Using a piping bag is one of the most awkward beginning steps to basic cake decorating.
How do I HOLD this thing? How to I FILL this thing? What does this thing DO?
Once you have gotten used to the idea that this is something you are going to have to use when you are cake decorating, you definitely get a feel for what you like, and what you don’t like. I know that I like my bags to be “soft” and I also only like using 12″ piping bags. I find this size the most economical and to be readily available. I use the Wilton ones, and they are not too stiff (if they are stiff or “hard” bags, I find it makes it too hard to pipe . . . as **disclosure** I have tendinitis) I buy them by the 100 pack. If you are worried about environmental harm, or reducing your cost, try a re-usable piping bag.
If you want to get right down to the roots of baking, try using a paper parchment bag! That’s always fun for a challenge! I find using the paper parchment bags best for decorating with chocolate as you can make a tiny hole at the end, and control the flow of the chocolate best this way.
If you are going to be doing a lot of decorating, or piping, you will also want to get yourself some couplers. Couplers are the pieces on the bottom of the piping bag that allow you to switch out tips if you need different looks with the same colour. They come in multiple packs, and they aren’t very expensive.
