First Farmer’s Market

This past weekend, Jenn’s Custom Cakery made it’s debut out in public!  It was so scary, a learning experience, but an alround fabulous time!  I had my bestest friend in the world Kristy, helping me out, and for that I am so greatful, as I couldn’t have done it without her.  Her husband Jeff stopped by on his way out for a snowshoe/hike (jealous! . . . where’s the cardio gone lately? . . . me not Jeff . . . he’s fit as a fiddle).  I’ll post some new spin routines soon.  If I don’t get so fat from cupcakes that I can no longer operate a keyboard that is.   ANYWAY . . . Paul, my partner in business and LOVE (lol, it was so corny I had to put it in), made it up to be the official photographer of the Cakery as well!

There was a lot of self imposed pressure coming from this event.  It was my first public showing (and we all know how brutal some people can be), and I wasn’t sure how it would go over.   When we first got there, and were setting up (aka 18 trips to the car and back), everything was great!

That was until the SECOND cupcake lady walked in . . . with her cupcakes!  Can you believe it?  Two cupcake stands in a room half the size of an elementary school gym?  I went from feeling great, to feeling sick to my stomach.  I don’t think I talked to Kristy for the next 45 minutes.  Her stuff was quite different from mine, so it could have gone really bad, for both of us!  The Windermere Hall would have been a chilly place to be if everyone had been buying from only one of us!

No ice picks were needed and we both managed to be successful!  I took up 11 dozen cupcakes and only came back with three lonely ones.  Absolutely amazing!  I was so happy!  A special thanks goes out to my “helpers” and the ones who made the drive!  Thanks Viv and Janine for making the drive and supporting me.

Fortunate Friday

It’s Friday!  T. G. I. F.  Whoop.  I had a great week this week . . . worked two days, had a day off, worked one day, then worked a second with no students!  Who could ask for a better job?  Fabulous.

This week’s update:

I am fortunate for all of the friends that ordered Valentine’s themed cupcakes from Jenn’s Custom Cakery!  It was a huge success, I received great positive feedback . . . on all 16 dozen!  Well, that’s not true . . . I did not personally receive a thumbs up on 16 dozen.  You know what I mean 🙂

I’m fortunate for my first wedding cake order!  Thank you Nicole and David for having the confidence in me to put your faith in my baking skills.  I will not disappoint!  It’s going to be a three-tiered, three flavoured buttercream coated square cake with hydrangea flowers cascading down the side.  Yummy and beautiful!

I am fortunate that in this “One Horse Town” of Cranbrook, I managed to find candy sticks for cake pops, and a new decorating tip!  Yes, I am simply happy these days.

I am fortunate to have the opportunity this weekend to attend my first farmers market . . . as a vendor!  I’m taking 10 dozen cupcakes, cake balls, and icing shots with me.  Hopefully it all goes well!

Sugar Lilies and Petunias

This week in my cake decorating classes, we were to finish a cake!  I had an order for a Montreal Canadiens birthday cake which was perfect for my Beginner class, and I wanted to make Paul something special for Valentine’s Day for my flower class.  Both of the cakes turned out beautifully, and I’m really  happy with what I have learned in my courses.  Next week, I start a fondant and gum paste flower class, so I’m looking forward to that too!

Buckeye Valentine's Cake

Using the flowers and techniques that I learned in my course, I made a Buckeye (chocolate and peanut butter) Valentine’s Cake!  The cake itself is delicious . . . we broke into it early 🙂  The bottom layer is a heavy chewy brownie like cake, middle layer is smooth peanut butter cream, and it’s topped off with a chocolate ganache!  Yum!

Buckeye Cake

Cake
• 2 large eggs
• 1 1/4 cups granulated sugar
• 3/4 cup all-purpose flour
• 6 tablespoons unsalted butter, melted
• 3 oz. unsweetened chocolate, melted
• 1/2 teaspoon vanilla extract
• 1/8 teaspoon salt
 
Peanut Butter Layer
• 3/4 cup creamy peanut butter
• 1/4 cup unsalted butter, softened
• 1/4 teaspoon vanilla extract
• 3/4 cup powdered sugar
 
Ganache
• 1 cup heavy whipping cream
• 2 cups semi-sweet chocolate chips
• 1/3 cup peanut butter chips
 
Directions
1. Preheat oven to 350º F. Grease 9-inch-round cake pan. Line bottom of pan with parchment paper; grease.
2. Cake: Combine eggs and sugar in large bowl. Stir in flour, melted butter, melted chocolate, vanilla extract and salt until smooth. Pour into prepared pan.
3. Bake for 25 minutes or until a wooden pick inserted in the middle comes out clean. Cool on wire rack for 5 minutes. Run knife around edge of cake; cool for an additional 10 minutes. Invert cake onto serving platter. Remove pan and parchment; cool completely.
4. Peanut Butter Layer: Beat peanut butter, butter and vanilla extract in medium mixer bowl until combined. Gradually beat in powdered sugar. Spread mixture on cake. Refrigerate for 30 minutes.
5. Ganache: Heat cream in small saucepan to boiling; remove from heat. Add semi-sweet morsels; let stand 5 minutes. Stir; refrigerate for 30 minutes or until mixture is spreadable. Spread chocolate on top and sides of cake.
6. This step I did not do, as I was decorating my cake with my sugar flowers, but I’ve included it for you to enjoy! Melt peanut butter chips in resealable plastic bag on MEDIUM-HIGH (70%) power for 30 seconds. Knead bag to mix. If necessary, microwave at additional 10- to 15-second intervals until melted. Cut a small hole from corner of bag; squeeze to drizzle over cake. Store in refrigerator. Let stand for 30 minutes before serving.

Fortunate Friday

This week is easy!

I am so fortunate for friends that have made the opening of my unofficial bakery officially a success!  With four birthday cakes coming up, and dozens and dozens of cupcakes, I’m going to be a busy baker!

Jenn’s Custom Cakery Business Card Debut

This has been a busy week for me, and I haven’t had time to put my posts together.  I promise that I will be getting to them soon.  Stored away in the depths of my iPhoto storage, I have pictures for my Wilton Classes from Week Two and Three, Angel Food Cookies (yes, cookies), and Chocolate Covered Peanut Butter Crackers.   Both are simple and delicious, so watch for them soon.

Again, I apologize . . . BUT it’s not like I’ve been sitting around twiddling my thumbs . . . I have actually been 100% focused on Jenn’s Custom Cakery! Here are the business cards that Paul designed for me . . . he is so talented . . . as he took my jumbled/rambling thoughts and made them come to life exactly how I wanted them too.

If you are interested in him designing one for you, send me an email and I will hook you up with him . . . in a business sense.  I’m not like that.

As my first endeavour into this cakery, I decided it was perfect timing to offer a Valentine’s Day assortment of chocolate and vanilla cuppies.  Boy, did I ever TAKE OFF!!!  I currently have 15 DOZEN orders.  15!  I am so happy!  I’m going to be a little stressed while making all of them, but it is so amazing.  I KNEW I had an untapped market in this city. Knock on wood.

Watch out cupcake world . . . here I come!
