Today I’m showing you how to make Donut Pancakes! Combining the taste of a donut in the shape of a pancake, and being able to have it for breakfast makes this a must try pancake recipe! This 3 ingredient recipe only requires pancake mix, cake mix and milk! It is an easy recipe for kids to make at home for a fun breakfast.
I don’t normally use cake mix so I feel the need to justify myself for putting a box of premade cake mix in this video. It just works better for this project than my regular pancake mix, okay? There, that’s settled. For these pancakes, I wanted the donut taste, combined with the look and texture of a pancake. Combining the premade pancake mix and premade cake mix did just that. The pancakes are light and fluffy…you can literally watch them rise as they bake on the griddle.
Is anyone here a pancake expert? I have never, ever been lucky at flipping pancakes. Ever. I purchased a griddle a few years ago, and that made flipping them a bazillion times easier, but I still can’t get them perfect! What’s the trick? I need perfect pancakes in my life.
Making pancakes into donuts came to me by accident one day. I think I was practicing pancake art or something, and started swirling the batter around on the griddle, when voila, one was left with a hole in the middle. The idea for donut pancakes was born! After that point, I had to figure out how to make them taste like donuts, and be slightly puffy like donuts, which is where the cake mix batter comes in.
What I like best about this recipe is how dead easy it is. You’re likely to already have everything in your cupboard, and all you need fresh is the milk. To make the glaze, I’ve linked to the original post in the ingredients, and provided the entire glaze recipe at the bottom of this post.
Donut Pancakes
Ingredients:
- 1 cup Pancake mix (I used Bisquick)
- 1 cup Cake mix (I used French Vanilla)
- Donut Glaze
- Sprinkles
Procedure:
- Prepare pancake batter and preheat skillet/grill to 350F.
- Pour batter into squeeze bottle or piping bag.
- Using smooth circle motions, squeeze the pancake batter onto the grill in a circle shape, leaving an empty hole in the middle.
- Allow to cook until bubbles start to appear on the top, and then flip over with a spatula.
- Prepare donut glaze. Divide glaze into 3 different bowls. Color one with pink gel paste, add cocoa powder to one (you may need additional milk for thinning), and leave one plain.
- Place each glaze in a piping bag and squeeze onto pancakes. For a larger donut, match two pancakes of similar size together.
- Add sprinkles while glaze is still tacky.
- Serve while warm.
Donut Glaze
Ingredients:
- 1/2 cup butter (melted)
- 1/4 cup milk
- 1 tablespoon light corn syrup
- 2 teaspoons vanilla extract
- 2 1/2 cups icing sugar
Procedure:
- In a small bowl whisk together melted butter, milk, corn syrup and vanilla extract. Add icing sugar, whisking until smooth.
- Dip the top of each donut into the icing and transfer to a wire rack and let set for 5 minutes.
- Serve immediately, or donuts can be stored in an airtight container for up to 3 days, but are best served fresh.
