I’m going to be honest and say that I’ve never been much of a Hello Kitty fan, but sooooo many viewers are and have been requesting that I made something HK themed. I have been wanting to make homemade marshmallows for a long time now, but didn’t have a way to make them interesting enough- until I found this mold!
Making homemade marshmallows is surprisingly easy if you don’t mind a sticky, gooey mess that gets everywhere. I do not have that problem, so I think this recipe is wonderful!
A couple of things to note: you can change the flavour and colour of these marshmallows by adding a different extract, and/or colouring. You can also make these in a regular pan, and cut them up with a knife, or with a cookie cutter for fun shapes. Make sure that you are using A LOT of icing sugar, as it makes working with the marshmallow so much easier. Also, while you’re waiting for the marshmallows to set, place a piece of greased plastic wrap tightly over top of the tray.
When removing the marshmallows from the mold, use icing sugar covered fingers, and gently pull the sides away from the mold. You need to do it gently, or the ears will rip from the body and stick to the mold…and nobody wants an ear-less Hello Kitty.
Painting with gel paste is surprisingly easy (and that is being said by someone with no artistic paintbrush talent). Since the gels are so concentrated, using a tiny amount, or even a color that is a shade lighter than the one you want (ie pink when you want red), works well for something like this.
Hello Kitty Marshmallow Recipe
Ingredients:
- 1/2 cup water
- 10 grams unflavoured gelatin
- 1 cup granulated sugar
- 1/4 cup light corn syrup
- 1/4 teaspoon salt
- 1 tablespoon vanilla extract
- gel pastes (pink, yellow, black)
- In the bowl of a stand mixer, pour 1/4 cup of water, and sprinkle the gelatin on top. Set aside.
- In a medium sized sauce pan, over medium high heat combine sugar, remaining water, corn syrup and salt. Bring to a gentle boil, and allow to boil for one minute before removing from the heat.
- Stir gelatin mixture briefly on low and slowly pour hot sugar down the side of the bowl. Turn mixture onto high speed for 10-12 minutes,or until marshmallow is white, light and fluffy.
- Grease Hello Kitty mold with non-stick spray, and wipe briefly with a paper towel.
- Working quickly, place marshmallow mixture into a piping bag, cut a portion of the tip off, and fill cavities of the mold. (if making regular marshmallows, simply dump marshmallow into a greased pan)
- Place a greased piece of plastic wrap over top of the mold (or pan) and set aside to harden (6 hours or overnight).
- Once solidified, gently coax out of the mold with icing sugar covered fingers.
- To add details, use a small amount of yellow, pink and black gel paste to paint on the facial details.
- Store in a sealed container for up to a week.
