Lemon Raspberry and How to Core a Cupcake!

What’s better in the middle of the cold, dreary, dark, wet, ugly, yucky, winter months than a cupcake that screams SUMMER!?

I could have kept going with nasty winter adjectives, but I’m too busy trying to practice positive thoughts.  I’ll let you know how that works out. Hah.

We Canadians up here in good old Canada, have been having quite the snow situation in the last couple of weeks.  For a while there, winter was over and spring was on it’s way.  I even heard a Robin one morning.  I was happy when I heard that Robin, and I hate birds!  Now, where is that poor Robin?  Probably buried in some snow somewhere, frozen to death. 🙁

To help get out of the Winter Blues I have been experiencing, Lemon Raspberry Cupcakes were on the agenda!  With thoughts of summer in my head, I started to bake.

Oh summer, please come soon.  I’ve had it with shovelling and wearing boots. Please Mother Nature?

Warm up that zester for this recipe.   One of the greatest purchases I have made (in regards to cooking utensils . . . because we’re not here talking about my $500 Coach bag that I got for $120 at the Vegas Outlets) is one of the small, narrow zester’s you can see in the picture.   So handy for recipes that require a lot of lemon, lime or orange zest.

Mix flour, butter, sugar, lemon, vanilla and lemon juice and you get lemony goodness!

Another great kitchen tool that I have is one that I got as a gift!  It’s a very handy cupcake corer!  All you have to do is insert it into cooled cupcakes, twist and pull it out.

To remove the cake from the corer, all you have to do is push the little handle down on the top, and out pops the cored out piece of cupcake!  Don’t forget to keep those cores.  You can use them again when you have filled the cupcakes to cover up the filling.

Drop in a raspberry into the core and then add the lemon curd on top.  Cut the piece of cupcake that came out of the corer into a lid, and place it back on top of the filling.  This seals the filling in.

Whip up your favourite Raspberry Icing, or here to see mine, add lemon zest to top and dig in.

I’m starting to feel better already!  Six more weeks of winter?  I hope not.  But, with each snow fall and shovelling that I endure, maybe a cupcake is in order?!

Cookies and Cream Cupcakes

Should I be sharing my recipes now that I’m making them for money?  Hmmm, that is the question . . . oh well, I’ll worry about that another day and give you this pictorial!

First, I have to start off telling you that there is an Oreo in the bottom of this cupcake!  How great is that?!   As soon as I saw the bottom of the cupcake tin with the Oreo in it, I HAD to make this cupcake and add it to my repertoire.

Is it love for you too?

I try to stay away from Oreo’s . . . and the entire cookie aisle when shopping because cookies and I don’t get along well.  In fact, they make me so mad, that I have to eat all of them!  Imagine my fright when I had to buy the SUPERSIZED box of Oreo’s for this recipe.  I was worried none of them would make it to the bowl.

First off start whipping up the batter . . . eggs, sugar, butter.

Add in the flour . . .

Now for the best part, mix in quartered Oreo’s!  HUGE chunks on top of the half Oreo!  Good Lord.

Spoon into cupcake tins, and you’re ready to bake these bites of gooey Oreo goodness!  It took every ounce of self control to resist spooning this batter out of the cups and into my mouth!

The ABC’s of CCC

Are you one of those people who is seriously annoyed when someone sends you an email that asks your favourite colour, favourite number, pepsi or coke, favourite position?

Well, if you are, this post is NOT for you!  But, if you are excited when you get one of those emails, and rather than thinking “What loser has time to fill in one of these things?“, you stop working immediately, and fill it in, and spam it out to ALL your friends, then this post is for you!

Feel free to cut and paste, and email (spam) it out . . . only to those who will appreciate the fun though!

The ABC’s of CCC

A. Age: uhhhh . . . 32 . . . is it a bad sign that I forgot for a moment?

B. Bed size: Queen . . . but it’s not big enough for me . . . I want a King!  Mostly so I can sleep sideways, partly because cupcakes make you gain weight.

C. Chore you hate:  All.  I hate cleaning.  And tidying.  And organizing.  And filing.  And scrubbing.  And dusting.  And dishes.

D. Dogs: PUGS!  with a Brussel Griffon Cross thrown in.

E. Essential start to your day: C.O.F.F.E.E. and a shower.  I don’t wake up until I’ve had both.

F. Favorite color: Aubergine.  And the red from the bottom of Christian Louboutin shoes.

G. Gold or silver: Silver . . . I used to despise gold, but I have to admit, gold has been growing on my lately.

H. Height: 5’6″ without stilettos, or running shoes, or flats.

I. Instruments you play: I once was second clarinet in my high school band!  And the piano . . . I can almost play unrecognizable songs.

J. Job title: Kindergarten Teacher by day, JJ’s Custom Cakery C0-Owner and Chief Baker by night.

K. Kids: May I quote myself and say “Mechanical Baby= Blog.  Fur baby= Ruby.  Real baby= Disaster.”

L. Live: Cranbrook, British Columbia, Canada

M. Mom’s name: Carol xo  Her sisters named her . . basically because they liked singing Christmas carols . . . but she was born in November . . . not December . . . when Christmas carols are sung.

