Today I am showing you how to make Rainbow Pudding Pops! They are perfect to enjoy with the warmer weather upon us and super easy to make- all you need is pudding and milk!
This recipe is a version of a treat my mom used to make for us when my brother and I were kids. She used to put Jello mix in fruit juice that she would make into popsicles. Turns out the Jello prevents drips- who knew! Clearly she did. Anyway, I have no idea why I was thinking about that, or how I even knew she put Jello in the popsicles, but for whatever reason, I thought- hey, what about PUDDING in the popsicles?!? And this idea was born.
Unlike gelatin, I didn’t think I could just mix the pudding mixture into some juice and have a positive result, so instead, I mixed up the powder with some milk, and then popped them into their molds. After a couple of hours spent freezing, pudding pops were born. At that point, I was relatively happy with what I had created but I knew they were missing something. They needed to be rainbow-ified!
If you are a purist, you can definitely make the pudding mixture from scratch. That is something that I have never done, and must add it to my list of things to learn to make. If you’re short on time, using the premade mixture is definitely the way to go!
You can layer the colors in any way that you choose to with a project like this…that’s kind of the fun in these. You could also coordinate the colors with a specific themed event if you wanted to!
Rainbow Pudding Pops
Makes 10-12 popsicles (depending on container size)
Ingredients:
- 2 cups milk
- 1 package vanilla pudding (4 serving size)
- Gel paste- red, orange, yellow, green, blue, purple
- Popsicle molds
Procedure:
- Prepare pudding by combining package components and milk. Whisk until combined and smooth. Set in the fridge for five minutes to set.
- Divide chilled pudding into seven separate bowls (six bowls, if you do not want plain layers). In one bowl, add red colouring and stir to combine. In second bowl, add orange colouring and stir to combine. In third bowl, add yellow colouring and stir to combine. In fourth bowl, add green colouring and stir to combine, In fifth bowl, add blue colouring and stir to combine. In sixth bowl, add purple colouring and stir to combine. Leave seventh bowl without colouring (if using).
- Put all pudding colours into seven separate piping bags.
- Starting with red, pipe a thin layer into the bottom of a popsicle mold. Tap to level the pudding out. Pipe a layer of regular pudding (if using) , and tap again. Repeat with orange pudding, followed by regular and repeating the pattern: yellow, regular, green, regular, blue, regular, and finish with purple.
- Place popsicle sticks/holders into the pudding, and place into the freezer for 4-6 hours or overnight.
- To remove from holder, run under hot tap water and gently pull up on stick.
- Keep frozen until ready to consume.
- Popsicle’s can be kept frozen for 1-2 months.
