One of my most favourite memories of hot summer days visiting family in Vancouver, was getting a snow cone from the fair. They always looked so beautiful and shiny- and were incredibly disappointing once you’d sucked all the syrup off! These cupcakes are anything but disappointing as the best part (the cupcake) is saved for last at the bottom. In this tutorial, I’ll show you how to make homemade snow cone syrup and how to make your regular cupcakes look like a real snow cone!
To completely divert to a story that has nothing to do with these cupcakes- did you know it costs $25 for a snow cone at the Disney On Ice event?!?! How in the world can shaved ice, and syrup cost that much money? Thankfully I’m showing how to make your own syrup in this video so you don’t have to disappoint me and buy one of those overpriced treats. How you are going to shave the ice is totally up to you.
The most important parts about these cupcakes is making the syrup- which is super easy- and finding the sugar crystals that will give the proper look of shaved ice. My local Bulk Barn store has all the colours of sugar I need, but you can also find them online or at craft/cake stores.
Dipping the cupcakes into the snow cone syrup is sticky and messy, but definitely worth it for the taste factor. Cover your work surface with paper towel and that will help a ton with cleanup.
Snow Cone Cupcakes
Ingredients:
- Prepared cupcakes
- Vanilla buttercream
- Snow cone syrup (recipe below)
- Coloured sanding sugars
Procedure:
- Pipe a topping of icing onto a cupcake using a spatula, or a round tip.
- Turn cupcake upside down, and press icing into the coloured sanding sugar, ensuring that the whole top is covered.
- Dip the sugar covered icing sugar into the snow cone syrup and immediate turn right-side-up and place on a paper towel to absorb leakage. Let syrup soak in.
- Repeat for desired number of cupcakes.
Snow Cone Syrup
Ingredients:
- 1 cup water
- 2 cups granulated sugar
- 1 package Koolaid
Procedure:
- In a medium sauce pan over medium heat, bring sugar, and water to a boil, and stir until sugar is dissolved.
- Remove from heat, and stir in koolaid.
- Set aside and let cool completely. You can do this on the countertop, or place the syrup in the fridge.
- Once cool, store in sealed container, in the fridge.
