How to Make Rainbow Unicorn Bagels

Today I am showing you how to make Rainbow Unicorn Bagels with funfetti cream cheese. Rainbow bagels are an internet hit, but they were missing one important thing- the unicorn horn!

As a kid, I was fortunate enough to have a pony. Her name was Buttercup, and she was a chestnut colored little thing. She was a hit at my brother and my birthday parties, as we always took the party goers on pony rides.  Buttercup was great, but she wasn’t a unicorn- which is what I really wanted! A white, sparkly unicorn with a rainbow tail and mane.  Looking back, I’m wondering why my parents didn’t just buy a horn and strap it on to shut me up!

Unicorn Bagels

Rainbow bagels have taken the internet by storm, and since so many viewers requested that I do a version of them, I had to put a unique spin on them. They needed what Buttercup never had. A horn! I found the mini ice cream cones at Save On Foods, a local grocery store but I searched Amazon and they’re available there too. At first I liked that mine were colored and though that would look good, but it didn’t end up looking as good as a cone dipped in white chocolate ended up looking. Adding edible glitter, sprinkles and confetti to the horn completes the look I was going for.

To make the dough, I continued to avoid learning how to use yeast in my baking, and went with the cheater pre-made dough. When mixing in the colors, the dough gets really sticky and warm, so make sure you have lots of gloves available. I found that rubbing Crisco on my hands worked well once the majority of the dye had been mixed in. Lay the colored dough out on pieces of parchment paper before setting in the fridge. They will stick to the paper, but once chilled, they will peel off easily.

Rainbow unicorn bagels

Decorating a unicorn treat has got to be one of my favorite things to do. It’s glitter and rainbow and sprinkles! If you’ve been following my channel for a while, you’ll know that I recently got some edible glitter (disco dust) and I have been finding ways to use it for projects like this. I tried coating the tip with glitter, the chocolate spiral with glitter, but neither of those looked quite right. So instead of a heavy coat of glitter, I went for a light brushing and the glitter spread, and stuck to the horn without any adhesive needed.

On a unicorn side note, did you know they recently discovered that Siberian Unicorns were real? They’re not exactly white, or sparkly, or rainbow. They’re rather dark and frightening looking. Definitely not something I could go riding off into the sunset together with Prince Charming.

How to Make Unicorn Rainbow Bagels
Ingredients:

  • 2 tubes Pillsbury Crescent Dough
  • Gel paste- white, pink, blue, green, yellow
  • Piping gel
  • Mini ice cream cones
  • Sprinkles- jimmies, dragees, stars
  • Edible glitter (confetti stars and disco dust)
  • White chocolate melting wafers
  • Cream cheese buttercream

Procedure:

  1. Preheat oven to 375F. Line baking tray with parchment paper.                                                    
  2. Divide biscuit dough up into four equal amounts. Mix in pink and white coloring to one section of dough, while wearing gloves. Mix yellow and white into a second section. Blue and white into a third section, and yellow, green and white into the last section of dough.
  3. Flatten each piece of dough onto a piece of rectangle parchment paper, and place in the fridge to chill for 10 minutes.
  4. Stack rectangles of dough on top of each other, and slice into 6 strips.
  5. Twist each strip and join ends together to form a circle.
  6. Place onto a parchment lined baking tray and bake for 15 minutes. Place on a cooling rack to cool.
  7. To prepare unicorn horns, dip mini cones into white chocolate and allow to harden.
  8. Using additional white chocolate in a piping bag, pipe a swirl of chocolate from the bottom and around to the top of the cone. Allow to harden.
  9. Brush horn with glitter (disco dust)using a dry paint brush. Using piping gel and additional chocolate, place star sprinkles and confetti stars on the cone.
  10. Brush bagel with piping gel and add sprinkles, confetti and dragees.
  11. Mix jimmies into cream cheese icing and pipe or spread onto the bagel, filling the hole in the center. Place the horn in the center, using the icing to glue it into place.
  12. Store in a sealed container or bag, undecorated. Decorate and fill with cream cheese right before serving.

    Regarding the rainbow bagels: When spreading the colored dough on the parchment sheets (before stacking), what size should the parchment paper be cut? Thank you.

      Hi there..it doesn’t have to be a precise size…I ripped off a chunk, and then divided it into 4 to get rectangles.
