Hi jenn I recently made your Ferrero rocher cupcakes and when they baked the Ferrero rocher inside was soggy, what did I do wrong? Also I felt that the buttercream was quite the wrong flavour. do you have any tips for me please?

The ferraro goes soft, as does most anything that you put in a cake like I did with this recipe.

would it possibly work if I froze the Ferrero rocher before baking?

Hi Jenn, this is Melissa and Mason again… I was just wanting to ask you when you do that crumb coat on your cakes are your cakes frozen or did you just let them cool completely? I am struggling with crumb coating my cakes because first the icing seems to be a little runny plus the cake just want to fall apart. Do you have any advice for me? Love watching your videos you have taught me so much thank you! 🙂

Hi there..they have to be cooled completely, then I crumb coat, then I freeze. You can freeze before the crumb coat though…you might find that easier. Hope that helps!

Is whipping cream the same as heavy cream? Also you mentioned in a video how when you’re using a icing bag that your hands are always hot… Mine are the same way all the time! How can I prevent my icing from getting runny because of my hands being at a high temperature?

Yes, whipping cream and heavy cream are essentially the same thing. Heavy cream has a bit more fat, but they will both work in the same way for this recipe. I have to put my bag down, put it in the fridge when the icing gets too soft. Good luck!

    Jenn,
Love the videos. Im just starting getting into cake decorating. My question is…. Is it better just to buy white fondant and dye it yourself as opposed to buying already colored fondant?

Hi there…in my opinion it comes down to personal preference and time. Dying it yourself takes more time, but if you are needing a specific colour to go with a theme, you sometimes need to dye it yourself.

Hello. I just subscribed to your videos and I love your techniques and recipes. I wanted to ask (as I love cupcake baking and decorating myself) when using the 1M tip for a swirl why do you do a little cone in the middle? I just start piping the swirl and it turns out the same. I was just curious. I do love your recipes and your treats are so creative. Keep it up!

Thanks for the sub! I pipe the cone in the middle to help build the height. It just gives it a little more support and makes it more stable.

    Hi Jenn!!!
I am a HUGE fan of your YouTube channel but I am not old enough to have my own channel to subscribe to you yet. I am nine and mum says I have to wait until I am 11.
I recently made your Fererro Rocher cupcakes with Nutella Buttercream and they were DELICIOUS! Everyone loved them and they hardly lasted a day! I shared them with my family, my nan and my aunty and her family.
I want to attach a photo but I can’t copy it here. Mum says I’m not old enough for Facebook yet either.
I live in Australia and so far I haven’t been able to find the Wilton brand of AmeriColored food gel. I wish we could get it here. Mum says if I keep being so addicted to baking I might be able to order it from AMAZON if they have it but the POSTAGE to Australia is very expensive.
I am turning 10 soon and am extremely addicted to zebras. Can you guess what cake mum said I can have for my birthday?? It is the pink zebra cake, however I will be having a purple zebra cake because that’s my favourite colour.
I hope I get a comment back from you, I am really excited to hear from you, I love watching your videos on YouTube.
PS I just found you on Pinterest.
    Love from Emma

I am a really big fan of you and your videos and I wanted to ask, how much buttercream exactly do you use for your rainbow cake? Will one batch of your frosting be enough for the outside, in between the layers and the crumb coat? If I need more or less frosting please tell me because I need to make it as perfect as yours was. Hi jenn I was wondering if you could make me 1 rainbow cupcake in a jar and a rainbow cake from you not the bakery you work at because I have had issues before with getting peanuts in cakes I’ve ordered to have NO peanuts me and my daughter are both deathly allergic and I could never trust a bakery again. But I live near the bakery so if you could make it and meet me there that would be awesome. They are for my daughters birthday and we watched your videos on youtube and that is all she wants so PLEASE she has been through a lot this year. I just want to see the look on her face. I can not pipe for the life of me I’ve tried. I already attempted to make both already ( twice ) and failed miserably so please. I will pay you what ever just I finally can afford to give her something she really wants. Jenn I’m begging you- Avia

Hi. I love your tutorials! I was wondering if you had a tip for this.
I love combining different tastes, especially an alcohol glaze… it is summer and one of my clients has asked me to do this. This particular glaze has me stumped. I made a margarita cupcake with tequila glaze and no matter how much I thicken it (add extra powdered sugar or cornstarch, even baking powder) it still runs off the cupcake. If it’s in the fridge it stays put, but at room temperature, well it’s just not presentable even though it’s still yummy.
Do you have any tips on how to make this not runny?
    Thanks

Yes you can use box mixes. The store bought icing is not very thick, so if you’re going to be trying to pipe with it, you may have some difficulties. I have also never tried to dye store bought icing, so I don’t know how that will work out for you. Good luck!

