Skittles Poke Cake with Skittles Buttercream- Collab with MyCupcakeAddiction!

I told you a couple of days ago that I had an awesome collab coming up . . . and to announce it properly, this is a Skittles collab with Elise from the YouTube channel My Cupcake Addiction!  Whoop!  She is a fellow YT baker, and creates amazing recipes for people to follow along with on her channel.  
 
I haven’t had the fortune of getting to meet Elise in person yet, but through our email communications I can tell you that she is a very talented baker and decorator, a mom of two young boys, and is an amazingly hard worker!  Her days must be SO busy!  I’m so glad that she was able to take the time to work together with us, in order to put my flavoured cake into decorated form. 
 
This cake truly tastes like Skittles.  Boiling the Skittles down to a simple syrup preserves the flavour of the candy, but eliminates the chewiness that you might not be accustom to in a cake.  I thought about using the syrup in the buttercream as well, but I figured that I would need so much of it to get a strong Skittles flavour that I would be stuck with a super runny icing.  So, instead, I used my food processor and blended the Skittles up to a fine powder and substituted a portion of the icing sugar for the Skittles powder.  It ended up working out perfectly, and tastes just like a Skittles cake should!  Skittles are a fabulous addition to a plain vanilla cake.

 
Skittles Poke Cake 
 
Skittles Syrup
Ingredients:
  • 1/4 cup (65g) each of red, orange, yellow, green, blue and purple skittles 
  • 1/4 cup (60mL) water for each colour 
Procedure:
  1. Place one colour of Skittles and water in a small saucepan and heat over low-medium heat until Skittles have completely dissolved.  
  2. Stir throughout heating process.
  3. Once Skittles have dissolved, remove from heat, and place syrup in a small jar or heat proof container as it is very hot. 
  4. Set syrup aside and repeat for remaining colours.  
  5. A waxy film may develop on top of the syrup while it cools.  If this happens, pour the syrup through a fine strainer. 

Skittles Cake

 
Skittles Buttercream
Ingredients:
  • 1/2 cup (105g-135g*) powdered Skittles (from 1/2 (135g) cup one colour)  *It is difficult to get the Skittles to grind 100% to powder. 
  • 1/2 cup butter (120g)
  • 3 cups icing sugar (300g) 
  • 2-3 tablespoons milk (30-45g)
Procedure:
  1. Using a food processor, grind Skittles until a fine powder forms. Separate the chunks from the powder by using a find sieve placed over top of a small bowl. 
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream butter until fluffy.  
  3. Add Skittles powder and 2 cups of icing sugar.  Mix on low speed until mixed. 
  4. Gradually add 2 tablespoons of milk and continue to mix.  
  5. Add the remaining cup of icing sugar, mix, and add the remaining tablespoon of milk if desired for a softer buttercream.

Finishing the Poke Cake
  1. To make the poke cake, place one 8″ cake layer on a cake board and “glue” the cake to the board with a small dollop of buttercream.  
  2. Using a sharp, narrow, round object (ie. candy thermometer-pointy end-, chop stick etc,) poke holes throughout the layer of cake. A fork can also be used, but the holes will not show the syrup as well as the larger utensils allow.   
  3. Spoon 1-2 tablespoons of syrup over the top of the cake, into a hole.  
  4. Repeat with each colour until all of the holes have syrup.  
  5. Apply a thin layer of buttercream on top of the first layer of cake, and place the second layer of cake on top of the buttercream.  
  6. Repeat poking and syrup additions to the second layer.  
  7. Once finished, cover the enter cake in a layer of buttercream.

    I made this for my daughter’s birthday tonight! It was awesome! It’s time intensive but worth it. The cake was delicious and smelled unbelievable. My house smelled like Skittles. I used 9 inch round pans because it’s what I have and I wish the cakes were thicker but it still looked great, tasted great and smelled great. I was worried it might be too sweet but I loved it.

    How many bags of skittles did you have to buy to get the appropriate amount of colored skittles? Did you buy the little bags or a big bag?
    I’m planning on making this for a friend’s birthday this Thursday 7/30/15 because we in fact call her “Skittles” because of her love for the chewy candies!

    Made this today for my boyfriends birthday, and I took a chance with the buttercream. I made a thicker syrup instead of a powder. The same way the others, only less water and more skittles. It worked great, the buttercream has a very strong skittles flavor and it didn’t thin it out or make it runny. I skipped that third tablespoon of mil, though. I had a lot of trouble getting a powder from the skittles. Maybe the humidity. I can’t wait to cut this thing open! Thanks!

    How long do you leave the skittles mixture to form the wax coating? I tried this last night and it didn’t really go to plan lol. Any tips on how to make the skittle mixture inside the cake cake to be brighter? As mine was a tiny but dull… And just any other tips in general would be grateful, thanks:)))

      When the syrup cools, the wax separates.

    Can this cake be refrigerated until party time? Or will the skittles mixtures get hard?

      Yes, you can refrigerate it if you want…the skittles will not solidify.

    With regards to the amount of sugar I will be using to bake the cake, do I need to cut down on the sugar amount so that the cake is not too sweet when the skittles syrup is added.

    If I were to pour the skittle syrup into the cake batter before baking what would happen to it? Would it be a complete disaster?

It’s so funny that you posted this when you did because I had been obsessed with skittles for a bit and kept thinking “man I wish there was a skittles cake recipe” and now there is! Thank you!
