Basketball Cupcakes

BASKETBALL CUPCAKES

Getting the fortune of teaching in one school this year (after being in two different ones for the last two years) has allowed me to get back to doing extra curricular activities.  I loved sports and music when I was going through school, and I was on every team I could be, and in band and choir.  As a Kindergarten teacher, I love to be able to teach the older kids sometimes, and through coaching, I get that opportunity.

Our season was a lot of fun . . . and we even won a game!  Which we didn’t during the volleyball season 🙁  I had a great group of girls, who tried hard, and had a lot of fun throughout the season.

We had our traditional pizza lunch last week to wrap up the season, and I wanted to make them something special.  So what did I think of?   An ice cream cake!!  But, then I remembered that I’m running a cupcake business.  Hellooooo.  So I made them some cute basketball cupcake treats.

Paul was my diligent fondant cutter . . . look how round those balls turned out 😉  He has officially be initiated into the land of fondant.

Popcorn Cupcakes and A Movie Cake?

I love movies.

I love rom-coms.  I love dramas.  I love action.

I don’t love sci-fi.

I love popcorn.

It sounds like I’m one of my Kindergartener’s writing a poem!  I think that means I should stop.  I hope you get the idea.

When a friend of mine asked me to make a birthday cake for her daughter’s 12th birthday, she happened to mention that I would need to drop the cake off at a restaurant after the movie.  Movie?  I had JUST the idea!

I used to go to the movies all the time . . . it was one of my favourite pastimes in University.  I love the smell of the butter and the huge lazy boy type chairs that the super theatres now have (not that we have one of those in Cranbrook!)  I just don’t seem to have much time to go to movies these days.  Also, it doesn’t seem like there are many quality movies making their way to the local theatre.

To go with the bad habit of filling up on a big bag of popcorn, I had was always falling asleep once the movie started!

I blame the dark.

My friends developed the “helpful” habit of elbowing me to wake me up.  Thanks.

What else goes with popcorn, and a nap at the movies?  Candy of course!  To go with this cake, I went searching the aisles of the movie theatre . . . Mike n Ike’s, MnM’s,and  chocolate covered caramels.

Popcorn Cupcakes

These popcorn tubs were so fun to make!  I got the idea for Hello Cupcake, and had seen it months ago.  I was so excited to finally get to make this cute addition for a cake.

How to Make Marshmallow Popcorn:

You will need one bag of white mini marshmallows, and one bag of multi coloured flavoured marshmallows.  Separate out all of the yellow marshmallows.  You will be making around 200 kernels of popcorn!   Take one marshmallow and cut it into three pieces.  These become the “petals” of the popcorn.  Put a dot of icing on the bottom a whole marshmallow, and attach the three pieces of cut marshmallow to the whole one.  That’s it!  Super easy, but time consuming.  Make sure you have a good movie to turn on 🙂  Edited to add: Thanks Paul for putting together so many of the popcorn pieces together.  You’re the greatest helper.

The cake is chocolate with chocolate buttercream, and the cupcakes were vanilla with salted caramel buttercream, and vanilla with vanilla buttercream.

I LOVED making this cake.  It was so much fun.

Lemon Raspberry and How to Core a Cupcake!

What’s better in the middle of the cold, dreary, dark, wet, ugly, yucky, winter months than a cupcake that screams SUMMER!?

I could have kept going with nasty winter adjectives, but I’m too busy trying to practice positive thoughts.  I’ll let you know how that works out. Hah.

We Canadians up here in good old Canada, have been having quite the snow situation in the last couple of weeks.  For a while there, winter was over and spring was on it’s way.  I even heard a Robin one morning.  I was happy when I heard that Robin, and I hate birds!  Now, where is that poor Robin?  Probably buried in some snow somewhere, frozen to death. 🙁

To help get out of the Winter Blues I have been experiencing, Lemon Raspberry Cupcakes were on the agenda!  With thoughts of summer in my head, I started to bake.

Oh summer, please come soon.  I’ve had it with shovelling and wearing boots. Please Mother Nature?

Warm up that zester for this recipe.   One of the greatest purchases I have made (in regards to cooking utensils . . . because we’re not here talking about my $500 Coach bag that I got for $120 at the Vegas Outlets) is one of the small, narrow zester’s you can see in the picture.   So handy for recipes that require a lot of lemon, lime or orange zest.

Mix flour, butter, sugar, lemon, vanilla and lemon juice and you get lemony goodness!