I’ve done both tinting from store bought icing and box mix and it’s ok. You will still achieve the same brightness as your standard butter cake and butter cream icing, however I would suggest you use you use the color paste and not a liquid to tint your mix and the icing as it will make it more liquidy and you don’t want to compromise taste and quality. For your icing, it’s best to go to your local bulk barn (not sure if there’s one in the US but they sell bulk food) and get your butter cream icing there. Otherwise, it’s pretty easy to make butter cream icing. 5 min flat. Good luck with your daughters cake.

    Hello Jenn,
I really liked making the vanilla cake that you showed in your video. I was wondering how I could send a picture of my cake to you. This is how I made and decorated the cake: First I made the batter. But we didn’t have the right sized pan, so it is not a layer cake. After my cake was done, my sister and my mom wanted a bite out of it. It turned out to be a big bite! So there turned out to be a triangle hole. Even thought I had told my sister and my mom that they could try some of the cake, at first I did not like the triangle hole. But then I decided on a good plan. We took the cake out of the pan and put it on the cake plate. Then I frosted it a little bit. I put on a cranberry for an eye. Next I put on some large coconut flakes that look like teeth, where the triangle was cut out. This looks like a big open mouth now. Then I frosted around the outside edge, and inside the mouth. I put some Hershey’s kisses on for horns. After that I put sprinkles all over the cake, for scales. Then I used a Tootsie Roll for a nose. The finishing touch was adding a little piece of candy on top of the cranberry eye to make a pupil for the eye. (I spread a little frosting on the cranberry first, to make the candy stick.) Thank you for sharing your cake recipe. I like my cake, even though my cake didn’t turn out like your cake.
    From Emilie
P.S. I used maple flavoring instead of vanilla. I used chocolate frosting from the store.

If you only have one cake pan to use, divide the batter in half and cook it in two batches. You will be happy you did so. If you put it all into one pan, and the pan is not high enough, it will just spill all over the inside of your oven.

Whenever I try and cook cupcakes, or cakes they always rise way too much. I put them in for the specified time at the correct temperature, but no matter what they always have a huge dome on them. I’ve tried adding less baking powder, putting them in for longer on a cool setting, putting less in the cupcakes patty pans

Could it be I’m using a fan forced oven?

Hi there…cakes are supposed to rise, so I don’t think that you are doing anything wrong. What you need to do before you decorate the cake is to “level” it. We have a video up on YouTube how to do that, so check it out and hopefully that helps you out.

Hi Natalie, are you baking it for too long?? Is it cooked in the middle? You could try baking it at a lower temperature 325F or if it’s finished before 35 minutes, just take it out early. You don’t have to keep it in if it’s done early.

Good luck! Sounds like it just might be in for too long. There is always a bit of “hardness” to the outside of a cake though…just keep that in mind….it shouldn’t really be crispy though.

Hello, I am new to using fondant, I am been able to create pretty much any design out of frosting so far. 🙂 However, I want to learn how to use fondant. Is it better to make my own fondant (if so do you have a good recipe) or buy already made fondant? Thanks!

Hi there! I buy all my fondant in bulk, because having a cake company I go through so much of it. I find that satin ice is best for covering cakes etc (it’s taste is best IMO) and Wilton fondant is better for sculpting etc. hope that helps!

I have a question about the ‘Homemade Vanilla Cake from Scratch’ video. I want to make a yellow cake and I did some research on what’s the difference between white, yellow, and vanilla cakes; I was wondering if I could use the vanilla recipe you and switch around for a yellow cake. And if possible what would I have to change in the recipe?

White usually is egg white’s only, and the yellow/vanilla cake include yolks….I personally think that the yellow and “vanilla” cake are similar, so I would think you could use one in place of the other.
