Leprechaun Hat Cupcakes for Saint Patrick’s Day

We just got another monumental dump of snow, like a foot of it.  How can that be?  It’s MARCH?!  I’ve been trying to think up of fun spring things to make and it’s so hard when I don’t remember what grass looks like.  I think we need to move.  Somewhere southern.  I need a Leprechaun to grant me my wish to move.

Leprechauns, according to Irish folklore, are a fairy type creature in the form of an old man, usually up to mischievous acts.  According to Wikipedia, “Leprechauns spend all their time busily making shoes, and store away all their coins in a hidden pot of gold at the end of the rainbow. If ever captured by a human, the Leprechaun has the magical power to grant three wishes in exchange for their release.”  Listen Leprechaun, I need sun.  I need heat.  I need real Vitamin D!   Get me that, please! 

I’d like to announce now that I have Irish in my blood, so don’t attack me with a righteous claim that I am being stereotypical, or somehow making fun of Irish traditions.  Because I know I am.  And I can.  I’m one of you. 

Besides, do you really think that I would go chasing after a little green fairy man in order to beg for the snow to disappear? 

Yes, yes, I would.

How to Make Banana Split Cupcakes

So we’re on our way again to LA to visit YouTube Space LA tomorrow and we’ll finally be able to announce the program that we’ve been working with YouTube on for the last 6 months!  Keeping a secret for that long has been hard.  It’s not exactly a secret that we’ve been in LA . . . you can tell by the random places/kitchen’s we were filming in in August and November (expect some more soon too!)  What we’ve had to keep secret is exactly what (other than videos) we’ve been doing there.  When we’re officially allowed to announce it, I’ll be sure to let you know what we got to work on!  I’ve got a little black cloud hanging over me though as my program bestie isn’t going to be able to make it as she has an incredibly sick family member.  But, it’s looking as though he is over the worst part and is on the road to healthy. 

On to the cupcakes . . .

The idea for these cupcakes came to me while I was shopping in our local grocery store . . . the Superstore.  Canada is so original in it’s naming of stores.  I knew I had a delicious banana cupcake recipe, and a ton of ripe bananas ready to be smashed into something delicious, so I grabbed these long baking trays. . . they’re meant for baking breads and gift giving.  If you’re looking for your own and can’t find any by looking for banana split stuff, try searching for “food tray” or  “hot dog tray”.

In the video, I left the cupcake wrappers on the cupcakes as I put them into the tray. Honestly, I was sure about whether to remove them or not.  I think if I was to go back and actually eat the banana split, having the wrappers on the cupcakes might eating it a little bit difficult . . . but then if you were sharing it, you might want the wrappers so your cupcake doesn’t touch the other person’s spoon?!?!?  I just don’t know!!

How to Make a Box of Chocolate Cupcakes for Valentine’s Day

What would you say is the most stereotypical Valentine’s day present to give?  Flowers?  Candy?  Jewellery?  CHOCOLATES?  According to my research on amazon, people even give perfume!  What a thoughtful gift . . . I love you but you could smell better.

Well, I thought that playing on the idea of giving chocolates as the most popular Valentine’s Day gift to give (not determined by any research!), I would make a box of chocolate CUPCAKES instead.   The cupcakes look like a box of regular holiday treats, but upon closer inspection, you realize they’re so much better and they’re in cupcake form!  By the way, if your “sweetheart” gives you candy, leave him.  You can get that stuff at the dollarstore.  I would know . . . it’s where I bought some of the ingredients for the Box of Chocolate Cupcakes I made.  Note to self:  don’t shop at the dollarstore and then tell people.  Oops.  

Do you think Valentine’s Day is overrated?  Commercialized to the point of nausea?   It seems as though the second that the Christmas decorations are put away, the stores are filling the shelves with pink and red Valentine paraphernalia.  I guess they all have to make their quota’s, or whatever it is stores do.  As do people on YouTube, which is why we have a Valentine’s day video going live in January.  Oops again. 

What is happening here?  I think they had me at “Cupid Corn”.  How I could I resist THAT!?!?

Ferrero Rocher & Nutella Cupcakes

I’m going to have to start out by saying that I have never really been a Nutella fan.  Until we made these cupcakes, I really never understood what the fuss was about.  I’d rather eat a peanut than a hazelnut.  I’d rather have peanut butter and jam, than chocolate and hazelnuts.  It was never in our house growing up as a kid, so I don’t think I ever really knew about it.  But, when an Italian family becomes your family, you learn quickly about all things Italian.  One of those things is hazelnut flavoured everything!  I think I first tried a Ferraro Rocher at Paul’s mom’s house, and meh, didn’t really care for it.  Apparently it had to be baked inside of a cupcake for me to really like it! 
 