Another great kitchen tool that I have is one that I got as a gift!  It’s a very handy cupcake corer!  All you have to do is insert it into cooled cupcakes, twist and pull it out.

To remove the cake from the corer, all you have to do is push the little handle down on the top, and out pops the cored out piece of cupcake!  Don’t forget to keep those cores.  You can use them again when you have filled the cupcakes to cover up the filling.

Drop in a raspberry into the core and then add the lemon curd on top.  Cut the piece of cupcake that came out of the corer into a lid, and place it back on top of the filling.  This seals the filling in.

Whip up your favourite Raspberry Icing, or here to see mine, add lemon zest to top and dig in.

I’m starting to feel better already!  Six more weeks of winter?  I hope not.  But, with each snow fall and shovelling that I endure, maybe a cupcake is in order?!

Cookies and Cream Cupcakes

Should I be sharing my recipes now that I’m making them for money?  Hmmm, that is the question . . . oh well, I’ll worry about that another day and give you this pictorial!

First, I have to start off telling you that there is an Oreo in the bottom of this cupcake!  How great is that?!   As soon as I saw the bottom of the cupcake tin with the Oreo in it, I HAD to make this cupcake and add it to my repertoire.

Is it love for you too?

I try to stay away from Oreo’s . . . and the entire cookie aisle when shopping because cookies and I don’t get along well.  In fact, they make me so mad, that I have to eat all of them!  Imagine my fright when I had to buy the SUPERSIZED box of Oreo’s for this recipe.  I was worried none of them would make it to the bowl.

First off start whipping up the batter . . . eggs, sugar, butter.

Add in the flour . . .

Now for the best part, mix in quartered Oreo’s!  HUGE chunks on top of the half Oreo!  Good Lord.

Spoon into cupcake tins, and you’re ready to bake these bites of gooey Oreo goodness!  It took every ounce of self control to resist spooning this batter out of the cups and into my mouth!

It’s Oreo-delicious!

First Farmer’s Market

This past weekend, Jenn’s Custom Cakery made it’s debut out in public!  It was so scary, a learning experience, but an alround fabulous time!  I had my bestest friend in the world Kristy, helping me out, and for that I am so greatful, as I couldn’t have done it without her.  Her husband Jeff stopped by on his way out for a snowshoe/hike (jealous! . . . where’s the cardio gone lately? . . . me not Jeff . . . he’s fit as a fiddle).  I’ll post some new spin routines soon.  If I don’t get so fat from cupcakes that I can no longer operate a keyboard that is.   ANYWAY . . . Paul, my partner in business and LOVE (lol, it was so corny I had to put it in), made it up to be the official photographer of the Cakery as well!

There was a lot of self imposed pressure coming from this event.  It was my first public showing (and we all know how brutal some people can be), and I wasn’t sure how it would go over.   When we first got there, and were setting up (aka 18 trips to the car and back), everything was great!

That was until the SECOND cupcake lady walked in . . . with her cupcakes!  Can you believe it?  Two cupcake stands in a room half the size of an elementary school gym?  I went from feeling great, to feeling sick to my stomach.  I don’t think I talked to Kristy for the next 45 minutes.  Her stuff was quite different from mine, so it could have gone really bad, for both of us!  The Windermere Hall would have been a chilly place to be if everyone had been buying from only one of us!

No ice picks were needed and we both managed to be successful!  I took up 11 dozen cupcakes and only came back with three lonely ones.  Absolutely amazing!  I was so happy!  A special thanks goes out to my “helpers” and the ones who made the drive!  Thanks Viv and Janine for making the drive and supporting me.

328 Cupcakes Baked

Perhaps I will be needing a better tracking system?

Yesterday I baked 106 mini cupcakes (hello, BEST teacher EVER . . . they’re for the upcoming celebration for 100 Day!), two dozen Cookies and Cream cupcakes, and two dozen Lemon Drop cupcakes.

15 Dozen Mini and Regular Cupcakes

Last week, I baked 15 dozen cupcakes. . . that’s 180 cupcakes in case you are wondering!  I know because I used my calculator.  I baked a 9×13 Rootbeer cake (I will post it soon!), and a heart shaped Buckeye Cake!

Two cakes and 328 cupcakes!  Mother.

That’s a lot of baking for someone who couldn’t ever find the time to cook a box of Kraft Dinner.

My first batch of cupcakes had to be shipped out on Friday afternoon to Richmond.   I’m scared to think about what they’re going to look like when they get there!  Fingers crossed they survive!