N. Nicknames: Jenny J, Jenna Wenna, JJ

O. Overnight hospital stays: None as of yet, but I’ve got a surgery booked for April and boy am I excited!  Ummmm, NOT. Is it still socially acceptable to say “not” in extreme sarcasm situations?

P. Pet peeve: White socks, black shoes.  Long hair, like at your bum long hair.  People who chew with their mouths open.

Q. Quote from a movie: “I’m not going to sit here and blow sunshine up your ass.”

R. Righty or Lefty: Right.

S. Siblings: Bro- Steve and my Sister from another Mister (greatest-SIL ever) is Leslee.

T. Time you wake up: 6:00am on weekdays, 5:00 on spin mornings (ugh), 8:00am on weekends.

U. Underwear: Grannies. So much more comfortable!  Especially when you have a few (20) pounds to lose.

V. Vegetables you dislike: Raw cauliflower, but I like it when it’s cooked!

W. What makes you run late: Nothing.  I’m always anally on time.  Always.  It’s even become annoying to me.  I’m tired of waiting for other people to show up . . . on time.

X. X-rays you’ve had:  Ankle, knee, head.  Wow.  I have never counted those before.

Y. Yummy food you make:  CUPCAKES!  My favourite . . . The JJ– Vanilla cake with peanut butter icing.

Fortunate Friday

The end of another week has come!  I am starting to LOVE “having” to end my week with a Fortunate Friday post.  I say “having” to end my week because, hey, it’s MY blog, I’m in charge of this Mechanical baby!

Mechanical baby= blog.  Fur baby= Ruby dog.  Real baby= disaster.

I’m fortunate for my recent financial successes from the Cakery business, as my car bill this week was $600!  WTF!  For a tune up!  I need to switch brands.

I’m fortunate for Paul and my partnership with Jenn’s Custom Cakery, as he’s working on a new site as we speak.  Or at least he better be!  🙂

I’m fortunate to be in Vancouver again this weekend, representing the BC Primary Teachers’ at the BCTF’s New Teacher’s Conference.  Gretchen and I are presenting on Saturday afternoon, and we will soon be taking over the world after that.

I’m fortunate to be in Vancouver because it’s -32 in Cranbrook.  Enough said.

First Farmer’s Market

This past weekend, Jenn’s Custom Cakery made it’s debut out in public!  It was so scary, a learning experience, but an alround fabulous time!  I had my bestest friend in the world Kristy, helping me out, and for that I am so greatful, as I couldn’t have done it without her.  Her husband Jeff stopped by on his way out for a snowshoe/hike (jealous! . . . where’s the cardio gone lately? . . . me not Jeff . . . he’s fit as a fiddle).  I’ll post some new spin routines soon.  If I don’t get so fat from cupcakes that I can no longer operate a keyboard that is.   ANYWAY . . . Paul, my partner in business and LOVE (lol, it was so corny I had to put it in), made it up to be the official photographer of the Cakery as well!

There was a lot of self imposed pressure coming from this event.  It was my first public showing (and we all know how brutal some people can be), and I wasn’t sure how it would go over.   When we first got there, and were setting up (aka 18 trips to the car and back), everything was great!

That was until the SECOND cupcake lady walked in . . . with her cupcakes!  Can you believe it?  Two cupcake stands in a room half the size of an elementary school gym?  I went from feeling great, to feeling sick to my stomach.  I don’t think I talked to Kristy for the next 45 minutes.  Her stuff was quite different from mine, so it could have gone really bad, for both of us!  The Windermere Hall would have been a chilly place to be if everyone had been buying from only one of us!

No ice picks were needed and we both managed to be successful!  I took up 11 dozen cupcakes and only came back with three lonely ones.  Absolutely amazing!  I was so happy!  A special thanks goes out to my “helpers” and the ones who made the drive!  Thanks Viv and Janine for making the drive and supporting me.

Valentine’s Day Cake

Yes, Valentine’s day was last week, but I have been so busy with the early success of Jenn’s Custom Cakery.  A new website, with a photo gallery, order form, product listing, and of course a link back here to my blog is in the works.  I can’t wait!

On to the post . . . and away from the excuses!

My parent’s have been married for 33 years!  Their anniversary falls on February 1st . . . every year . . . duh.  The funny thing about this is that the only person who remembered was my younger brother!  Normally, he forgets everything and it’s me reminding him to call home.  Kudos Steve 🙂

To make it up to them, (even though they both forgot too, I felt guilty) I made them a Valentine’s Day Cake.  I’ve been dying to make a Tuxedo Cake, from a blog I follow (Annie Eat’s).

To give you a good idea of what goes into this chocolate, whipping cream and more chocolate creation, I have a step by step tutorial for you!   I used 3 heart shaped cakes, which proved to be WAY too small for the amount of batter the original recipe calls for (3- 9″ layer cake pans).  The math conversion proved to be too much work as well.

