Making a galaxy cake has been on my list for a while now, come to think of it, my list is so long, everything is on it for a really long time. So anyway, I wanted to make a galaxy cake, but since there are so many already out there, I knew I had to do it in my own way. Summer is still in full swing in my area of Canada, and it’s hot, hot, hot, so naturally ice cream came to mind. The problem with working with ice cream while filming and doing photographs is that the kitchen is smoking hot under all the lights and the cake starts to melt super fast (despite our air conditioning being full blast!)
No machine ice cream is a wonderful easy treat to be able to whip up fairly quickly. All you need for it is whipped cream and sweetened condensed milk. Super easy! My friend Miki from Sugarcoder showed me the recipe a few months ago when we did a video collaboration for Cookie Ice Cream Bowls. You can pretty much add whatever you want to the ice cream base and make it your own, but for this cake, I kept the flavour vanilla and used gel paste to color the cream.
Galaxy Ice Cream Cake
Ingredients:
- 2 cups crushed Oreo cookies
- 1/2 cup melted butter
- 2 jars sweetened condensed milk
- 4 cups whipping cream
- 2 teaspoons vanilla extract
- Edible glitter (disco dust, flakes, stars)
Procedure:
- Mix cookie crumbs and butter in a medium sized bowl, stirring until combined. Press crumbs into a 9″ round springform pan and press flat. Place into the fridge to harden.
- In a large bowl, whisk whipping cream until stiff peaks are formed. Add milk and vanilla and whisk again until combined.
- Divide ice cream base into 5 bowls and color black, royal blue, sky blue, purple, and pink.
- Drop spoonfuls of ice cream colors into the springform and swirl together with a knife or spatula. Place cake into the freezer to solidify 6-8 hours.
- Remove springform mold and decorate sides with galaxy buttercream. Use buttercream to attach chocolate bark to the top of the cake.
- Remove cake from the freezer 10 minutes before serving so it can soften slightly for slicing. Use a hot knife to slice and serve.
Galaxy Chocolate Bark
Ingredients:
- Chocolate melting wafers (Royal blue, sky blue, pink, black, purple)
- Edible glitter (disco dust, flakes, stars)
- Silver dragees
Procedure:
- Line a baking tray with a large piece of parchment paper.
- Place chocolates in a microwave safe bowls and melt in 60 second intervals until the chocolate is smooth.
- Pour melted black chocolate onto the parchment paper and spread into a rectangle with an offset spatula.
- Splatter pink, purple, and blues on top of the black chocolate. Swirl with a knife or spatula.
- Sprinkle on glitter and dragees while chocolate is still melted.
- Place tray into the fridge for the chocolate to solidify which will take about 10 minutes.
- Remove and slice as desired.
Galaxy Buttercream Icing
Ingredients:
- Vanilla Buttercream (pink, black, blue and purple)
- 1M tip
- piping bag
Procedure:
- Spoon alternating colors of buttercream into the piping bag.
- Squeeze buttercream out of the bag until multiple colors appear.
I plan on making this. How many people do you think it will serve?
