Kermit the Frog Cake / Muppets Cake using Green Velvet Cake

I don’t often get sick, but when I do, I get SICK.  Being a Kindergarten teacher, I have had my fair share of minor colds and coughs, but this year, a doozy of one hit my class, and inevitably, me.  I ended up on pneumonia antibiotics and was given an inhaler to feel better, both of which worked and I am so happy to be back in the land of the vertical!  While I was in bed, I had lots of time to plan ideas for future videos, so I have tons of ideas to turn into fabulous cakes and desserts!  Just as soon as I stop coughing.    

The idea for this Kermit the Frog cake came from my desire to use my giant cupcake mold, and the fact that the new Muppets movie is coming out at the end of the month!  I’ve had a metal giant cupcake mold for years, but I recently got this new silicone one, and highly recommend it.  When using the metal one, I would generously coat it with non-stick spray, and the top portion would always stick and never come out in one piece.  I haven’t had this problem with the silicone mold once.  Each time both pieces of the cupcake pop out easily.  If you’ve ever had a cake stick to the pans and break when coming out, you know how annoying it can be. 

 Kermit takes a leading role for the new movie, Muppets Most Wanted, and according to the movie synapse, there is a Kermit the Frog look-alike and a jewel heist involved.  It sounds like a great one to take the kids to and obviously if there are two Kermit’s, you must make a Kermit cake!

How to Make a Pink Zebra Cake

 It is sunny and warm in LA!!   We are in LA again for a week of filming and workshops at YouTube Space LA, and it has been so nice to escape the dreary winter weather we’d been having up in Canada.  It feels like paradise right now . . . short sleeves, bare legs . . . American Target.  Life is good!  All I need now is a sprinkle covered cupcake and it would be complete.  As I alluded to last post, it’s not all happiness right now, my friend on-screen and off, Beth from the YouTube channel CookingandCrafting, is going through some very challenging times with a sick family member. If you know Beth you will know how close she is with her family. They need your help. How to Make a Heart Shaped Cake / Valentine’s Day Cake

For this cake you don’t need to have a special pan.  Though that would have been funny . . . “Here’s how you make a heart shaped cake.  Take you heart shaped cake pan….”  Annnnnnnnnd….CUT!  Video done.  

I have a sad sense of humour.  

But seriously, this is a really easy way to make a heart shaped cake without the special pan.  Collecting all of the awesome shaped pans is a storage nightmare.  I recently just sold over 20 shaped character pans because seriously, when am I going to use those and they take up SO much room!  I saved a couple of my favourites though to make a couple videos with. 

The strawberries on top of this cake add a beautiful pop of red to the cake, and I love the white/red contrasting colours.  You could use any fruit though and I think it would still look beautiful.  It would also make for a great wedding cake and you could theme the fruit with the colours of the wedding party!  The possibilities are endless.

Rainbow Ice Cream Cake Recipe: How to Make a Rainbow Ice Cream Cake

I’ve wanted to make an ice cream cake for a while now, as I dream about the cookie crumb filling that Dairy Queen layers in their ice cream cakes!  I’m drooling, just thinking about it.  I found the perfect imitation of it, and it is so simple- just Oreos and fudge/ganache.  It provides a crunchy base for this bright vanilla ice cream cake.

I’m not a huge fan of vanilla ice cream, but I swear I can taste rainbows when I bite into this one.  It’s like a magical explosion in your mouth.  With that explosion from the colour, and they the overwhelming delight with the cookie crust, this cake not only looks amazing, it tastes fabulous!  If you’re not a fan of vanilla like me, you could replace the vanilla ice cream with pretty much any light flavoured ice cream that would work to dye.

The only difficulty when assembling this cake is getting your ice cream to be the perfect consistency in order for it not to be a melted mess, but soft enough to be able to mix the colouring into it.  I brought the ice cream out about half an hour before I wanted to make the first layer, and just left it out while I did each layer. It was kind of a sloppy mess at the end, but it worked!

Funfetti Cake Recipe (Birthday Cake with Rainbow Sprinkles)

This is one of my favourite cake recipes that I have made.  I’m a huge sucker for almond extract!  I don’t know what it is about that flavouring, but no matter what it’s in, I LOVE it!  My Angel Food Cake has it, my Sugar Cookies have it and they are delicious!  Whenever it is included in a recipe, I inevitably get asked as to whether it has to be included . . . trust me, it’s worth buying and trying out.

Hot Chocolate Push Pops

Continuing on here with our Hot Chocolate theme of late, I’ve made a tutorial on hot chocolate push pops!  I adore push pops.  If I had kids, this would be the only way to serve desserts.  It would totally save the mess of cupcakes smeared all over faces, and tables, and clothing.  Or maybe I’m just imaging I would have prim and proper children who would daintily nibble at the push pop.   Hmmm, kids are sounding better and better!  They’d be like the Downton Abbey babies…but without the nannies, or servants, or castle.

To make these Hot Chocolate Push Pops you will need a batch (or two depending on how many pops you want to make).  If you haven’t tried my homemade brownie recipe, make sure you do!  It’s so good . . . but a box mix will work just fine too if you don’t have time for scratch.

These push pops are very simple to assemble.  The only challenging part is cutting the brownie with the cookie cutter!  I had indents on my palm, but after a couple pushes, I smartened up and used a knife (I was smart enough to show that in the video).

Triple Chocolate Mousse Cake Recipe

If you are a chocolate lover (like me) you are going to DIE for this recipe.  When I took this cake to the staff room at school, one of my coworkers said it was the best cake she had ever had.  I brought three of these cakes in, and they were gone in a day.  That’s gotta be a record somehow!  Each layer of the mousse has a unique flavour.  The bottom is a light, flourless chocolate cake with a hint of espresso.  The espresso brings out the richness of the chocolate, so make sure that you don’t leave it out.  The middle is melt in your mouth delicious.

This cake is time consuming, so make sure you have lots of time for each layer to set and/or cool as needed.  You want it to be completely set before you cut it, or you won’t have the layers set enough for them to stay standing up.  It’s definitely worth the effort, so don’t let the time turn you off.

Pumpkin Coffee Cake

Making this pumpkin coffee cake at the end of our walk in the Cranbrook Community Forest was an awesome treat!  My favourite thing about our Backpack Baking videos are the warm treats at the end of a usually hard activity.  I know I’m supposed to say that my favourite part is “connecting with nature“, or “getting exercise”, but let’s be real, it’s the reward at the end.  

This walk in our local recreation site is not very difficult and it’s one that we do every couple of weeks.  It’s perfect for those days where you want to get out and get some fresh air, but don’t have a lot of time to devote to hiking.  The view of the valley at the end is beautiful, as you can see in the video.  Even though it’s not a hard hike, it was definitely a nice change to have a treat at the end and take some time to enjoy the view, as usually we’re rushing up, and then back down! 

Even Ruby liked it..the walk/hike and the cake.