Tuxedo Cake

(from Annie’s Eats)

Ingredients:
For the cake:
1 cup unsalted butter
2 cups water
1 cup canola oil
4 cups sugar
1 cup unsweetened cocoa powder
4 cups all-purpose flour
4 large eggs
1 cup buttermilk
1 tbsp. baking soda
½ tsp. salt
1 tbsp. vanilla extract

See the big crater? That's why you use flour on your pans! I managed to make up for the mistake, and fill it in with frosting.

Directions:
To make the cake layers, preheat the oven to 350˚ F.  Line three 9-inch round cake pans (or two 10-inch round cake pans) with parchment paper.  Butter and flour the inside edges of the pan, shaking out the excess flour.  (I did not do the flour step

In a saucepan over medium heat, combine the butter, water and canola oil; heat until the butter is melted.  In a large mixing bowl, combine the sugar, cocoa powder, and flour; whisk to blend.  Pour the melted butter mixture into the dry ingredients and whisk until smooth.  Whisk in the eggs one at a time, then whisk in the buttermilk.  Add the baking soda, salt and vanilla to the bowl and whisk just until incorporated.  Divide the batter evenly between the prepared pans.  Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

Let cool in the pans for 15 minutes.  Run a knife around the edge of each cake layer and invert onto a wire cooling rack.  Allow the cake layers to cool completely before frosting, at least 2 hours.

For the frosting:
4 cups chilled heavy whipping cream
1¼ cups confectioners’ sugar, sifted

To make the frosting, add the heavy cream to the bowl of an electric mixer fitted with a whisk attachment.  Whip on medium-high speed until soft peaks form.  Add the powdered sugar and continue to whip until thoroughly combined and stiff peaks form.

Here is where you cover up the “oops”.

To assemble the cake, place one cake layer on a cake platter and spread a layer of the whipped cream frosting over the top.  Top with a second cake layer, more frosting (and the third cake layer, if using).  Frost the top and sides of the assembled cake.  Refrigerate until the frosting has stabilized, at least 1 hour.

Slap that cream on, spread it out!

And again!

Until you get this!  YUM!  You could stop there, but don’t!  The best is yet to come.

For the chocolate topping:

4 oz. bittersweet chocolate, finely chopped
½ cup heavy whipping cream
¼ cup light corn syrup
2 tsp. vanilla extract

To make the chocolate glaze, place the chocolate in a medium bowl.  Heat the cream in a small saucepan over medium heat until simmering.  Pour the hot cream over the chocolate and let sit 1-2 minutes.  Whisk until the mixture is smooth and homogenous.  Blend in the corn syrup and vanilla.  Pour the glaze into a pitcher or measuring cup and let cool for 10 minutes.  (Do not let the glaze cool longer or it may become difficult to pour over the cake.)  Slowly pour the glaze over the cake, ensuring that the top is covered and the glaze drips over the sides.

There is an important lesson to be learned at this stage!  Just because chocolate is a food group reserved for greatness, does not mean that you should go overboard pouring it on this cake.  Don’t make the same mistake that this chocoholic did!  I used ALL of the ganache that the much bigger than needed recipe called for.  I left it ended up without the beauty that you can see in the original post  . . . dark on white . . . hence the tuxedo effect!

Refrigerate the cake until the glaze is set and the whipped cream frosting is firm, at least 1 hour.  Slice with a long, sharp knife, wiping the blade clean between slices.

Thank you Annie for making such a delicious cake and providing me with the inspiration to treat my parents!  My dad who “doesn’t like sweets” (H. E. L. L. O! how am I his child?) phoned me the next day to say it was “to die for”.  If you know my dad and his issues with “sweets” you know what high praise that is!

Fortunate Friday

It’s Friday!  T. G. I. F.  Whoop.  I had a great week this week . . . worked two days, had a day off, worked one day, then worked a second with no students!  Who could ask for a better job?  Fabulous.

This week’s update:

I am fortunate for all of the friends that ordered Valentine’s themed cupcakes from Jenn’s Custom Cakery!  It was a huge success, I received great positive feedback . . . on all 16 dozen!  Well, that’s not true . . . I did not personally receive a thumbs up on 16 dozen.  You know what I mean 🙂

I’m fortunate for my first wedding cake order!  Thank you Nicole and David for having the confidence in me to put your faith in my baking skills.  I will not disappoint!  It’s going to be a three-tiered, three flavoured buttercream coated square cake with hydrangea flowers cascading down the side.  Yummy and beautiful!

I am fortunate that in this “One Horse Town” of Cranbrook, I managed to find candy sticks for cake pops, and a new decorating tip!  Yes, I am simply happy these days.

I am fortunate to have the opportunity this weekend to attend my first farmers market . . . as a vendor!  I’m taking 10 dozen cupcakes, cake balls, and icing shots with me.  Hopefully it all goes well!
