Today I’m showing you how to make Rainbow Waffles! This is a great breakfast idea for birthdays or for a St Patrick’s day celebration! My homemade waffle recipe is delicious- light and fluffy- and works fabulously stacked in a rainbow like this waffle cake. I purchased my first ever waffle maker to make these, and I’m so glad I did, as they turned out so well.

Everything is better in rainbow form, so rather than stacking up six waffles in a standard bland stack, I rainbowed them! Yes, “rainbowed” is now an official word here. Feel free to spread it around. I’ve never made homemade waffles before, but I’ve had my fair share at restaurants and hotels- yes, hotels. You know the ones where you get the breakfast included and you get to flip your waffle when it beeps? Ya, that! I love that so much that when I started looking for waffle makers, I knew I had to have the flip one! I ended up buying the Hamilton Beach Belgian Style Flip Waffle Maker because it had good reviews and FLIPPED. If you are someone who already owns your own waffle maker (lucky you!) you can use the one you already have, and you can use a different shaped one too. Waffles don’t have to be round- mind blown.
My homemade waffle recipe that I perfected is light and fluffy and when cooked between the two waffle plates, it stays nice and soft. To get these waffles to be bright and colourful, I used Americolor gel paste, and I tried to bake them for the minimum amount of time to minimize the browning. If you have any excess waffle spill over, just trim the edges before you stack them and the stack will look perfectly uniform.
Whipping cream goes so perfectly with waffles that I had to include it in this rainbow waffle recipe . . . but, you could go with plain ole maple syrup if you prefer, and of course strawberries! I was looking to go overboard on rainbow (of course I was) so I went with the rainbow piping gel and rainbow candies. This recipe is so easy and fun, you’ll have a blast customizing it for yourself or your family.
How to Make Rainbow Waffles
- 1 1/2 cups all purpose flour
- 2 tablespoons granulated sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1/4 cup melted butter
- 1/2 cups milk
- Gel pastes (red, orange, yellow, green, blue, purple)
- Whipping Cream
- Marshmallows- mini and regular
- Airheads Extreme Bits
- Mini rainbow chocolate chips
- Colored piping gel (red, orange, yellow, green, blue, purple)
Procedure:
- Combine dry ingredients (flour, sugar, baking powder) in a medium sized bowl and whisk to combine. Set aside.
- In a small sized bowl, combine milk, eggs, and butter. Whisk to combine.
- Add wet ingredients to dry ingredients and mix until no clumps remain.
- Divide batter equally into 6 bowls, each bowl will have approximately 1/2 cup of batter. Add gel paste into each bowl and stir until no light streaks remain.
- Preheat waffle maker according to the directions. Once heated, pour batter into the center of the waffle maker, and allow to cook as per recommended time of the appliance.
- Repeat adding batter to the waffle maker for each of the colors.
- Once all waffle colors have been baked, place purple waffle onto a plate. Cover the top of the purple waffle with whipping cream and then stack the blue waffle on top of the cream. Repeat layers of waffles (green, yellow, orange) and cream until the red is at the top.
- Place remaining whipping cream into a piping bag fitted with a star tip. Pipe 8 stars of whipping cream around the edge of the red waffle and place a large dollop of cream in the center of the waffle. To the center dollop, add marshmallows, and to the stars, add a piece of Airhead candy.
- Using the colored piping gel, squeeze on gel to decorate the marshmallows. Add more mini marshmallows once you’ve finished with the gel. Finish the waffle stack with mini rainbow chips and additional Airheads.
- Slice into triangle pieces, or remove single layers of waffles and serve immediately.
