How to Make Perfect White Icing / White Buttercream Recipe for Cake Decorating

If you have ever wanted to know how to get pure white icing (also called frosting or buttercream), this video is for you! In this 3rd episode of Buttercream Basics, Jenn Johns will show you how to make white icing with an easy tutorial recipe.

Who would have thought that purple gel added into yellow buttercream would result in WHITE icing!? I was super amazed at this and was determine to have it fail once I tried it. But as you see in the video, it isn’t a lie, it totally works! You have to be careful about the amount of purple you add in or you will just end up with lilac. I used a tiny bit on the end of a toothpick with mine. The white doesn’t get as bright white as the the white coloring does, and there is a very tiny slight greyish tinge to it, but it still pretty amazing that it actually works (and that it removes the yellow!).

To make white icing with white coloring, add in a couple of teaspoons into vanilla buttercream, and stir to combine. As explained in the video, the liquid coloring will change the consistency of the icing, so have a few spare tablespoons of icing sugar around. To make your life easier when doing this version, use a light colored butter (which in my experience is cheaper butter) and use clear extracts for flavouring. That way, you don;t have to add so much white coloring to interact things already there and there is less of a chance of messing with your icing consistency.

    I use only pure white Crisco shortening with Wiltons clear butter flavoring…I get white icing that simple.
