Inside Out Cake with Edible Gelatin Bubbles

September 26, 2015 by Jenn

In this video tutorial we show you how to make an Inside Out cake from the popular Disney/Pixar Movie, including edible gelatin bubbles as memory orbs!

Making an Inside Out cake has been high on my list since the movie came out.  But, as life usually does, it got in the way of a summer release, but seriously, these cooler fall days need a bit of rainbow splashed into them, right?

The time consuming portion of this cake is definitely in the gelatin bubbles.  You’ll want to start the gelatin bubbles well ahead of when you need the cake.  Each  color of bubble can be made with the ingredients listed, so repeat the recipe for the bubbles for each of the five colors.

Make sure that your balloons are covered with a non-stick spray or the hardened gelatin will be very difficult to remove from the balloon.  There’s a fine line between too much spray and not enough though.  If there is too much, the gelatin won’t stick to begin with and will roll right off of the balloon.  If you’ve made this error, which I did while practicing, you can add additional coats of gelatin to the balloon, and the holes will eventually be covered.

The cake itself is quite simple to decorate.  Dividing the cake into the five sections is the hardest part but once that is done, applying the buttercream is simple.  Using a variety of different sized gum balls adds a fun addition to the large gelatin bubbles, and besides, who wouldn’t love bubble gum after a slice of cake?

Gelatin Bubbles (this recipe is for one color of bubbles, repeat for all colors)
Ingredients:

  • Small balloons
  • 4 packages (7 grams each) unflavoured gelatin
  • 1 or 2 drops gel paste
  • 8 tablespoons cold water
  • 1/8 teaspoon white or silver pearl luster dust

Procedure:

  1. Attach blown up balloons to cake pop sticks with tape, and stand upright in a Styrofoam block.
  2. Coat balloons in a thin amount of non-stick spray or shortening.
  3. Mix gelatin, water, gel color and luster dust together in a small heat-safe bowl.
  4. Place in the microwave for 10-15 seconds, or until melted.
  5. Dip balloons into gelatin liquid ensuring to coat completely.
  6. Place back in Styrofoam block and allow to dry completely- about 24 hours.
  7. To remove balloon, cut away from the stick and pull the balloon out from the bubble.

If your chocolate is too hot, it will pop the balloons. Hopefully you didn’t have too big of a mess!

Just wondering how long the bubbles will last? No need for them to be edible … it’s more for the wow factor. Party is on a Saturday and I’m starting them on a Monday. Too soon or okay?
    LOVE the idea!!!!!!!!

Which Gel Paste do you use? I used Wilton Icing Colors (concentrated gel) and my bubbles are very translucent. Yours came out very dark and look perfect. Please share. Thanks.

Hi, we were trying to make the gelatin bubbles but our gelatin is to thick and won’t thin in the microwave. Which type of gelatin do you use?

    • Jenn says
      January 25, 2016 at 9:16 pm

Hi there…sorry to hear you’re having trouble. I use Knox unflavoured gelatin. If it hasn’t thinned, you might not have heated it long enough.