As far as Nutella went, I could never understand why bloggers were posting about it, drooling over it and giving it love I didn’t think it deserved.  UNTIL I made this buttercream.  This Nutella buttercream may be the absolute best thing I have ever tasted.  No lie.  It is rich, creamy and oozes smooth buttercream flavour.  The hazelnut-chocolate taste is perfectly complimented by the sweetness of the sugar and saltiness of the butter.  O.M.G.  That’s how good it is.  Good enough to talk in capitals. 
 
The buttercream is one of those tastes that just the smallest amount will send you face first into the bowl.  If you have strong willpower, I guarantee that it will be tested with this cupcake.

New Year’s Ball Drop Cupcakes: New Years Cupcakes

Are you ready to PAR-TAY?  These cupcakes are!  They are covered in streamers, confetti and a ball drop for countdown . . . I don’t think I could have crammed more “party” onto them if I had tried. 

I’ve never been to Times Square on New Years Eve, and I don’t think I’ll ever try (way too many people) despite my love for NYC, but watching the ball drop is pretty much the biggest iconic symbol of this holiday.  New Years eve is one of those holidays that I have a love-hate relationship with . . well, it’s pretty much a hate/hate relationship.  There is always the pressure to do something whether it is to find a party, to hold a party, to pay money for a party (ya, right!), or hide at home with the lights off and the door locked (me? never!).  The overwhelming urge to be in bed by 9:30 that night usually kicks in and I’m barely able to stay awake for the 12:00 countdown.  I hope you have a better attitude that I do when it comes to NYE . .  and I hope you have better plans than we do!  If you do, make sure you brag about them in the comment section as I’d love to hear about them and live vicariously.  I think if we lived in a bigger city, we might have more to do, but that is not the case right, now so I’ll be on the couch.

Christmas Tree Cupcakes

Does anyone else hate having a Christmas tree?  I’m not being a Grinch here, I’m pretty much just being lazy.  Every year Paul and I go hunting for our own Christmas tree, as well as one for my parents, way out in the bush somewhere.  Having never done this as a child (other than going down to the local grocery store parking lot) it is a tradition that I look forward to every year (even though I don’t like putting up the tree anymore).  I think the reason that I don’t like putting up the tree is because I don’t like taking it down.  When I was younger and living at home with my parents, every year I would pull all of the boxes out and decorate the house with such excitement- and then I would leave the mess for my mom to put away after the holiday.  Since Paul and I have lived together we have had a tree twice but in the recent years, we’ve only gone out looking for my parents.  I just can’t get over putting all the ornaments away and taking the tree down!  It’s pathetic.

So instead up putting up a tree in my house, I’ll happily put up a tree on a cupcake!  This is a different twist on how to make a Christmas tree cupcake, rather than just piping a huge pile of buttercream on top (not that I don’t love that variation) but this one is more for looks!

Pumpkin Pie in a Cupcake: Hidden Pumpkin Pie in a Snickerdoodle Cupcake

This is a humdinger of a smashup recipe! Pumpkin pie INSIDE a cinnamon cupcake.  O. M. G.  Soooo good!  Yes, it is a time intensive recipe.  You’re basically having to make two different recipes, and then combine them to make one.  It’s twice the work for half the product, but these are made for their “shock” value.  How awesome would it be to surprise your friends and family with what looks like a normal, everyday cupcake, and then, BAM, they bite into it, and PUMPKIN PIE! 

What I like about this recipe is that you can make the pies ahead of time, and freeze them until you need them for the cupcakes.  Just make sure to keep them in a sealed container in the freezer and bring them out to thaw prior to using them.

Meringue Mushroom Cupcakes

Who knew that Ruby was such a dog of so many talents?!  Now she’s sniffing out mushrooms?  I’m such a proud mother. 
In case you didn’t figure it out, we staged the mushroom hunt, but I have to say that Ruby did a great job of pretending to search for those mushrooms.  She’s so happy to go with anything we put her up to.  As you can see in the video, she’s quite content to sit around when I’m explaining the mushroom details, and she was happy to run through the long grass “searching”.  She’ll never leave the area where we are- some may call that being a big chicken, but I call it love and caution.  There are bears in the wild where we live!!  
 
Making the meringue mushrooms turned out to be a time intensive project (they have to bake for almost 2 hours), but the end result is so realistic…and delicious.  Meringue tastes lovely and melts in your mouth!
