up and never think about them again.  Lucky for me, I have a (day) job that keeps me in the mindset of 5-6 year olds, and I get to hear unicorn talk all the time.  I love the magical aspect of a unicorn- anything bright, sparkly and rainbow like must be magical.

After having seen 30903 versions of unicorn poop cookies on the internets, I knew I had to jump on the craze, but with a different twist.  What could be as gross and unappealing as poop?  It had to be barf.  Finding the marshmallows was the only time consuming aspect of this recipe, as the recipe itself is very simple.  I thought about buying boxes and boxes of Lucky Charms cereal and sorting out the marshmallows, but I figured someone probably had already done that for me on the internets.  I love the internets.  It has everything!

I was pleased to find “Charms Cereal Marshmallows” from Hoosier Hill Farms on Amazon and ordered myself 2 bags immediately.  One to practice with and make the barf, and one to . . . uh, eat.  Unfortunately for me, only one bag arrived so keep that in mind if you choose to order from Hoosier Hill Farms.  *at the time of me writing this, Amazon has refunded my money for the second bag, and Hoosier Hill Farms has only sent me an email saying they are “sorry I filed a claim against them”.  Thanks to Amazon for rectifying the situation immediately.

Bacon Cookies for Father’s Day

June 6, 2014 by Jenn

Who doesn’t love bacon?  I know the men in my life LOVE it!

Making things for my Mom and Dad is always a worthwhile endevour.  I was fortunate to be raised by two people who love each other, love my brother and I, and went out of their way to support each of us as we grew into “independent” adults.  My Dad has recently had a shift in his life, where he is now the care giver for my 100-in-26-days Grandma.  He has given up his independence, and is her advocate, motivator, and support system while she lives out her days in the hospital.  Seeing his selfless devotion to her is a true act of family.

Trying to figure out what to make for him, who is currently running on empty, was difficult as I finally had to accept the fact that he doesn’t like sweets.  My dad has said that statement so many times- and I ignore it.  Usually.  But this time, I knew I had to make something that was for him (not for me the baker) and that’s where bacon comes in.

I’ve been making this sugar cookie recipe since I was a teenager, and I know that this sugar cookie recipe is the perfect amount of “non-sweet” that he likes.

Thank you Dad for doing everything you do for our family!  Happy Father’s Day.

How to Make Chocolate Tacos

May 17, 2014 by Jenn

I thought that I liked tacos before I worked on this chocolate taco recipe.

I LOVE tacos now!  Especially chocolate tacos . . . with ice cream, and sprinkles, and M&M’s, and chocolate chips, and marshmallows, and chocolate sauce . . . you get it!

When I was doing my research for this recipe, I encountered many recipes for hard tacos shells that were simply dipped into chocolate, and left to harden.  I thought that those would be a great salty/sweet combination, but I wanted a taco with a FULL chocolate shell.  This chocolate taco shell is so chocolatey that you need the ice cream combination to settle it down!!  That is, if something being “super chocolatey” is a problem for you.  I loved it.

Making the chocolate shells is a bit time consuming, but if you have an assembly line of set up prepared, you’ll be flying through the process.  The chocolate shells harden and are relatively delicate, but most of mine stayed together and survived cracking.  I only had one casualty . . . I missed the wooden spoon and it dropped into the bowl.

When dipping the shells into the melted chocolate make sure that you have a large container for dipping.  I went immediately to sprinkles (because they make me HAPPY!), but I think that crushed up Oreo’s or peanuts would be delicious too!  You could add peanut butter cups, or crushed Oreo’s as the toppings as well.

Try using frozen yogurt and fresh fruit if you’re looking for a more healthier dessert.  Strawberries and bananas would go fabulously with the chocolate shells.  There are so many possibilities!!  Let me know in the comments section what flavour combination you would like best.

Milk and Cookie Shots with Rainbow Chocolate Chips

April 19, 2014 by Jenn

Gone are my days of doing shooters at the bar . . . hopefully.  As I get older, and somewhat wiser, I realize that the three day hangover (that started rearing it’s ugly head after 30) is just not worth it for a couple hours of intoxicated fun.  It is now “fun” to stay home on a Friday night and get up early on Saturday morning feeling refreshed.  You might as well pass me the Seniors menu.

