height=\"338\"><\/iframe>\u00a0<\/p>\n<p>Let&#8217;s make whoopie!\u00a0 Pies that is.<\/p>\n<p><!--more--><\/p>\n<p>A whoopie pie is a cross between cake, and cookie like a cake sandwich!\u00a0 The top and bottom is a heavy red velvet-cake like cookie, filled with cream cheese frosting.\u00a0 This treat will most likely be a familiar one to any East Coast American readers, but for me, up here is tiny town Canada, I had never had one until I made one!\u00a0<\/p>\n<p>Traditionally (from my &#8220;research&#8221;) a whoopie pie is usually made similar to an Oreo- chocolate cookie-cake and vanilla filling.\u00a0 But since I wanted to make these for Valentine&#8217;s Day, I was off to search for a red velvet version.\u00a0\u00a0 I found just what I was looking for on one of my favourite blogs, <a href=\"http:\/\/www.annieeats.com\" target=\"_blank\">Annie Eats<\/a>, but when I tried her recipe, I found it too thick to pipe.\u00a0 So I made some changes.\u00a0 The recipe here and in our video has been adapted from hers . . . because she&#8217;s rad.\u00a0<\/p>\n<p><strong>Red Velvet Whoopie Pies<\/strong><br \/><strong>Ingredients:<\/strong><br \/>For the cookies:<br \/>2 cups all-purpose flour<br \/>2 tbsp. cocoa powder<br \/>\u00bd tsp. baking powder<br \/>\u00bc tsp. salt<br \/>8 tbsp. unsalted butter, at room temperature<br \/>1 cup light brown sugar, packed<br \/>1 large egg<br \/>1 tsp. vanilla extract<br \/>1 cup buttermilk, at room temperature<br \/>2 tsp red gel paste<\/p>\n<p>For the frosting:<br \/>8 oz. cream cheese<br \/>5 tbsp. unsalted butter, at room temperature <br \/>2 tsp. vanilla extract<br \/>2\u00bd cups confectioners&#8217; sugar, sifted<br \/>oven 375 F,\u00a0 7-9 minutes<\/p>\n<p>For the procedure, you&#8217;ll have to watch the video!\u00a0<\/p>\n<p>We&#8217;re off to the <a href=\"http:\/\/www.steugene.ca\/bridalfair\" target=\"_blank\">2013 St Eugene Bridal Fair<\/a> tomorrow, and I&#8217;m so excited to meet all of the