So, what’s a boring 30-something girl to do for fun on a Friday night?  Make Milk and Cookie Shots!

This recipe and procedure took me quite a long time to figure out.  I tried making the shots with ice cream cones (fail ..very awkward shape).  I tried pressing the dough around the outside of a shot glass (fail…it just fell off and made a puddle).  And I tried to shape a piece of tin foil to form the shot around, but again, that was a fail.  Basically, there are a lot of ways to be able to make these cookie shots, and you may find a better way for yourself, but this is the only way that I found to be successful each time I made them.  With that said, I hope you find my version successful for you!

So if you’re not up for getting wild and crazy, make these next Friday night.  You know I’ll be partying on my couch with you!

How to Make a Gingerbread House

December 22, 2013 by Jenn

This is the third video in our three part series on baking with Gingerbread.  If you haven’t yet, make sure you check out the recipes for how to make Gingerbread Dough, and Gingerbread Men.  This video is my favourite though as it was so much fun to make.  I vaguely remember trying to make a gingerbread house from scratch as a teen but I think I tried to use cake or something as I remember the edges wouldn’t stand up or go together.

I did a lot of research before starting this project and the best tip I read was to use a soup can to keep the frame of the house up when you’re putting it together.  It totally works and makes building the house so much easier.  Did you think that I was classy when you saw my jar of Jamie Oliver pasta sauce?  HAHA…I wanted to use my No Name soup of vegetarian chili but thought that might make me a little trashy for the viewers.  Gotta keep up appearances!

Anyway, take this project on as you’ll LOVE it.  It’s such a fabulous family task and you can let the kids go crazy decorating it.

Gingerbread Man Recipe

December 21, 2013 by Jenn

“Run, run as fast as you can, you can’t catch me I’m a marbled gingerbread man!”

When I think of Christmas baking, of course gingerbread men come to mind!  Making gingerbread men requires a really good dough recipe, so make sure you check ours out, because rolling out cookies to cut can be a pain in the bum.  You can decorate these gingerbread men however you want, but I wanted to make sure that I showed you a different way to do them, in case you were up for a baking challenge this holiday.

Marbling the royal icing creates a really cool effect . . . almost psychedelic . . . and it’s surprisingly easy when I show you how to do it.  You can use any colour combination that you want- I went with the traditional red and green, but I think pinks and purples would be pretty too.  Pretty much any colour goes for Christmas now.  I was at Target the other day and the Christmas bulb pack they were selling had pink, purple and aqua in it, wrap that up in some white sparkly garland and you totally have a non-traditional, but beautifully decorated house!  I should have bought that stuff . . . what was I thinking?  I’m off to go get it.

Gingerbread Dough Recipe

December 21, 2013 by Jenn
This is the first in a three part series on making Gingerbread!  We start out with how to make gingerbread dough, then gingerbread men, and finish off with a gingerbread house.  The smell and taste of the gingerbread wafting through my house made me so nostaligic for the holidays passed.  The taste is like no other, and is so festive.

The video has been up for a couple of hours now, and I have already received a number of questions about substitutes for molasses.  Firstly, I would never ask a baker for a substitute.  Obviously if it’s in the recipe, it is necessary.  I can’t tell you how many times I’ve received the question “Do I need to use ___?”  Well, duh.  Of course you do.  It’s part of the recipe.

Back to molasses, yes there are substitutes like honey, corn syrup, maple syrup etc, but you will 1. sacrifice the flavour, and 2. the cookies will not be roll-able.  If you’re happy with that, then by all means, substitute out molasses, but don’t say I didn’t warn you!

Melted Snowman Smores Cookies

December 13, 2013 by Jenn

The melted snowman cookie and cupcake has been making it’s rounds around the internet for quite awhile now.  Being that it is such a cute idea, I knew I had to do it, but I wanted to make sure that I had my own spin on it.  So instead of simply making a melted snowman, I thought that a SMORES version of it would be fabulous!  It may not be summer, but nothing goes better with warm gooey marshmallows than chocolate!
